Steps
Before you start
- Remove cream cheese from refrigerator 30 minutes ahead so it softens to room temperature; it should be soft and spreadable
- Preheat oven to 350°F (175°C) before you begin mixing
- If using canned crab meat, drain it thoroughly and pat dry with paper towels to remove excess liquid
- Have all ingredients measured and ready (mise en place)
Whisk the base
- In a large mixing bowl, whisk together the softened cream cheese and mayonnaise until completely smooth and creamy with no lumps visible.
- This creates the rich base for your dip.
- Use firm, consistent whisking motions and take your time—the creamier this base is, the better the final texture.

Ready when: Mixture is completely smooth and creamy with no lumps
Tip: Use a whisk rather than an electric mixer, which can overmix and make the dip dense and gluey. A few small lumps are easy to smooth out; overmixing is much harder to fix.
Season the mixture
- Add the Old Bay seasoning, Worcestershire sauce, fresh lemon juice, and cayenne pepper to the cream cheese mixture.
- Season generously with salt and freshly ground black pepper to taste.
- Stir thoroughly with a spatula until all seasonings are fully incorporated and the mixture is uniform in color with no visible streaks.

Ready when: All seasonings are evenly distributed with no streaks or pockets visible
Fold in crab and cheddar
- Using a rubber spatula, gently fold the drained lump crab meat and shredded sharp cheddar cheese into the cream cheese mixture.
- Use broad, gentle strokes to combine—fold just until the crab and cheese are evenly distributed throughout.
- The dip should still have beautiful, visible chunks of crab meat; avoid aggressive mixing.

Ready when: Crab and cheese are evenly distributed with large visible crab chunks throughout
Tip: Gentle folding preserves the texture and appearance of the crab meat. Too much stirring will break the crab into small pieces and make the dip look less appetizing.
Transfer to baking dish
- Pour the crab mixture into an 8×8-inch (20×20 cm) or 9×9-inch (23×23 cm) baking dish.
- Smooth the top lightly with a spatula.
- If using panko bread crumbs, sprinkle the 1/4 cup evenly over the surface in a thin, even layer.
- (The dip is delicious without the topping, but bread crumbs add a pleasant crispy texture.)
Bake until bubbly and goldenOven 350°F / 175°C
- Place the baking dish in the preheated 350°F (175°C) oven and bake for 20–25 minutes.
- The dip is done when it's bubbling gently around the edges and the top is light golden brown.
- The center should feel hot to the touch.
- If it's bubbling vigorously and browning too quickly on top, cover loosely with foil for the remaining time.

Ready when: Bubbling gently around the edges, light golden-brown top, center is hot throughout
Tip: Don't overbake—the dip will continue cooking slightly as it cools. Overbaking can make it dry and cause the edges to brown too much.
Cool and serve
- Remove the baking dish from the oven and let the dip cool for 2–3 minutes to reach a safe serving temperature.
- Garnish with fresh chopped green onion if desired.
- Transfer to a serving bowl or serve directly in the baking dish while warm.
- Accompany with crackers, toasted baguette slices, or fresh vegetables like celery, bell peppers, and cherry tomatoes.
Good to know
Tips
- Use the best quality lump crab meat you can find—it's truly the star of this dip. Jumbo lump crab is ideal if you can get it.
- Drain canned crab meat thoroughly and pat it dry with paper towels. Excess liquid will make the dip watery and dilute the flavors.
- Don't overmix once you add the crab meat; gentle folding keeps it chunky and preserves its beautiful appearance.
- This dip keeps warm for up to 2 hours on a buffet table if set on a warm (not hot) warming tray. Stir gently every 20 minutes.
Make ahead
The dip can be assembled up to 24 hours ahead. Cover with plastic wrap and refrigerate. Bake from cold, adding 5–10 minutes to the baking time and checking for bubbling around the edges to ensure it's heated through.
Storage & reheating
Leftovers keep in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 325°F oven for 10–15 minutes until warm throughout; do not microwave, as it can make the texture rubbery. Freeze for up to 1 month in an airtight freezer container; thaw in the refrigerator overnight before reheating.
Substitutions
- cream cheese → Mascarpone cheese. Use the same weight; it creates a silkier, more delicate texture. The dip will be slightly less tangy.
- sharp cheddar cheese → Gruyere or Jarlsberg cheese. Use the same amount; these cheeses add a more complex, nuttier flavor and melt beautifully.
- lump crab meat → Canned or frozen crab meat. Drain canned crab thoroughly and thaw frozen crab in the refrigerator; pat dry to remove excess moisture. Use the same amount.
- mayonnaise → Sour cream. Use 1/4 cup sour cream instead of 1/2 cup mayo for a tangier dip with similar richness.
