Steps

Before you start
  • Preheat your oven to 400°F (200°C)
  • Remove puff pastry from the freezer and let it thaw at room temperature for 10 minutes
  • Have labneh at room temperature for easier spreading
  • Line a baking sheet with parchment paper
  1. Prepare the pastry

    • Unfold the thawed puff pastry sheet onto the parchment-lined baking sheet.
    • Using a small fork, prick the surface all over, leaving a ½-inch (1.25 cm) border around the edges unpicked.
    • This prevents the center from puffing up too much.
    • Brush the unpicked border lightly with a little olive oil.

Tip: The fork prevents the middle from doming while allowing the edges to puff into a frame.

  2. Toast the pastryOven 400°F / 205°C

    • Place the pastry in the preheated 400°F (200°C) oven for 10 minutes, until the surface is light golden and slightly puffed.
    • Remove from the oven (keep it on).
    • The pastry should still feel slightly soft but will firm as it cools.

Ready when: Light golden brown color, slightly puffed edges

Tip: Don't let it brown too much at this stage or the filling will scorch before the tomatoes soften.

  3. Spread the labneh

    • Remove the pastry from the oven and let it cool for 1 minute.
    • Spread the room-temperature labneh evenly over the pastry using the back of a spoon, leaving the ½-inch golden border bare.
    • Spread gently so you don't deflate the pastry entirely, but the labneh should cover most of the surface.

Tip: Room-temperature labneh spreads smoothly without tearing the delicate pastry underneath.

  4. Arrange the tomatoes

    • Arrange the halved cherry tomatoes cut-side up over the labneh in a single layer, packing them fairly close together (they will shrink as they roast).
    • Drizzle 2 tablespoons (30 ml) of olive oil over the tomatoes and season with a pinch of sea salt and black pepper.

Tip: Arrange tomatoes cut-side up so they can caramelize and collapse into the labneh.

  5. Roast the tartOven 400°F / 205°C

    • Return the tart to the 400°F (200°C) oven for 12–14 minutes.
    • The tomatoes should soften and begin to collapse, their skins will wrinkle slightly, and the pastry border will deepen to golden brown.
    • The labneh underneath will warm through and may show very light browning in spots.
    + Show details

Ready when: Tomato skins wrinkled and collapsed, pastry edges deep golden brown

Tip: Watch after minute 12—every oven is different. If the pastry edges are browning too fast, lower the heat to 375°F (190°C) for the remainder.

  6. Finish with za'atar and herbs

    • Remove the tart from the oven and let it rest for 2 minutes.
    • Sprinkle the za'atar blend evenly over the warm tart.
    • If using fresh mint or parsley, scatter it on top as well.
    • Drizzle the remaining 1 tablespoon (15 ml) of olive oil in thin lines across the surface.
    • Taste a piece of the border and season with a little more salt if needed.

Tip: Add za'atar after cooking so its bright herbaceous flavor and color don't fade from heat.

Tips
  • For deeper labneh flavor, drizzle a tiny amount of honey over the labneh before adding the tomatoes—it caramelizes beautifully and complements both the za'atar and tomatoes.
  • Taste your za'atar before using it. Older or lower-quality za'atar may be less vibrant; if it smells dusty rather than herbal, use 2 tablespoons instead of 1.5.
  • If your tomatoes release a lot of liquid during roasting, tilt the tart slightly and spoon the juices to the edges so they don't make the pastry soggy.
  • This tart is best served warm or at room temperature within an hour of baking—the pastry crisps up as it cools and the flavors meld together.
Storage & reheating

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a 300°F (150°C) oven for 5–7 minutes to restore crispness to the pastry. Do not freeze, as the pastry will not recover its texture.

Substitutions
  • labneh (strained yogurt) → ricotta cheese mixed with 1 tablespoon of Greek yogurt per ¾ cup ricotta. Ricotta is tangier than labneh and needs a little yogurt to mimic labneh's creamy texture; spread it just as thickly.
  • za'atar blend → 2 teaspoons (4 g) dried oregano mixed with 1 teaspoon (2 g) sumac and a large pinch of sesame seeds. This blend captures the herbaceous and tangy notes of za'atar when the real thing is not available.
  • cherry tomatoes → 12 oz (340 g) heirloom tomatoes, sliced ¼ inch (0.6 cm) thick. Slice rather than halve so the pieces stay together during roasting and absorb the flavors more evenly.
  • thawed puff pastry sheet → phyllo dough (3–4 sheets, brushed with olive oil between layers). Phyllo will cook faster (check at 8–10 minutes); it creates a crispier, more delicate crust.
