Spanish Mojito Green Juice
A bright, herbaceous green juice inspired by the beloved Spanish mojito. Fresh mint and lime provide the signature mojito flavor, while green apple and celery deliver natural sweetness and a crisp, vegetable-forward base. This juice is best made with a cold press or masticating juicer to preserve the delicate mint aromatics and maximize nutrient retention. Serve immediately over ice for maximum freshness and vibrant flavor.
Steps
Before you start
- Chill glasses in the freezer for 5 minutes
- Have ice ready in a separate bowl
- Use a cold press or masticating juicer (centrifugal juicers will oxidize the mint quickly)
Prepare ingredients
- Wash the green apples, celery, and limes under cool running water and pat dry.
- Core the apples and cut each into 4 quarters lengthwise (keeping the skin on for nutrients).
- Cut celery stalks into 3-inch (8 cm) pieces.
- Halve the limes and remove any visible seeds.
- Gently rinse the mint leaves and leave them whole—do not bruise them.

Ready when: All produce is cut and ready to juice
Tip: Do not prep ingredients more than 1 hour ahead; keep them in the fridge to prevent oxidation and flavor loss.
Juice the produce
- Feed the green apple quarters, celery pieces, and mint leaves alternately into your cold press or masticating juicer in small batches.
- Alternate between harder produce (apple and celery) and the delicate mint so the leaves are gently pressed rather than sitting idle.
- As juice collects in the collection cup, you should see a pale green color with flecks of mint fiber.
- Juice both lime halves last, squeezing any remaining juice by hand into the collection cup.

Ready when: About 16 oz (480 ml) of juice collected; color is pale green with visible mint flecks
Tip: If using a masticating juicer, go slowly—rushing will heat the juice slightly and damage the mint's volatile oils. A cold press produces the freshest flavor but takes a few minutes longer.
Dilute and finish
- Pour the fresh juice into a measuring cup and stir in the chilled filtered water.
- This lightens the intensity slightly and makes the juice easier to drink while keeping it nutrient-dense.
- Pour the mixture evenly into the two chilled glasses, filling each about three-quarters full.

Ready when: Juice and water are combined and poured into glasses
Tip: Add water to taste—some prefer it more concentrated, others more diluted. Start with the ¼ cup and adjust as you like.
Serve immediately
- Top each glass with a handful of ice cubes.
- If desired, garnish with a sprig of fresh mint and a thin lime wheel.
- Drink right away—green juice is best consumed within 15 minutes of juicing to preserve the bright flavor and nutritional integrity.

Ready when: Ice added and juice ready to drink
Tip: Do not store this juice beyond a few hours. If you must store it, keep it in an airtight glass bottle in the coldest part of your refrigerator for up to 8 hours, but flavor and nutrients will decline noticeably.
Good to know
Tips
- A cold press juicer is ideal for green juice because it operates at lower speeds and does not introduce heat or excess air, preserving the delicate flavor of mint and the nutrient density of the juice.
- Alternate softer ingredients (mint) with harder ones (apple and celery) as you feed them into the juicer. This prevents the mint from sitting idle and oxidizing before the juice is extracted.
- For the brightest flavor, use Granny Smith apples (tart) rather than Gala or Fuji (sweeter); they balance the richness of the juice without adding cloying sweetness.
- Serve this juice immediately and drink it in one sitting for maximum nutritional benefit and the most vibrant mojito-inspired flavor. Green juice oxidizes rapidly once exposed to air and light.
Storage & reheating
This juice is best consumed immediately. If you must store it, transfer to an airtight glass bottle and refrigerate for up to 8 hours, though color, flavor, and nutrient quality will diminish. Cold press juices keep slightly longer than masticating juicer results due to lower oxidation. Do not freeze—the texture and delicate mint flavor will not recover well. For best results, juice only what you will drink within 15 minutes.
Substitutions
- Granny Smith apple → 1 large honeydew melon (about 14 oz / 400 g), peeled and cut into chunks. Provides natural sweetness and hydration similar to apple; the juice will be slightly sweeter and more watery. Adjust water to ⅛ cup if using melon.
- celery → 4 stalks of fennel (about 200 g), cut into 3-inch pieces. Adds a subtle anise note that complements the mint and lime beautifully. Fennel's natural sweetness means you may want to reduce water slightly.
- fresh mint leaves, packed → ½ cup (12 g) fresh basil leaves, loosely packed. Sweet basil brings a peppery, slightly different herbal note. Use the same amount but reduce to ⅓ cup if using Thai basil, which is more intense.
- Persian lime → 2 lemons, halved and seeded. Provides acidity and brightness but with a more forward citrus note. Lemon juice is slightly less sharp than lime, so you may want both lime halves plus half a lemon for better balance.
