Ethiopian Red Lentil Wot Lasagna
A bold fusion of Italian lasagna and Ethiopian red lentil wot—layers of tender pasta alternate with a deeply spiced, silky red lentil sauce aromatic with berbere, ginger, and garlic. The richness of Ethiopian flavors builds with each layer, finished with a golden baked top. Vegetarian, naturally hearty, and best served with a tangy yogurt drizzle to cut through the warmth of the spices.

Steps
Before you start
- Preheat your oven to 375°F (190°C)
- Have all ingredients prepped and measured before you start cooking the wot
- If using dried berberé spice, ensure it's fresh and fragrant (replace if older than 6 months)
Build the wot foundation
- Heat 0.33 cup (80 ml) of olive oil in a large heavy-bottomed pot over medium heat.
- Once shimmering, add the diced onions and cook for 8–10 minutes, stirring occasionally, until very soft and translucent with light golden edges.
- The onions are the aromatic base of the wot and need to be completely tender.

Ready when: Onions are soft and translucent with light golden edges
Tip: Do not rush the onions; their slow cooking builds depth of flavor essential to authentic wot.
Add aromatics and spices
- Add the minced garlic and ginger to the onions and cook for 1 minute until fragrant.
- Stir in the berbere spice blend and fenugreek seeds, cooking for another 1–2 minutes, stirring constantly.
- The mixture should become very aromatic and deepen in color.
- Add the tomato paste and stir well to combine with the oil and spices.

Ready when: Mixture is deeply fragrant and the spices coat the onions uniformly
Tip: Toast the spices briefly to bloom their flavors and remove any raw taste, but watch carefully so they don't scorch.
Simmer the lentil wot
- Pour in the vegetable broth and add the rinsed red lentils.
- Bring the mixture to a boil, then reduce the heat to medium-low and simmer uncovered for 25–30 minutes, stirring occasionally.
- The lentils will gradually break down into a thick, creamy sauce.
- Cook until the lentils are completely soft and the sauce has thickened to the consistency of thick soup—it should coat the back of a spoon but still flow slightly when you tilt the pot.

Ready when: Lentils are completely broken down and sauce is thick enough to coat a spoon
Tip: Stir a few times during cooking to prevent sticking on the bottom. If the wot becomes too thick before the lentils are soft, add 0.5 cup (120 ml) more broth.
Season the wot
- Taste the wot and season generously with kosher salt and freshly ground black pepper.
- Remember that lasagna noodles and cheeses will add their own salt, so the wot should taste boldly seasoned on its own.
- Adjust the spice level if desired—add more berbere for heat, or a splash of broth if too concentrated.

Ready when: Wot is well-seasoned and balanced in heat and depth
Tip: Season in layers: some now, and taste again after assembly in case the cheeses change the overall salt perception.
Prepare the cheese mixture
- In a medium bowl, combine the ricotta cheese, crumbled feta, and one large egg.
- Mix gently until just combined and uniform—do not overmix.
- Fold in the chopped cilantro if using.
- Set aside.

Ready when: Cheese mixture is uniform and creamy
Tip: The egg binds the cheeses so they stay together in layers; don't skip it, but also don't overmix or the ricotta will become tough.
Begin layering in the baking dish
- Spread a thin layer of the red lentil wot (about 0.75 cup / 180 ml) over the bottom of a 9×13-inch (23×33 cm) baking dish.
- Arrange a layer of lasagna noodles over the sauce (you'll use about 3–4 noodles per layer, breaking them to fit as needed).
- Spread half of the cheese mixture (about 1.25 cups / 300 g) over the noodles.

Ready when: First layer of wot evenly spread and noodles are in place
Tip: Use an offset spatula to spread the cheese mixture evenly without tearing the noodles.
Build the middle layers
- Spread about 1.5 cups (360 ml) of the red lentil wot over the cheese layer, then add another layer of noodles.
- Spread the remaining cheese mixture over these noodles, followed by another 1.5 cups (360 ml) of the wot and a final layer of noodles.

Ready when: Three layers of noodles are in place with wot and cheese between them
Tip: Try to keep the wot layers roughly even so the lasagna bakes uniformly and doesn't collapse on one side.
Top the lasagna
- Spread the remaining wot (about 1.5 cups / 360 ml) over the top noodle layer.
- Sprinkle the shredded mozzarella cheese evenly over the wot to create a golden, melted top.

Ready when: Top is covered with wot and mozzarella is evenly distributed
Tip: Reserve a little mozzarella for extra cheese lovers to sprinkle on their individual serving if desired.
Bake the lasagnaOven 375°F / 190°C
- Cover the baking dish loosely with aluminum foil (spray it with nonstick spray so the cheese doesn't stick).
- Bake at 375°F (190°C) for 30 minutes covered.
- Remove the foil and bake for another 15–20 minutes until the cheese is melted and golden brown with some crispy edges.

Ready when: Cheese is melted and golden brown; edges are bubbling slightly
Tip: If the top is browning too quickly, tent with foil again for the last few minutes. The lasagna is done when you can insert a knife in the center and it slides through easily.
Rest before serving
- Remove the lasagna from the oven and let it rest for 15 minutes at room temperature.
- This allows the layers to set and makes cutting and serving much easier without the filling spilling out.

Ready when: Lasagna has cooled slightly and is firm enough to cut cleanly
Tip: Patience here makes a difference—skipping the rest will result in runny, hard-to-plate portions.
Cut and serve
- Cut the lasagna into 8 equal pieces (2 cuts across and 3 cuts down the length of the 9×13-inch pan).
- Serve warm on individual plates.
- If desired, drizzle a small dollop of plain yogurt or tangy Greek yogurt over each serving to cool the spice and add brightness.

Ready when: Pieces are cut cleanly and hold their shape
Tip: Use a sharp knife dipped in hot water and wiped between cuts for cleaner slices.
Good to know
Tips
- Ethiopian wot is traditionally cooked slowly on low heat to develop deep flavor. Don't skip the initial caramelization of onions, as this is the foundation of the dish.
- If you can't find berbere spice, consider ordering it online or making a blend at home. It's what gives this dish its authentic warmth and complexity.
- The textures in this lasagna are intentionally soft and creamy—the red lentils melt into a silky sauce very different from a meat-based ragù. This is the correct texture for wot.
- Serve with tangy yogurt (plain or Greek), injera (Ethiopian flatbread), or a crisp green salad to balance the richness and spice of the dish.
Make ahead
The assembled lasagna (before baking) can be covered tightly with plastic wrap and refrigerated for up to 24 hours. Add 10–15 minutes to the bake time if baking from cold. Alternatively, prepare the wot up to 2 days ahead, store it covered in the fridge, and bring to room temperature before assembling and baking.
Storage & reheating
Room temperature: cover loosely and store for up to 2 hours (not recommended longer). Refrigerator: cover tightly and store for up to 4 days. Reheat in a 350°F (175°C) oven covered with foil for 20–25 minutes until warmed through. Freezer: wrap individual pieces or the whole lasagna tightly in plastic wrap and foil; freeze for up to 3 months. Thaw overnight in the fridge before reheating as above (add 10 minutes to baking time).
Substitutions
- berbere spice blend → 2 tablespoons paprika + 0.5 teaspoon each cayenne, cumin, coriander, and turmeric. Not identical to true berbere, but a reasonable approximation if the spice blend is unavailable. Adjust cayenne to taste for heat level.
- feta cheese, crumbled → Goat cheese or additional ricotta cheese. Goat cheese adds tanginess; extra ricotta keeps the filling milder and smoother.
- red lentils, rinsed → Brown or green lentils, cooked longer until very soft. Red lentils break down into a smooth sauce; other varieties will be more textured and will need an extra 15–20 minutes to cook completely soft.
- fresh cilantro, chopped → Fresh parsley or omitted entirely. Cilantro is traditional in Ethiopian cuisine but optional. Parsley adds freshness without a polarizing flavor.
