Crispy-edged potato cubes coated in a tangy-sweet Thai-inspired glaze of sweet chili sauce and lime juice, finished with fresh cilantro and a sprinkle of toasted sesame. Perfect as a showstopping side for a crowd, with a balance of heat, acidity, and herbaceous brightness.
Steps
Before you start
- Preheat your oven to 425°F (220°C)
- Cut potatoes into roughly 1-inch cubes for even cooking
- Prepare a large mixing bowl for tossing the potatoes
Toss and season potatoes
- Pat the potato cubes dry with paper towels to remove excess moisture.
- In a large mixing bowl, toss the potatoes with the vegetable oil, sea salt, and black pepper until all pieces are lightly coated.
- Spread them evenly across the two rimmed baking sheets in a single layer.

Ready when: potatoes are evenly coated and spread in a single layer
Tip: Dry the potatoes well before tossing—this helps them crisp up in the oven. Don't overlap them on the sheets; crowding steams them instead of roasting them.
Initial roast until goldenOven 425°F / 220°C
- Roast in a preheated 425°F (220°C) oven for 20 minutes.
- Shake the pans and stir the potatoes halfway through (around the 10-minute mark) to ensure even browning.
- The potatoes should be starting to turn golden and crisp at the edges.

Ready when: potatoes are golden at edges and beginning to crisp
Tip: Stir about halfway through so they brown evenly on all sides, not just the bottom.
Make the glaze
- While the potatoes roast, whisk together the sweet chili sauce, lime juice, minced garlic, and minced ginger in a small bowl until smooth and well combined.
- Set aside.

Ready when: glaze is smooth and no lumps remain
Tip: Make the glaze while the potatoes are in the oven so you don't waste time and everything is ready when needed.
Add glaze and finish roastingOven 425°F / 220°C
- Remove the potatoes from the oven and carefully pour the glaze evenly over them, using a rubber spatula to toss and coat each piece thoroughly.
- Return both baking sheets to the oven and roast for another 12–15 minutes, stirring once halfway through.
- The potatoes should be deeply caramelized and crispy, and the glaze should be slightly darkened and sticky.

Ready when: potatoes are deeply golden and caramelized, glaze is sticky and dark
Tip: Watch the edges carefully in the final minutes—they should be caramelized but not burnt. The glaze will continue to thicken as it cools.
Cool slightly and finish
- Transfer the potatoes to a serving platter or large shallow bowl.
- While still warm, sprinkle with toasted sesame seeds, fresh cilantro, and scallions if using.
- Add a pinch of lime zest if you want extra brightness.
- Toss gently to distribute the toppings.

Good to know
Tips
- Toast your own sesame seeds in a dry skillet over medium heat for 2–3 minutes before using—store-bought toasted seeds work too, but fresh-toasted tastes noticeably better.
- For a party, double the batch easily—just use two more baking sheets and roast at the same temperature. Stagger the glaze additions if your oven is full.
- If you like extra heat, stir a pinch of red pepper flakes or a dash of sriracha into the glaze for more spice.
- The potatoes stay crispy longest if served within 2 hours of roasting. After that, they begin to soften, but the flavor is still excellent.
Make ahead
Potatoes can be roasted up to 2 hours ahead without the glaze. Store at room temperature. Rewarm in a 350°F (175°C) oven for 8–10 minutes, then apply the glaze, toss, and finish with fresh cilantro and sesame just before serving.
Storage & reheating
Room temperature: up to 2 hours, covered loosely. Refrigerator: up to 3 days in an airtight container. Reheat in a 350°F (175°C) oven for 10 minutes. Freezer: not recommended (texture becomes soggy). Best served warm or at room temperature.
Substitutions
- Thai sweet chili sauce → sriracha mixed with honey or agave syrup (use 1/3 cup sriracha + 3 tbsp honey). Sriracha is spicier and less sweet, so honey balances the heat. Start with less if you're sensitive to spice.
- fresh lime juice → fresh lemon juice. Lemon is less acidic than lime but will still brighten the dish. Use the same quantity.
- fresh cilantro leaves → Thai basil or mint. Thai basil brings a peppery, anise-like note; mint adds cool freshness. Either works beautifully with the sweet-chili profile.
- sesame seeds → crushed roasted peanuts or chopped cashews. Both add crunch and richness. Toast nuts lightly before sprinkling for best flavor.
