Steps

Before you start
  • Bring yogurt to room temperature (about 30 minutes out of the fridge) for the best flavor and silky texture
  • Gather all ingredients—this comes together very quickly, so mise en place is helpful
  • Choose your heat level: you control the spiciness by removing or keeping chili seeds
  • The 10-minute rest is optional but highly recommended; the dip tastes noticeably better as the spices fully meld
  1. Mince the garlic

    • Peel the garlic cloves and mince them very finely using a sharp knife, or use a microplane grater to create a fine paste.
    • You want pieces about the size of lentils (roughly 1 teaspoon minced).
    • Place the minced garlic in the bowl.

Ready when: Garlic is finely minced and uniformly sized

Tip: Using a microplane grater creates a fine paste that distributes evenly through the yogurt, preventing unpleasant chunks

  2. Prepare the chili pepper

    • Rinse the red chili.
    • Slice it lengthwise and scrape out most of the seeds and white membrane inside using the tip of a knife.
    • Finely mince the chili flesh.
    • If you prefer a milder dip, remove all seeds; if you like heat, leave some seeds mixed in.
    • Set aside.

Ready when: Chili is finely minced, about 1 tablespoon total

Tip: Wearing gloves when handling fresh chili prevents the oils from irritating your eyes later if you touch your face

  3. Chop fresh cilantro

    • Rinse the cilantro bunch and pat dry with paper towels.
    • Remove and discard the lower thick stems.
    • Finely chop the tender leaves and upper stems until you have about ¼ cup loosely packed.

Ready when: Cilantro is finely chopped, roughly ¼ cup

  4. Mix yogurt with spices

    • Add the yogurt to a small mixing bowl (2 to 4-cup capacity).
    • Sprinkle the salt and ground cumin over the yogurt.
    • Stir well for about 1 minute until the salt has dissolved and the cumin is evenly distributed throughout with no visible streaks.

Ready when: Yogurt is smooth and cumin is fully incorporated with no visible specks or clumps

Tip: Mixing the cumin into the yogurt base first ensures it disperses evenly rather than clumping if added later

  5. Add garlic and chili

    • Add the minced garlic and chili to the yogurt mixture.
    • Stir well for about 1 minute until the garlic and chili are evenly distributed throughout.
    • The yogurt will take on a light pinkish or reddish hue from the chili.

Ready when: Yogurt is evenly tinted with chili color and shows no streaks of white yogurt

  6. Add cilantro and lime juice

    • Add the chopped cilantro and lime juice (if using) to the mixture.
    • Stir for about 30 seconds until the cilantro is distributed throughout and the lime juice is fully mixed in.

Ready when: Cilantro is visible throughout and all ingredients are well combined

  7. Rest and let flavors meld

    • Cover the bowl with plastic wrap or a lid and let the dip rest at room temperature for at least 10 minutes (up to 1 hour is fine).
    • As it sits, the yogurt will absorb the flavors of the spices, cumin, and chili, becoming more harmonious and flavorful.
    • After resting, taste a small spoonful.
    • Adjust the seasonings as needed: Does it need more salt?
    • Add a tiny pinch.
    • More heat?
    • Mix in a few more minced chili or a pinch of chili flakes.
    • More brightness?
    • A squeeze more lime juice.
    • Stir and taste again until the flavor is well-balanced and customized to your preference.
    + Show details

Ready when: Flavor is well-developed, balanced, and customized to your taste

Tip: Don't skip this resting step if you have time; the dip tastes noticeably better after 10+ minutes as the spices fully disperse and the yogurt absorbs their aromatics

  8. Serve and enjoy

    • Transfer the dip to a serving bowl.
    • Optional: drizzle a thin stream of neutral oil over the top (about ½ teaspoon) and scatter a few fresh cilantro leaves as a garnish.
    • Serve with vegetable crudités such as carrot sticks, bell pepper strips, cucumber slices, or radishes.
    • It's also wonderful with pita chips, toasted flatbread, naan, or as a condiment alongside curries.

Good to know

Tips
  • Toasting whole cumin seeds before grinding greatly enhances their warm, nutty flavor; if you have time, do this step for noticeably better results
  • Mince the garlic very finely or use a microplane grater to create a paste—large chunks can be unpleasant and overpowering when bitten into
  • Remove the chili seeds if you prefer a milder, less spicy dip; keep them if you like heat. The white membrane holding the seeds is where most of the heat lives
  • Let the dip rest at least 10 minutes so the spices fully meld and the yogurt absorbs all the flavors; this makes a dramatic difference in taste compared to serving immediately
Make ahead

The dip can be prepared up to 2 days in advance. Cover and refrigerate in an airtight container. Let it come to room temperature for 15 minutes before serving, or serve chilled directly from the fridge. The flavors develop beautifully over time and may taste even better on the second day.

Storage & reheating

Room temperature: up to 2 hours. Refrigerated in an airtight container: up to 3 days. Does not freeze well due to yogurt texture changes. To reheat or thin if needed: stir in a tablespoon of yogurt or a teaspoon of water to restore creaminess if it thickens. Let come to room temperature before serving for best flavor.

Substitutions
  • Plain Greek yogurt (or regular full-fat yogurt) → Regular plain yogurt, sour cream, or labneh (strained yogurt). Regular yogurt will make a thinner dip (use about 1 cup + 2 tablespoons); sour cream adds tang. Labneh is thicker and creamier. Adjust amounts until you reach your desired consistency.
  • Fresh red chili pepper (long chili) → Chili powder, cayenne pepper, or chili flakes. Use ½ to ¾ teaspoon chili powder for similar heat, or ¼ teaspoon cayenne for very spicy. Red chili flakes also work (use 1 teaspoon). You lose the fresh chili flavor, but the dip will still be delicious.
  • Fresh cilantro (loosely packed) → Fresh parsley, mint, or basil. Parsley gives a milder herbaceous note; mint adds freshness and a cooling effect. Basil creates a different flavor profile entirely. Use the same amount.
  • Fresh lime juice → Lemon juice, white vinegar, or omit. Lemon is very similar in brightness. White vinegar is sharper and more acidic, so taste and adjust. The lime juice is optional; omit it for a dip without acidity, though the brightness is lovely.
