Steps

Before you start
  • Have all ingredients at room temperature for a smooth blend
  • Use prepared beets (canned or roasted) for convenience, or roast fresh beets ahead
  • If using fresh horseradish root, peel and measure carefully—a little goes a long way
  1. Combine base ingredients

    • In a blender or food processor, combine the sour cream, chopped roasted beets, pomegranate juice, horseradish, fresh dill, Dijon mustard, red wine vinegar, and kosher salt.
    • Start with a lower speed to avoid splashing, then increase to medium speed.

Tip: If using a food processor, pulse first to break down the beets, then blend until smooth.

  2. Blend until smooth

    • Blend for 45 seconds to 1 minute until the dressing is completely smooth and creamy.
    • Stop and scrape down the sides of the blender or processor as needed.
    • The dressing should be a deep crimson color with no visible beet pieces.

Ready when: Dressing is smooth, creamy, and uniform in color with no lumps or beet pieces visible

Tip: For an extra-silky finish, strain the blended dressing through a fine-mesh sieve, pressing gently with the back of a spoon. This removes any tiny beet fiber bits.

  3. Season to taste

    • Taste the dressing and adjust seasonings.
    • Add a pinch more salt if needed, fresh ground black pepper to taste, and the optional honey if you prefer a touch of sweetness to balance the tartness.

Ready when: Flavors are balanced—tanginess from pomegranate and vinegar, slight heat from horseradish, earthy beet sweetness, and herbal dill notes

Tip: The horseradish bite mellows slightly after an hour, so taste again before serving if made ahead. You may want to add a bit more for punchiness if serving immediately.

  4. Chill and serve

    • Transfer the dressing to a jar or bowl and refrigerate until ready to use.
    • Stir briefly before serving.
    • The dressing will thicken slightly as it cools.
    • Use within 4 days.

Ready when: Dressing is chilled and spoonable

Tip: If the dressing becomes too thick when cold, whisk in 1–2 tablespoons of cold water or pomegranate juice to reach your preferred consistency.

Good to know

Tips
  • Roasted beets are essential—raw beets won't blend into a smooth, creamy dressing. Buy vacuum-packed beets if you don't have time to roast. Avoid beets canned in vinegar, which will add unwanted acidity.
  • Fresh horseradish packs a punch and fades in intensity as it sits. If you're serving immediately, use the full amount; if making ahead, taste and add more just before serving for maximum heat.
  • This dressing pairs beautifully with bitter greens like arugula, frisée, or radicchio, as well as with roasted root vegetables, beets, Brussels sprouts, and grain salads.
  • The color is spectacular on a white plate or platter. For an elegant touch, drizzle it in a thin pool and top with pomegranate seeds, crispy shallots, or toasted nuts.
Make ahead

The dressing is best made 2–4 hours ahead to allow flavors to meld, and it holds well for up to 4 days refrigerated. Prepare beets ahead too—roast fresh beets the day before, or use high-quality canned or vacuum-packed beets.

Storage & reheating

Refrigerate in a covered jar or bowl for up to 4 days. The dressing may separate slightly; stir or shake well before using. Do not freeze, as the sour cream base will break down upon thawing.

Substitutions
  • sour cream → Greek yogurt or crème fraîche. Use the same amount. Greek yogurt will make the dressing slightly tangier and less rich; crème fraîche will be creamier.
  • fresh horseradish root, peeled, or prepared horseradish → wasabi powder mixed with a little water. Start with ½ teaspoon wasabi powder stirred into 1 teaspoon water. Wasabi is sharper, so taste and adjust carefully.
  • pomegranate juice, unsweetened → beet juice or a blend of beet and apple juice. Beet juice will deepen the earthy flavor; apple juice softens it. Use the same volume.
  • fresh dill → fresh tarragon or chervil. Tarragon adds a licorice note; chervil is more delicate. Use the same amount.
