Steps

Before you start
  • Have all ingredients at cool room temperature (paneer and yogurt should not be warm)
  • Toast cumin seeds if using whole seeds rather than ground cumin
  • Chill the dip for at least 30 minutes before serving for best flavor development
  1. Crumble the paneer

    • Using clean hands, break the paneer into small, irregular crumbles about ¼-inch in size.
    • Place the crumbled paneer in a medium mixing bowl.
    • The paneer should hold some texture rather than being completely smooth.

Ready when: paneer is crumbled into small, irregular pieces that still show white texture

Tip: Don't over-crumble the paneer; you want some pieces to remain about the size of small peas for textural contrast

  2. Combine with yogurt

    • Add the Greek yogurt to the crumbled paneer and stir gently with a spoon until evenly combined.
    • The mixture should be creamy and speckled with paneer pieces.
    • Do not overmix or the paneer will break down too much.

Ready when: yogurt and paneer are evenly combined with visible white paneer pieces throughout

Tip: Stir just until combined; overmixing will make the dip dense and eliminate the paneer's crumbly texture

  3. Add spices

    • Sprinkle the garam masala, ground cumin, salt (start with ½ tsp and adjust to taste), and a few grinds of black pepper over the mixture.
    • Stir well to distribute the spices evenly throughout.
    • Taste and adjust seasoning as needed.

Ready when: spices are evenly distributed throughout the dip with no visible clumps

Tip: Add salt gradually; yogurt can mask saltiness, so taste carefully before adding more

  4. Finish with lime and cilantro

    • Stir in the fresh lime juice and chopped cilantro.
    • Mix gently until evenly incorporated.
    • The lime juice will brighten the flavors and add a subtle tang.

Ready when: lime juice and cilantro are evenly distributed, and the dip has a light green speckle from the herbs

Tip: Reserve a small pinch of cilantro to sprinkle on top just before serving for fresh color and aroma

  5. Optional tempering (tadka)

    • If using ghee, warm it in a small dry skillet over medium heat (about 45 seconds).
    • If using asafetida, add just a tiny pinch to the warm ghee and let it sizzle for 5 seconds until fragrant.
    • Pour the warm ghee and asafetida (if using) over the dip in a thin stream while stirring gently.
    • This step is optional but adds authentic depth and complexity.

Ready when: ghee is warm and asafetida (if used) is fragrant

Tip: Use only a tiny pinch of asafetida; a little goes a long way and it can overwhelm the dip if too much is added

  6. Chill and set flavors

    • Transfer the dip to a serving bowl and refrigerate uncovered for at least 30 minutes (or up to 2 hours).
    • This allows the spices to meld and the dip to chill to the ideal serving temperature.
    • The flavors will deepen and become more cohesive as it rests.

Ready when: dip is cold throughout and spices have melded

Tip: If refrigerating longer than 2 hours, drape a piece of plastic wrap over the bowl to prevent the dip from drying out or absorbing fridge odors

Good to know

Tips
  • For a spicier dip, add a small pinch of cayenne pepper (¼ tsp) or finely minced fresh green chili to the dip after the cumin is stirred in.
  • Toast whole cumin seeds in a dry skillet for 1–2 minutes before crushing them if you want a more aromatic, complex cumin flavor compared to ground cumin.
  • Serve the dip alongside warm naan bread, thin crackers, or an array of fresh vegetable crudités such as cucumber slices, bell pepper strips, and cherry tomatoes.
  • If the dip becomes too thick after chilling, stir in 1–2 tablespoons of additional yogurt or a splash of milk to return it to a creamy, dip-like consistency.
Make ahead

This dip can be made up to 2 days ahead and stored in an airtight container in the refrigerator. The flavors will actually improve with time as the spices continue to meld. Just give it a gentle stir before serving.

Storage & reheating

Room temperature: not recommended (serve within 30 minutes). Refrigerator: up to 3 days in an airtight container. Freezer: not recommended, as the texture of the paneer will become grainy when thawed. Serve chilled or at cool room temperature with naan, chips, or fresh vegetables.

Substitutions
  • Greek yogurt, plain, full-fat → Plain whole milk yogurt or labneh (strained yogurt). Plain yogurt will be slightly thinner; labneh will be thicker and more tangy. Adjust ratio if using labneh—start with ¾ cup labneh to maintain consistency.
  • paneer cheese, fresh → Cottage cheese, drained and lightly pressed. Cottage cheese is softer and will create a smoother dip. The texture will be less crumbly but still delicious.
  • garam masala → A blend of ½ tsp ground cumin + ½ tsp ground coriander + ¼ tsp ground cardamom + 2 pinches ground clove. This homemade blend replaces the garam masala and gives you more control over the spice flavor.
  • fresh cilantro, finely chopped → Fresh mint, finely chopped. Mint will lighten and cool the dip's flavor profile instead of adding earthiness.
