Cumin Roasted Potatoes with Chickpeas
Earthy cumin-spiced roasted potatoes and chickpeas with warm paprika and a hint of garlic. This Middle Eastern–inspired side dish is simple, naturally vegetarian, and perfect alongside grilled meats or grain bowls. The chickpeas become crispy and nutty while the potatoes caramelize at the edges.
Steps
Before you start
- Preheat your oven to 425 °F (220 °C)
- Pat dried chickpeas very dry with a clean kitchen towel—moisture prevents crisping
- Cut potatoes into even ¾-inch (2 cm) cubes so they roast at the same rate

Ready when: Potatoes are cut evenly, chickpeas are very dry, spices are combined and ready to use
Tip: Patting the chickpeas completely dry is crucial—any moisture will cause them to steam rather than crisp in the oven.
Coat with oil and seasonings
- Place the cubed potatoes and dried chickpeas in a large bowl.
- Drizzle with the 3 tablespoons (45 ml) of extra-virgin olive oil and add the minced garlic.
- Sprinkle the spice blend over the vegetables and toss everything together for about 1 minute, using a wooden spoon or silicone spatula to ensure even coating.
- Make sure no cumin settles to the bottom of the bowl and all pieces are lightly coated with oil.

Ready when: All potatoes and chickpeas are evenly coated with oil and spices, with no dry spots visible
Tip: Don't rush this step—thorough coating ensures even browning and seasoning distribution throughout the roasting process.
Spread and begin roastingOven 425°F / 220°C
- Spread the seasoned potatoes and chickpeas in a single layer on a large rimmed baking sheet (16 × 12 inches or 40 × 30 cm), with pieces slightly overlapping but not crowded together.
- Place in a preheated 425 °F (220 °C) oven.
- Roast for 18 minutes without stirring, allowing the vegetables to begin caramelizing on the bottom.

Ready when: Potatoes and chickpeas have light golden color on the bottom and edges
Tip: Don't stir during the first 18 minutes—this allows the vegetables to develop flavorful caramelization where they touch the pan.
Stir and finish roastingOven 425°F / 220°C
- Remove the baking sheet from the oven and stir the potatoes and chickpeas thoroughly with a wooden spoon or spatula, scraping up any browned bits from the bottom and turning everything so the uncooked sides face down.
- Return to the 425 °F (220 °C) oven for another 17 to 22 minutes, until the potatoes are golden brown and fork-tender and the chickpeas are deeply browned and crispy.

Tips
- Yukon gold potatoes have a naturally buttery flavor and keep their shape well when roasted, but any waxy variety works. Avoid starchy russets, which break apart easily.
- For crispier chickpeas, pat them extra-dry and consider roasting them for 10 minutes alone before adding the potatoes so they get a head start.
- Serve alongside grilled chicken, lamb, or fish, or nestle into a grain bowl with tahini sauce and roasted vegetables.
- Make this spice blend your own: add a pinch of cayenne for heat, ground coriander for floral notes, or a small pinch of turmeric for earthiness.
Make ahead
Cut potatoes and chickpeas the morning of; store in separate airtight containers in the fridge. Assemble and roast within a few hours so the potatoes don't oxidize and darken.
Storage & reheating
Room temperature: up to 2 hours. Refrigerator: up to 3 days in an airtight container. Freezer: not recommended (texture becomes mushy). Reheat in a 350 °F (175 °C) oven for 8–10 minutes until warmed through.
Substitutions
- Yukon gold potatoes → Red or fingerling potatoes. Use similarly sized pieces. Red potatoes are waxier and stay firmer; fingerlings have thinner skins and need less peeling.
- canned chickpeas, drained and rinsed → White beans or cannellini beans, drained and rinsed. They'll crisp up similarly and add a mild, slightly creamier flavor.
- ground cumin → Ground coriander or a blend of cumin and coriander. Coriander is more citrusy; use the same amount and adjust to taste.
- sweet paprika → Smoked paprika or cayenne pepper. Smoked paprika adds depth; cayenne adds heat. Start with half the amount of cayenne and adjust.
