Indian Fenugreek Mustard Dressing

A fragrant, spiced Indian vinaigrette made with warm fenugreek seeds, brown mustard seeds, and pungent asafetida. Mustard oil provides a bold, slightly peppery base that ties together the nutty and earthy flavors. This dressing works beautifully on bitter greens, roasted vegetables, or legume-based salads, and its intensity mellows slightly after a few hours of sitting.

Steps

Before you start
  • Have all spices measured and ready—they will toast quickly
  • Use a small heavy-bottomed pan or skillet for toasting spices
  • Have the vinegar and oil at room temperature
  1. Toast the spices

    • Place the small skillet over medium heat.
    • Once warm (about 30 seconds), add the fenugreek seeds and brown mustard seeds.
    • Toast, stirring constantly with a wooden spoon, until the mustard seeds begin to pop and the seeds darken slightly, about 1 to 1½ minutes.
    • You should smell a nutty, toasted aroma.
    • Remove from heat and let cool for 30 seconds, then stir in the asafetida powder carefully—it has a strong smell and adding it to warm (not hot) spices helps it distribute evenly without clumping.

Ready when: Mustard seeds pop and seeds are fragrant and slightly darkened

Tip: Don't walk away during toasting—the seeds burn quickly once they start to pop. Work quickly with the asafetida, as it can clump if added to very hot spices.

  2. Combine vinegar and lime

    • In a small bowl or jar, whisk together the rice vinegar and fresh lime juice.
    • Stir in the minced shallot, grated ginger, minced green chili (if using), jaggery, and salt.
    • Let this mixture sit for 2 minutes so the shallot and ginger flavors begin to infuse into the liquid.

Ready when: Jaggery dissolves and shallot settles

Tip: Mince the shallot and ginger finely so they distribute evenly and don't settle too much into the bottom of the dressing.

  3. Combine oil and spices

    • Pour the room-temperature mustard oil into the vinegar mixture.
    • Add the toasted spices (fenugreek, mustard seeds, and asafetida).
    • Whisk vigorously for 30 seconds until the oil and vinegar emulsify slightly and the spices are evenly distributed throughout.

Ready when: Oil and vinegar are combined, spices are suspended throughout

Tip: Whisking creates a temporary emulsion that helps keep the spices and aromatics suspended rather than settling. The dressing will separate slightly over time, which is normal—just whisk again before using.

  4. Rest and mature

    • Let the dressing sit at room temperature for 10 minutes.
    • This allows the flavors to marry and mellow slightly.
    • Taste and adjust seasoning as needed—add more salt if it tastes dull, more lime juice if you want brightness, or more jaggery if you want subtle sweetness.

Ready when: Flavors have mellowed and integrated

Tip: The asafetida and mustard will be pungent immediately after mixing. Allowing the dressing to rest mellows these sharp notes and creates a more balanced, complex flavor profile.

Good to know

Tips
  • This dressing pairs beautifully with bitter greens like mustard greens, kale, or radicchio, where its bold spiced character balances the bitterness. It's also excellent tossed with roasted cauliflower, chickpeas, or root vegetables.
  • The fenugreek and mustard seeds will settle to the bottom of the jar over time—this is normal and desirable. Each spoonful of dressing will have little bursts of toasted seed flavor.
  • If the asafetida smell is too strong for you initially, start with just ⅛ teaspoon and add more once you taste it. Its aroma mellows significantly as the dressing sits, and it becomes a subtle background note rather than a front-and-center flavor.
  • For a creamier version, whisk 2 tablespoons of plain yogurt into the finished dressing. This works especially well on warm vegetable salads.
Make ahead

Store the dressing in an airtight jar in the refrigerator for up to 1 week. Allow it to come to room temperature or gently warm before using. You can also toast the spices and store them separately in an airtight container for up to 3 days, then combine with the vinegar mixture fresh.

Storage & reheating

Room temperature: up to 4 hours. Refrigerator: up to 1 week in an airtight glass jar. Freezer: not recommended. Reheat gently on low heat or let come to room temperature before using. Shake or whisk again before serving, as the oil and vinegar naturally separate.

Substitutions
  • mustard oil → extra-virgin olive oil or neutral oil like grapeseed oil. You'll lose the peppery mustard flavor, but the dressing will still be delicious with a more delicate mouthfeel. Use extra-virgin olive oil for earthiness or a neutral oil if you prefer the spices to dominate.
  • rice vinegar or white wine vinegar → apple cider vinegar or sherry vinegar. Apple cider adds slight fruitiness; sherry vinegar brings depth. Both work well, though the character of the dressing will shift slightly.
  • jaggery or light brown sugar → honey, maple syrup, or coconut sugar. Jaggery brings earthy sweetness. Honey is slightly floral, maple adds depth, and coconut sugar is less sweet. Start with the same amount and adjust to taste.
  • green chili → pinch of cayenne pepper or Kashmiri chili powder. Fresh chili adds vegetal heat; powdered chilis give a drier, more intense heat. Adjust quantities to your tolerance.
