Steps
Before you start
- Preheat your oven to 425°F (220°C) for at least 10 minutes
- Line two large baking sheets with parchment paper or aluminum foil
- Have all seasonings measured and combined before you start cutting potatoes (to prevent browning)
Prepare seasonings and potatoes
- In a small bowl, whisk together the dried oregano (2 tsp / 4 g), garlic powder (1 tsp / 3 g), kosher salt (1 tsp / 6 g), and freshly ground black pepper (½ tsp).
- Set aside.
- Cut the scrubbed, dried potatoes into sticks approximately ¼ inch thick and 3–4 inches long, leaving the skin on.
- Pat dry with paper towels to remove excess moisture.

Ready when: Potatoes are cut evenly and completely dry
Tip: Patting potatoes dry is essential for crispiness; skip this and they'll steam rather than roast.
Toss with oil and seasonings
- Place the cut potatoes in a large bowl.
- Drizzle with 3 tbsp (45 ml) olive oil and the reserved herb-spice mixture.
- Toss thoroughly, making sure every piece is coated evenly with oil and seasonings.
- The potatoes should glisten, not clump.

Ready when: All potato sticks are evenly coated with oil and herbs
Tip: Use your hands to toss; this ensures even coating better than a spoon.
Spread on baking sheets
- Divide the seasoned potatoes between the two prepared baking sheets, arranging them in a single layer with a little space between each stick.
- They should not be crowded or piled; crowding causes steaming.
- Use both baking sheets rather than layering on one.

Ready when: Potatoes are in a single even layer with space between pieces
Tip: If one sheet is full, use a second—never overcrowd, or they'll steam instead of crisp.
Roast at high heatOven 425°F / 220°C
- Place both baking sheets in the preheated 425°F (220°C) oven, positioning them on the middle and upper-middle racks.
- Roast for 25–30 minutes, stirring and rotating the sheets halfway through (around the 15-minute mark).
- The fries are done when they're golden-brown on all edges and a fork easily pierces the center of a stick, but the outside is crispy and light-brown.

Ready when: Fries are golden-brown on edges, crispy outside, and fork-tender inside
Tip: Rotate and stir at the midway point so they cook evenly; corners brown faster than centers.
Add Parmesan crust
- Remove the baking sheets from the oven.
- While the fries are still hot, sprinkle the finely grated Parmesan cheese (½ cup / 50 g) evenly over both sheets, tossing gently to distribute.
- The residual heat will lightly melt the cheese onto the warm fries.
- If desired, sprinkle an additional pinch of garlic powder (½ tsp / 1.5 g optional garnish) over the top.

Ready when: Parmesan is evenly distributed and adheres to warm fries
Tip: Add Parmesan immediately after removing from the oven while the fries are hot; cold fries won't melt the cheese.
Serve immediately
- Transfer the herb-crusted fries to a serving platter or paper-lined bowl.
- Serve right away while the outside is crisp and the cheese is still warm and slightly soft.
- These are best enjoyed fresh from the oven.

Good to know
Tips
- Consistency in thickness is key: aim for uniform ¼-inch sticks so they all cook at the same rate. Thicker pieces stay soft inside; thinner ones risk burning.
- For extra-crispy fries, increase the oven temperature to 450°F (232°C) and reduce cooking time by 2–3 minutes, watching carefully to prevent over-browning.
- Fresh cracked black pepper, rather than pre-ground, adds more aromatic kick and looks more appetizing on the finished fries.
- If your oven runs hot or cool, check at 20 minutes; ovens vary significantly in temperature, and fries can brown unevenly if your oven is off.
Make ahead
You can prepare the potatoes, cut them, and have the seasonings ready up to 4 hours ahead. Store cut potatoes in a bowl of cold water in the refrigerator (they'll stay moist this way). Drain and pat dry thoroughly before tossing with oil and seasoning.
Storage & reheating
Room temperature: Best served immediately. Leftovers can sit in an airtight container at room temperature for up to 2 hours but will lose crispness. Refrigerator: Store in an airtight container for up to 1 day. Reheat on a baking sheet at 350°F (175°C) for 8–10 minutes to restore some crispness. Freezer: Not recommended; texture becomes mushy upon thawing.
Substitutions
- Parmesan cheese (Parmigiano-Reggiano preferred) → Pecorino Romano cheese. Use the same amount. Pecorino is slightly sharper and saltier, creating a bolder flavor profile.
- dried oregano → Dried Italian seasoning. Use 1½ tsp (2.5 g) in place of oregano; adjust for your blend's potency, as Italian seasoning typically has a lighter oregano concentration.
- russet potatoes, unpeeled → Yukon Gold or red-skinned potatoes. These cook slightly faster (reduce time by 2–3 minutes) and have thinner, more delicate skins. Yukon Gold will be slightly creamier inside.
- extra-virgin olive oil → Avocado oil or grapeseed oil. These have higher smoke points (ideal for high-heat roasting) and a neutral flavor that won't compete with the herbs.
