About Juices

Juice is the liquid from fruit or vegetables. You can squeeze citrus by hand, use a juicer, or blend and strain. Oranges, lemons, apples, carrots and watermelon are favorites. A little mint or ginger adds a nice twist.

Unlike smoothies, juices are strained and thin. They are lighter than milkshakes and have no dairy. Compared with mocktails, juices are usually simple, with one or two flavors and little extra fuss.

Do I need a juicer?

No. You can squeeze citrus by hand, or blend fruit and pour it through a fine strainer.

How long does fresh juice last?

It is best the same day. Keep it covered in the fridge and use it within a day or two.

Why does fresh juice separate?

Without added stabilizers, the pulp settles. Just stir or shake it before pouring.

Kitchen tips

  • Roll citrus on the counter before cutting to get more juice.
  • Strain out seeds so the juice is not bitter.
  • Serve over ice or chill well before pouring.
  • Drink fresh juice soon, since the flavor fades.
  • Wash produce well before juicing.
