Ramadan Breaking-Fast Pomegranate Molasses Dressing
A bright, tart dressing combining pomegranate molasses with warm spices and garlic. This quick whisked dressing is designed to enliven fresh vegetables, grains, and lean proteins during iftar (breaking of the fast). The balance of acidity, earthiness, and richness makes it perfect for refreshing the palate after a day of fasting.
Steps
Before you start
- Have all ingredients at room temperature for best emulsification
- Use a fresh bottle of pomegranate molasses if possible (old molasses loses brightness)
- Whisk vigorously to emulsify the oil and molasses together
Combine base ingredients
- Pour 5 tablespoons (75 ml) pomegranate molasses into a small 1-quart bowl.
- Add the 2 minced garlic cloves and ½ teaspoon (2.5 g) ground cumin.
- Stir with a whisk for about 30 seconds to break up the garlic and distribute the cumin evenly throughout the molasses.

Ready when: Garlic is finely distributed and cumin is evenly suspended in the molasses.
Tip: Keep the molasses, garlic, and spices together as they will form the flavor base for emulsification.
Add water to thin molasses
- Pour 2 tablespoons (30 ml) water into the bowl with the molasses mixture.
- Whisk gently for 30 seconds to combine.
- The mixture should lighten slightly in appearance as the water breaks down the thick molasses and creates a more fluid base for the emulsion.

Ready when: Water is fully incorporated and the molasses mixture looks slightly thinner and more uniform.
Tip: The water helps create the emulsion by providing an aqueous medium for the oil to blend into; without it, the oil will separate.
Whisk in olive oil slowly
- Holding the measuring cup of extra-virgin olive oil in one hand, begin whisking the molasses mixture with vigorous, steady circular motions.
- Slowly drizzle in the olive oil in a very thin stream—about a teaspoon or two at a time—while whisking continuously.
- This should take about 1 minute.
- The dressing will gradually become lighter in color and slightly thicker as the oil incorporates.

Ready when: Oil is mostly incorporated; the dressing looks lighter and more homogeneous.
Tip: Slow drizzling and constant whisking are critical to prevent the oil from pooling on the surface, which breaks the emulsion. If at any point you see oil separating, stop and whisk faster.
Complete the emulsion
- Continue whisking for another 1–2 minutes with steady, vigorous strokes, even after all the oil is added.
- The dressing should become noticeably lighter in hue, thicker, and more cohesive.
- It should cling to the whisk and no longer show pools of separated oil on the surface.

Ready when: Dressing is significantly thicker, lighter in color, and shows no visible oil separation.
Tip: This final whisking step builds the emulsion structure; don't skip it or the dressing may break apart when stored.
Season to taste
- Add fine sea salt and freshly cracked black pepper to taste.
- Whisk for 30 seconds to fully incorporate.
- The dressing should taste bright and tangy with a slight warmth from cumin and garlic.
- If it tastes too sharp, a pinch more salt can round out the flavors.

Ready when: Salt and pepper are fully dissolved and evenly distributed throughout the dressing.
Tip: Taste as you season; pomegranate molasses varies in tartness and saltiness between brands, so adjust to your preference.
Good to know
Tips
- This dressing is thick enough to coat vegetables and grains but can be thinned with a tablespoon or two of water or lemon juice if you prefer a pourable consistency.
- Serve at room temperature over warm grains, roasted vegetables, or fresh greens to allow the flavors to develop fully.
- To add body and richness, whisk in 1 tablespoon (15 ml) of tahini or yogurt at the end, whisking until smooth.
- For a spicier version, add a pinch of cayenne pepper or Aleppo pepper along with the cumin for a subtle heat that complements the tartness.
Make ahead
This dressing can be made up to 3 days ahead. Store in a sealed glass jar in the refrigerator. Let it come to room temperature and whisk briefly before serving, as the emulsion may separate slightly during storage.
Storage & reheating
Room temperature: up to 2 hours. Refrigerator: up to 3 days in an airtight glass container. Freezer: not recommended due to emulsion breakdown. To reheat/refresh: bring to room temperature and whisk vigorously for 30 seconds.
Substitutions
- pomegranate molasses → Freshly squeezed lemon juice (4 tablespoons / 60 ml) mixed with 1 tablespoon (15 ml) honey and a pinch of ground sumac. This creates a similar tangy-sweet profile with slight floral notes. The result will be slightly lighter in color and less deep in flavor.
- extra-virgin olive oil → Neutral oil such as grapeseed or light avocado oil. Use if you prefer a less fruity dressing or have a sensitivity to olive oil flavor. The dressing will be more neutral and let the pomegranate shine.
- ground cumin → Ground sumac (¼ teaspoon / 1.25 g) or za'atar (½ teaspoon / 2.5 g). Sumac adds additional tartness and brightness; za'atar adds complexity with thyme and sesame notes. Both are traditional to Middle Eastern tables.
- garlic → Minced fresh ginger (1 teaspoon / 5 g) or omit for a cleaner, purely fruity dressing. Ginger adds warmth and a subtle spice; omitting garlic creates a more delicate, fruit-forward dressing suitable for lighter salads.
