Tandoori Cauliflower and Yogurt Dip
A smoky, lightly charred cauliflower dip infused with tandoori spices and ginger, blended into a creamy yogurt base. This vegetable-forward dip is bright, complex, and perfect for vegetables, crackers, or flatbread. The roasted cauliflower gives it depth while cooling yogurt balances the warm spices.

Steps
Before you start
- Preheat your oven to 425°F (220°C) for at least 10 minutes
- Cut cauliflower into small, even florets (about ¾-inch pieces) so they roast uniformly
- Have yogurt at room temperature for easier blending
- Prepare all spices and ginger ahead of time
Prepare cauliflower for roasting
- Pat the cauliflower florets dry with a clean kitchen towel.
- In a small bowl, combine the tandoori spice blend, minced ginger, minced garlic, and ground cumin.
- Add 3 tablespoons (45 ml) of olive oil to the spice mixture and stir to form a paste.

Ready when: Spice paste is evenly combined and well-coated in oil
Tip: Dry cauliflower is essential for achieving a good caramelized, charred exterior during roasting.
Roast cauliflower until charredOven 425°F / 220°C
- Spread the cauliflower florets in a single layer on a large rimmed baking sheet.
- Toss the florets with the spice paste until evenly coated.
- Spread them out again so they sit mostly in a single layer.
- Roast in a preheated 425°F (220°C) oven for 20–22 minutes, stirring halfway through, until the florets are tender and the edges are deeply browned and slightly charred.

Ready when: Florets are fork-tender with dark brown, charred edges; no raw or pale centers
Tip: Stir halfway through to ensure even browning. Don't crowd the pan; if your florets are large, use two baking sheets.
Cool roasted cauliflower slightly
- Remove the baking sheet from the oven and let the cauliflower cool for 5 minutes at room temperature.
- This prevents the yogurt from becoming warm and thin when blended.

Ready when: Cauliflower is warm to the touch but not piping hot
Tip: If the cauliflower is still steaming, it will cook down the yogurt and make the dip watery.
Blend dip base
- Transfer the cooled roasted cauliflower to a blender or food processor.
- Add the 1 cup (240 ml) of room-temperature Greek yogurt, 2 tablespoons (30 ml) of lemon juice, and a pinch each of salt and black pepper.
- Blend until completely smooth, about 1–2 minutes, stopping to scrape down the sides as needed.

Ready when: Mixture is completely smooth with no chunks of cauliflower visible
Tip: If the dip is too thick, add a splash of water or more yogurt (1 tablespoon at a time) until it reaches your desired consistency.
Taste and adjust seasoning
- Spoon a small amount of the dip into a bowl and taste it.
- Add more salt and black pepper if needed.
- The dip should taste warm and spiced but balanced with the cool, tangy yogurt.
- Stir to combine any additions.

Ready when: Flavors are balanced; the tandoori spice is prominent but not overwhelming
Tip: Taste as you go; it's easier to add more seasoning than to remove it.
Transfer to serving dish and garnish
- Spoon the dip into a serving bowl.
- If using cilantro, scatter it over the top.
- If using pomegranate arils, sprinkle them over the dip for a pop of tartness and color.
- Serve immediately with vegetable crudités, crackers, or warm naan or pita bread.

Tip: Add fresh garnishes just before serving to keep cilantro bright and pomegranate arils from softening.
Good to know
Tips
- For deeper smokiness, char the cauliflower florets directly over a gas flame with tongs for 1–2 minutes after roasting, or use a kitchen torch. Watch carefully so they don't blacken too much.
- This dip is naturally dairy-forward; if serving to vegans, substitute the yogurt with an equal amount of cashew cream (soaked cashews blended with water and lemon juice) or coconut yogurt.
- Serve the dip with a drizzle of yogurt or crème fraîche on top and a sprinkle of extra tandoori spice for visual appeal and an additional flavor boost.
- For a thinner consistency that's more like a sauce, add 2–3 tablespoons more yogurt or a splash of buttermilk.
Make ahead
The dip can be made up to 2 days ahead. Store in an airtight container in the refrigerator. Add fresh cilantro and pomegranate arils just before serving. If the dip has thickened in the fridge, thin it with a tablespoon of yogurt or water.
Storage & reheating
Room temperature: not recommended (yogurt-based). Refrigerator: 2–3 days in an airtight container. Freezer: not recommended (yogurt separates when thawed). To reheat: stir and serve cold, or transfer to a bowl and let sit at room temperature for 20 minutes before serving.
Substitutions
- plain Greek yogurt (or full-fat yogurt) → sour cream or crème fraîche. Use full-fat sour cream or crème fraîche for a tangier, richer dip. Use the same quantity (1 cup / 240 ml) but do not use Greek yogurt as a 1:1 swap if using these, as they're thinner; you may need to reduce by ¼ cup.
- tandoori spice blend → homemade spice blend: 1 tsp paprika + ½ tsp ground coriander + ½ tsp ground cumin + ¼ tsp garlic powder + ¼ tsp cayenne pepper. If you don't have tandoori spice blend, combine these spices for a similar warm, smoky flavor profile.
- fresh ginger root → ½ tsp ground ginger. Fresh ginger provides brightness; ground ginger is more muted. Use half the amount if substituting.
- fresh cilantro leaves → fresh mint or a mix of mint and cilantro. Mint adds coolness and pairs well with roasted vegetables; use the same quantity.
