Steps
Before you start
- Preheat oven to 375°F (190°C)
- Have all spice paste ingredients measured and ready to blend
- Use full-fat coconut milk (shake well before opening)
- Bring a large pot of salted water to a boil for pasta
Blend rendang spice paste
- In a food processor or blender, combine shallots, garlic, ginger, galangal, lemongrass, and red chilies with 3 tablespoons (45 ml) water.
- Blend until completely smooth, stopping to scrape down the sides as needed.
- This should take 2–3 minutes and resemble a fine, wet paste.

Ready when: Paste is smooth and slightly loose; no large pieces remain
Tip: If the paste is too thick, add water 1 tablespoon at a time. A smooth, pourable paste cooks better than a chunky one.
Cook beef and build baseOven 375°F / 190°C
- Heat vegetable oil in a large heavy-bottomed pot or Dutch oven over medium-high heat (about 375°F / 190°C if measured).
- Once shimmering, add beef cubes and sear until golden brown on at least 2 sides, about 5–6 minutes total, stirring occasionally.
- Do not crowd the pan; work in two batches if needed.
- Transfer cooked beef to a plate.

Ready when: Beef is deeply browned on the outside but still rare inside
Tip: High heat and a dry surface on the beef ensure good browning; pat dry with paper towels first if the meat is wet.
Toast spice paste
- Pour off all but 1 tablespoon (15 ml) of the oil from the pot.
- Reduce heat to medium.
- Add the blended spice paste and cook, stirring constantly, for 3–4 minutes until fragrant and slightly darkened.
- The paste will deepen in color and smell intensely aromatic—watch that it doesn't burn on the bottom.

Ready when: Paste is darkened by one shade, fragrant, and oils separate slightly at the edges
Tip: Stir constantly to prevent the paste from scorching on the bottom. If it starts to stick, reduce heat to medium-low.
Simmer beef in coconut rendang
- Return the seared beef to the pot.
- Stir in coconut milk, fish sauce, and palm sugar.
- Bring to a gentle simmer over medium heat, stirring occasionally.
- Reduce heat to medium-low and simmer uncovered for 25–30 minutes, stirring every 5 minutes, until the beef is very tender and the sauce has reduced and thickened (it should coat the back of a spoon).
- The liquid should reduce by about one-third.
- Taste and adjust fish sauce and sugar as needed.

Ready when: Beef is tender when pierced with a fork; sauce clings to meat and is noticeably thickened
Tip: If sauce is still thin after 25 minutes, increase heat to medium and simmer an additional 5–10 minutes. Rendang should be glossy and rich, not watery.
Cook lasagna noodles
- While the beef simmers, bring a large pot of salted water (about 6 quarts / 5.7 liters) to a rolling boil.
- Add lasagna noodles and cook according to package directions, usually 8–10 minutes, until al dente.
- Drain in a colander and toss lightly with a small amount of oil to prevent sticking.
- Lay out on parchment paper or a clean kitchen towel.

Ready when: Pasta bends easily when lifted with a fork but still has a slight firmness when bitten
Tip: Al dente pasta retains structure during baking; overcooked pasta will turn mushy. Taste a strand at 8 minutes.
Prepare coconut béchamel
- Melt butter in a medium saucepan over medium heat.
- Sprinkle in flour and whisk continuously for 1–2 minutes to cook out the raw flour taste; it should smell slightly nutty and look like wet sand.
- Slowly pour in the warmed milk while whisking constantly to prevent lumps from forming.
- Continue whisking for 3–4 minutes until the sauce thickens enough to coat the back of a spoon.
- Remove from heat and whisk in coconut cream until fully incorporated.
- Season with salt and white pepper to taste.

Ready when: Sauce coats the back of a spoon; no lumps remain when dragged through with a finger
Tip: Warm milk blends in smoothly without lumps. Cold milk causes the roux to seize. Whisk gently to avoid incorporating excess air.
Preheat ovenOven 375°F / 190°C
- Preheat your oven to 375°F (190°C).
- If you have not already done so, this step ensures the oven reaches the correct temperature by the time you assemble the lasagna.

Ready when: Oven reaches 375°F (190°C) as indicated by the dial or thermometer
Tip: If your oven has a preheat indicator light, wait for it to turn off to ensure consistent temperature.
Assemble lasagna
- Spread a thin layer (about ¼ cup / 60 ml) of coconut béchamel on the bottom of a 9×13-inch (23×33 cm) baking dish.
- Layer 3–4 lasagna noodles (overlapping slightly if needed to fit).
- Spoon one-third of the beef rendang (about 1.5 cups / 360 ml) evenly over the noodles.
- Spoon one-third of the remaining béchamel (about ½ cup / 120 ml) over the beef.
- Repeat layers twice more, ending with a final layer of noodles topped with the last of the béchamel.
- Sprinkle torn Thai basil (about one-third of the total) between béchamel and beef on the second and third layers before adding the final noodle layer, reserving half the basil for garnish.

Ready when: Layers are evenly distributed; final layer is smooth béchamel
Tip: Spread layers gently to avoid tearing noodles. Reserve basil for garnish; it will wilt or brown during baking, so fresh basil sprinkled after baking tastes better.
Bake lasagnaOven 375°F / 190°C
- Cover the baking dish loosely with aluminum foil (spray the foil lightly with cooking spray to prevent sticking) and place in the preheated 375°F (190°C) oven.
- Bake for 35 minutes covered.
- Remove the foil and bake for an additional 15–20 minutes until the top is light golden and the sauce bubbles at the edges.
- If the top is still very pale, increase oven temperature to 400°F (200°C) for the final 5 minutes.
+ Show details− Hide details
Ready when: Top is light golden; sauce bubbles visibly at the edges; a knife inserted into the center meets no resistance
Tip: Foil prevents the top from browning too much while the interior heats through. Lifting the foil for the final 15–20 minutes allows the surface to develop color.
Rest and finish
- Remove the lasagna from the oven and let rest at room temperature for 10 minutes.
- This allows the sauce to set slightly, making the lasagna easier to cut and serve without falling apart.
- Just before serving, scatter the reserved fresh Thai basil over the top.
- Optionally garnish with thinly sliced red onion and serve with lime wedges on the side.

Ready when: Lasagna is warm to the touch and sauce is set enough that a slice holds its shape when lifted
Tip: Resting is crucial—cutting the lasagna straight from the oven will cause layers to slide apart. The 10-minute rest makes plating much easier.
Good to know
Tips
- For a spicier lasagna, add 1–2 more red chilies to the paste, or leave the seeds in the chilies you're using. For a milder dish, remove the seeds and white ribs from the chilies before blending.
- Coconut cream is the thick, rich layer that rises to the top of an unshaken can of full-fat coconut milk. Do not use lite coconut milk; it lacks the richness this dish needs. Scoop it into the béchamel before whisking in the milk.
- If you cannot find fresh Thai basil at your local market, check Asian grocery stores or farmers' markets. It is worth seeking out for authentic flavor, but regular basil or cilantro work in a pinch.
- This lasagna can be assembled in advance and baked when you're ready, making it ideal for entertaining. Assemble up to 8 hours ahead, cover, and refrigerate; add 10–15 minutes to baking time.
Make ahead
You can prepare the rendang beef up to 2 days ahead and refrigerate it in an airtight container. You can also assemble the entire lasagna (unbaked) up to 8 hours ahead and cover with plastic wrap; bake from cold, adding 10–15 minutes to the total baking time. Avoid freezing the assembled lasagna before baking, as the noodles can become mushy when thawed.
Storage & reheating
Store leftover lasagna covered in the refrigerator for up to 3 days. Reheat individual portions in a microwave (loosely covered) for 1–2 minutes at 50% power, or reheat a covered portion in a 325°F (163°C) oven for 12–15 minutes until warmed through. Do not freeze baked lasagna, as the béchamel may separate upon thawing. The unbaked assembled lasagna can be frozen for up to 2 months; bake from frozen, adding 20–30 minutes to baking time and checking that the center reaches 160°F (71°C).
Substitutions
- fresh galangal, peeled → ½ teaspoon (2.5 g) ground galangal powder mixed into the spice paste at the blender stage. Fresh galangal is ideal for flavor, but the powder works if fresh is unavailable. Adjust to taste—powders are more potent.
- fresh lemongrass (white and pale green parts only) → Zest of 2 limes (about 1 tablespoon / 5 g) plus 1 teaspoon (5 ml) lemongrass paste from a tube or jar. Fresh lemongrass has the best flavor, but this combination approximates its bright, herbal note. Use less if the paste is very potent.
- red bird's eye chilies (or Thai chilies), stems removed → 2–3 dried red chilies (stemmed and soaked in hot water for 10 minutes) or 1½ teaspoons (4 g) red chili flakes stirred in after toasting the paste. Dried chilies are slightly earthier and less bright than fresh. Chili flakes are quicker but lack the complexity of fresh or rehydrated whole chilies.
- fresh Thai basil leaves → Fresh mint or cilantro (basil or Italian basil as a last resort). Thai basil has an anise-like warmth; mint is cooling, cilantro is sharp. Either adds freshness, though not the exact flavor. Use only as garnish, not layered.
