Steps
Before you start
- Make sure the crab meat is well-drained and any shell fragments removed
- Have all ingredients at room temperature for smoothest blending
- If serving warm, prepare a water bath or keep a burner ready
Blend base ingredients
- Add coconut cream, red curry paste, cream cheese, and fish sauce to a food processor.
- Blend on medium speed for 1–2 minutes until completely smooth and no streaks of curry paste remain.
- Scrape down the sides with a rubber spatula if needed.

Ready when: Mixture is smooth and creamy with no visible curry paste chunks
Tip: Don't over-blend—this should take just 1–2 minutes. Over-processing will warm the mixture unnecessarily.
Add crab and cilantro
- Transfer the blended mixture to a small bowl.
- Gently fold in the drained crab meat and cilantro with a rubber spatula, being careful not to break up the crab lumps.
- Fold just until evenly distributed.

Ready when: Crab meat and cilantro are distributed throughout without visible streaks
Tip: Folding instead of mixing keeps the crab in nice chunks. If crab is broken apart, the texture suffers.
Season with lime and heat
- Squeeze lime juice over the mixture and fold it in.
- Taste and adjust: add more fish sauce if you want deeper umami, more lime juice if you want brightness, or more curry paste if you want more spice.
- If using fresh red chiles, fold them in now for gentle heat.

Ready when: Flavors are balanced: creamy, slightly spicy, with bright lime notes
Tip: Start conservative with fish sauce—it is strong. A tiny amount goes a long way; you can always add more but cannot remove it.
Finish and serve
- Transfer the dip to a serving bowl.
- If you'd like it warm, place the bowl in a larger bowl of hot water for 3–5 minutes, stirring occasionally.
- Top with lime zest if using and serve immediately with rice crackers, vegetable crudités (cucumber, bell peppers, celery), or toasted bread.

Ready when: Dip is served at your preferred temperature and garnished
Tip: This dip is excellent at room temperature and keeps its best texture that way. If you must keep it warm for longer than 15 minutes, cover it loosely with plastic wrap over a water bath to prevent drying out.

Tips
- Make sure the coconut cream comes from the top of a freshly opened can—this is the thick, rich part. If you shake the can or the cream is thin, the dip will be too loose.
- Check your curry paste and fish sauce brands beforehand: some are much saltier or spicier than others. Start with less and taste as you build flavor.
- For a spicier dip without adding fresh chiles, stir in an extra ½ teaspoon of curry paste after tasting.
- Serve this dip with something crispy and neutral (rice crackers, fried wonton strips) to let the curry and crab shine, and something fresh (cucumber, bell pepper) for cool contrast.
Make ahead
You can make this dip up to 2 days ahead. Store in an airtight container in the refrigerator. Bring to room temperature for 20 minutes before serving, or gently warm in a water bath. Do not microwave, as high heat can separate the cream.
Storage & reheating
Room temperature: up to 2 hours (not recommended for longer). Refrigerator: up to 2 days in an airtight container. Freezer: not recommended due to texture changes in coconut cream and crab meat. To reheat, place in a bowl over gently simmering water, stirring occasionally, until warm—never direct heat.
Substitutions
- lump crab meat, fresh or pasteurized → Cooked shrimp (chopped), fresh lobster, or cooked white fish (flaked). Shrimp works especially well and requires the same draining and checking for debris. Frozen-thawed crab is also acceptable if fresh is unavailable.
- Thai red curry paste → Green curry paste (1.5–2 tablespoons for slightly milder, herbaceous heat) or Panang curry paste (2 tablespoons for creamier, nuttier flavor). Each paste has different heat levels and flavor profiles; adjust the amount to your preference.
- canned coconut cream (full-fat) → Full-fat Greek yogurt or sour cream (mixed 1:1 with heavy cream for richness). This shifts the flavor profile away from Thai but keeps the dip smooth and creamy. Not recommended if you want authentic Thai taste.
- cream cheese, room temperature → Mascarpone or crème fraîche (3 oz / 85 g). Mascarpone adds subtle sweetness; crème fraîche adds tanginess. Both keep the dip silky.
