Party Za'atar and Lemon Oven Fries
Crispy oven-baked fries with a Middle Eastern twist. Potatoes are cut into generous batons, tossed with olive oil and coarse sea salt, then roasted until golden and crunchy. The magic happens in the final minute when fresh za'atar and bright lemon zest are scattered over the hot fries, infusing them with herbaceous, citrusy flavor. Perfect for feeding a crowd—these are best served immediately while the exteriors crackle under your teeth.

Steps
Before you start
- Preheat your oven to 425°F (220°C) with two large baking sheets inside
- Soak cut potatoes in cold water for 10 minutes to remove excess starch
- Have za'atar and lemon zest ready to go—you'll need to season the fries while they're still hot
Soak the potatoes
- Cut potatoes into even batons about ¼ inch (6 mm) thick and 3 to 4 inches (7.5 to 10 cm) long.
- Place them in a large bowl and cover generously with cold water.
- Let soak for 10 minutes to release excess starch—this helps them crisp up in the oven.
- Drain in a colander and pat thoroughly dry with paper towels; any moisture left on the surface will steam rather than crisp.

Ready when: Potatoes are completely dry to the touch
Tip: Don't skip the drying step—damp potatoes will be soft, not crispy
Toss with oil and season
- Return the dried potatoes to the bowl.
- Drizzle with 4 tablespoons (60 ml) of olive oil, sprinkle with 1½ teaspoons (9 g) of coarse sea salt and ½ teaspoon (1 g) of freshly ground black pepper.
- Toss well, making sure every piece is evenly coated with oil and seasoning.
- The oil should look glossy and coat the potatoes lightly—not pooled at the bottom.

Ready when: All potatoes are evenly glossy
Tip: Use your hands to massage the oil in if needed—even coating is key to uniform crisping
Spread on hot sheets and roastOven 425°F / 220°C
- Working quickly, spread the oiled potatoes in a single layer on the two preheated baking sheets (they should be hot to the touch).
- Arrange them cut-side down so they make contact with the hot surface—this creates the crispiest exteriors.
- Roast at 425°F (220°C) for 30 to 35 minutes, stirring halfway through (around the 15-minute mark), until the bottoms are deep golden brown and the centers are tender when pierced with a fork.

Ready when: Exteriors are deep golden to light brown, insides are fork-tender
Tip: Don't crowd the pan—if needed, use three sheets instead of two for maximum air circulation
Season with za'atar and lemon
- The moment the fries come out of the oven (while they're still piping hot), scatter the za'atar blend and lemon zest over them, then sprinkle with the finishing salt.
- Toss gently but quickly to coat everything.
- The heat will brighten the za'atar's color and release its aromatic oils, and the zest will perfume the whole batch.
- Serve immediately.

Ready when: Za'atar and lemon zest are evenly distributed and aromatic
Tip: Season immediately while fries are hot—the seasoning won't stick as well once they cool
Good to know
Tips
- For extra-crispy fries, increase the oven temperature to 450°F (232°C) and watch carefully after the 25-minute mark to avoid burning the outside before the inside is cooked through
- Za'atar burns easily, so add it only in the final minute—never before roasting
- If your baking sheets are small or your oven runs hot, use three sheets instead of two and rotate them halfway through for even cooking
- Serve these alongside grilled chicken, lamb, or fish with yogurt sauce for a full Middle Eastern spread
Storage & reheating
Best served warm and crispy straight from the oven. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat on a baking sheet at 375°F (190°C) for 8 to 10 minutes to restore crispness. Not recommended for freezing as the texture will suffer.
Substitutions
- russet potatoes → Yukon gold potatoes. These have a slightly waxy texture and won't crisp quite as much, but they're creamier inside; reduce cooking time by 5 minutes
- za'atar seasoning blend → 2 teaspoons (4 g) dried oregano + 1 teaspoon (2 g) dried thyme + 1 teaspoon (3 g) sumac (if available) + ½ teaspoon (1 g) sesame seeds. Mimics za'atar's herbaceous, tangy flavor profile
- fresh lemon zest → lime zest or dried sumac. Lime brings similar brightness; sumac adds tartness without citrus flavor
- extra-virgin olive oil → avocado oil or clarified butter. Both have high smoke points and will crisp the fries equally well
