Steps

Before you start
  • Have all vegetables chopped and ready before you start cooking (mise en place)
  • Choose firm yellow or red potatoes—waxy varieties hold their shape better than russets
  • Use a 12-inch (30 cm) cast-iron or stainless steel skillet for even browning
  1. Brown the kielbasa

    • Heat the 12-inch skillet over medium-high heat for 1 minute.
    • Add the kielbasa rounds and cook for 4–5 minutes, stirring occasionally, until the edges are browned and some rendered fat has coated the pan.
    • Transfer to a plate; leave the rendered fat in the skillet.

Ready when: Kielbasa rounds have light caramelization on edges and rendered fat coats the pan

Tip: Don't crowd the pan; let the sausage sit undisturbed for 2–3 minutes per side to develop color.

  2. Cook potatoes until golden

    • Add the oil to the skillet (there should be about 3–4 tablespoons of fat total).
    • When shimmering, add the potatoes in a single layer.
    • Let them sit undisturbed for 3–4 minutes, then stir and continue cooking for 8–10 minutes total, stirring every 2 minutes, until the potatoes are golden brown on several sides and starting to become tender (a fork should pierce them but they should still have resistance).

Ready when: Potatoes are golden brown on multiple sides and a fork meets slight resistance (not fully cooked)

Tip: Let the potatoes sit between stirrings so they develop a crust; constant stirring prevents browning.

  3. Add peppers and onions

    • Add the bell peppers and onion to the skillet.
    • Stir to combine with the potatoes and rendered fats.
    • Cook for 8–10 minutes over medium-high heat, stirring every 2–3 minutes, until the vegetables are caramelized and just tender.
    • The potatoes should now be fully tender when pierced with a fork.

Ready when: Peppers and onions have golden, caramelized edges; potatoes are tender throughout

Tip: If the bottom of the pan looks too dark, reduce heat to medium. A little fond is flavorful, but burning tastes bitter.

  4. Return kielbasa and season

    • Return the browned kielbasa to the skillet along with the garlic and paprika.
    • Stir for 1 minute to warm the sausage through and bloom the paprika.
    • Season generously with kosher salt and freshly ground black pepper to taste.
    • Stir well to distribute.

Ready when: Kielbasa is heated through, paprika is fragrant, and everything is well mixed

Tip: Taste as you season; smoked paprika can be strong, so start with ½ teaspoon and add more if desired.

  5. Finish and serve

    • Squeeze the juice from the lemon half over the skillet and toss gently.
    • If using parsley, scatter it over the top.
    • Transfer to a serving platter or individual plates and serve hot.

Tip: The lemon juice adds brightness that cuts through the richness of the sausage and oil; don't skip it.

Good to know

Tips
  • Cut all vegetables to roughly the same size (¾-inch / 2 cm) so they cook evenly and finish at the same time.
  • Don't move the potatoes too often in the first few minutes—letting them sit develops a golden crust on one side, which adds flavor and texture.
  • If your skillet has hot spots, rotate it on the burner occasionally or adjust the heat to prevent unevenly cooked potatoes.
  • For a deeper savory flavor, add a pinch of caraway seeds or a small splash of apple cider vinegar along with the lemon juice.
Make ahead

You can prep all vegetables and cut the kielbasa up to 8 hours ahead; keep them refrigerated in separate airtight containers. The finished skillet comes together so quickly that making it ahead isn't recommended—it's best served fresh and hot. However, leftovers can be reheated.

Storage & reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium heat or in a 325°F (160°C) oven for 10–12 minutes, stirring occasionally, until warmed through. Do not freeze, as the texture of the potatoes becomes grainy after thawing.

Substitutions
  • kielbasa sausage → Smoked sausage, andouille, or any fully cooked sausage. Use whatever cooked sausage you like; cooking time remains the same.
  • yellow or red potatoes → Waxy potatoes like fingerling or new potatoes (cut into similar-sized pieces). Avoid russets, which break apart; waxy varieties hold shape better.
  • bell peppers (red or yellow) → Zucchini, green beans, or a combination of vegetables. Add sturdier vegetables (like green beans) with the potatoes; more delicate ones (like zucchini) with the peppers and onions.
  • vegetable oil or neutral oil → Olive oil, bacon fat, or butter. Olive oil works but burns more easily at high heat; butter will brown but adds richness.
