About Biryani
Biryani is made by layering partly cooked rice with a seasoned filling, then steaming it together. Basmati rice, whole spices, onions, yogurt, and herbs are common. The filling may be chicken, lamb, or vegetables. Saffron or fried onions often go on top.
It is richer and more layered than pilaf, where everything cooks together in one go. It is not stirred like risotto or fried like fried rice. For halal cooking, use halal-certified meat and skip any alcohol.
Questions folks ask
What rice is used for biryani?
Long-grain basmati is the usual choice because it stays light and separate.
Is biryani the same as pilaf?
No. Biryani is layered and steamed with a spiced filling, while pilaf is cooked in one pot in broth.
Can I make biryani ahead?
You can marinate the meat and prep the onions a day early. Then layer and steam when you are ready to serve.
Kitchen tips
- Soak basmati rice for about 30 minutes before cooking.
- Boil the rice only until it is nearly done. It finishes in the steam.
- Marinate the meat in yogurt and spices ahead of time.
- Seal the pot lid tightly so the steam stays in.
- Fluff gently from the bottom so the layers stay whole.
