Steps

Before you start
  • Have all spices measured and ready
  • Use full-fat or 2% Greek yogurt for the best texture
  • Lime should be at room temperature for maximum juice
  • No need to add water to the Instant Pot for this recipe
  1. Prepare the Instant Pot

    • Add 1/2 cup (120 ml) of water to the Instant Pot inner pot and place the trivet in the bottom.
    • This creates steam to toast the spices safely.
    • Fill a small heatproof bowl with no water or other ingredients at this stage—we'll add the spices to it next.

Tip: Using a trivet prevents the spices from direct contact with the hot pot bottom, ensuring even toasting.

  2. Toast the cardamom and cumin

    • Place the crushed green cardamom pods and cumin seeds into the small heatproof bowl.
    • Set the bowl on the trivet inside the Instant Pot.
    • Close the lid and set the Instant Pot to the SAUTÉ function at high heat (no pressure).
    • After about 2 minutes of preheating the steam, you'll hear gentle toasting sounds and begin to smell the warm, fragrant spices.
    • Toast for 1 to 2 minutes total, listening and watching for the cumin seeds to darken slightly and the cardamom to deepen in color.
    • Open the Instant Pot with the quick-release valve and let the steam escape.
    + Show details

Ready when: Cumin seeds turn slightly darker brown and spices smell deeply aromatic; cardamom pods deepen in color

Tip: Do not skip the Instant Pot step—toasting releases the volatile oils in cardamom and cumin that give this dressing its signature warmth. Watch carefully so spices don't burn.

  3. Cool and strain the spices

    • Carefully remove the hot heatproof bowl from the Instant Pot and set it on a heat-safe surface to cool for about 5 minutes.
    • Once cooled, pour the toasted spices and any residual steam through a fine-mesh sieve into a small bowl, discarding the cardamom pods and any loose cumin seeds.
    • You'll be left with the spice-infused steam essence; some whole seeds may stay in the sieve, which is fine.
    • Wipe the sieve clean and reserve it for the next step.

Ready when: Bowl is cool enough to touch and hold comfortably

Tip: Cooling is essential—if you add warm spices directly to cold yogurt, they'll clash in temperature and the dressing may split slightly.

  4. Combine yogurt with spiced aromatics

    • Place the room-temperature Greek yogurt in a bowl.
    • Pour the cooled spice essence (or any liquid that collected) into the yogurt along with the 2 tablespoons (30 ml) of fresh lime juice.
    • Add a pinch of kosher salt and a few grinds of black pepper.
    • Whisk gently with a fork or small whisk until the yogurt is smooth and creamy, about 1 minute.
    • The dressing should have no lumps and fall in ribbons from the whisk.

Ready when: Yogurt is silky, smooth, and free of lumps

Tip: Whisk gently to avoid over-aerating the yogurt, which can make it too thin. A few folding motions work better than vigorous whisking.

  5. Fold in cilantro and adjust seasoning

    • Fold the roughly chopped fresh cilantro into the yogurt dressing with a gentle hand.
    • Taste the dressing and adjust salt and pepper as needed.
    • If you prefer a tangier dressing, add a squeeze more lime juice; if you want it more herbaceous, add a few more cilantro leaves and fold gently to combine.

Ready when: Cilantro is evenly distributed and dressing is well-blended

Tip: Reserve a small pinch of fresh cilantro to sprinkle on top of the dressing just before serving for bright color and a fresh bite.

  6. Serve or store

    • Transfer the dressing to a serving bowl or airtight container.
    • Use immediately as a dip for vegetables, a topping for grain bowls, or a marinade for grilled vegetables and proteins.
    • If storing, cover and refrigerate.

Tip: The dressing will thicken slightly as it chills; add a splash of water or yogurt to loosen it if needed before serving.

Good to know

Tips
  • Toast the cardamom and cumin in the Instant Pot to unlock their full aromatic potential—this step elevates the dressing from ordinary to exceptional.
  • Keep all ingredients at room temperature before combining to ensure a smooth, creamy texture without any curdling or separation.
  • This dressing pairs beautifully with Middle Eastern and Indian dishes: drizzle over roasted cauliflower or chickpea curry, use as a dip for flatbread, or serve alongside grilled chicken or fish.
  • For a thinner consistency, whisk in 1 to 2 tablespoons of milk or water; for a thicker dip, use Labneh (strained yogurt) in place of regular Greek yogurt.
Make ahead

Prepare up to 2 days ahead. Store in an airtight container in the refrigerator. The flavors meld and deepen after a few hours, making this an excellent make-ahead option for meal prep.

Storage & reheating

Room temperature: up to 1 hour. Refrigerator: up to 3 days in an airtight container. Freezer: not recommended due to the yogurt base. To reheat or loosen: stir in 1 to 2 teaspoons of water or additional Greek yogurt and whisk until silky.

Substitutions
  • plain full-fat Greek yogurt, at room temperature → plain whole-milk yogurt (not Greek). Use 1 cup (240 ml) in place of Greek yogurt for a thinner, tangier dressing. The texture will be more pourable but equally flavorful.
  • fresh lime juice → fresh lemon juice. Swap 1:1 for lime juice. Lemon will create a brighter, slightly less warm finish, so consider adding an extra pinch of salt to balance.
  • fresh cilantro leaves → fresh mint leaves. Use the same amount. Mint will give the dressing a cooling, herbaceous note that works especially well with spiced rice dishes and roasted lamb.
  • cumin seeds → ground cumin. Use 1/4 teaspoon ground cumin instead of whole seeds. Add it directly to the yogurt in step 4 without toasting; it will be slightly less fragrant but still flavorful.
