Steps
Before you start
- Press the tofu firmly for at least 30 minutes before starting (or buy pre-pressed tofu)
- Have all aromatics minced and ready
- Use fresh gochugaru for best color and flavor
Mix the marinade base
- In a medium bowl, whisk together 3 tbsp (45 ml) toasted sesame oil, 2 tbsp (15 g) gochugaru, 3 tbsp (45 ml) soy sauce, and 1 tbsp (15 ml) rice vinegar until the gochugaru is evenly distributed and no lumps remain.
- The marinade should be smooth and deep red.

Ready when: Gochugaru is fully incorporated and marinade is uniform
Tip: Use a whisk to break up any gochugaru clumps; a smooth marinade coats the tofu more evenly
Add aromatics and sweetener
- Stir the minced garlic (3 cloves), minced ginger (1 tbsp / 10 g), and minced scallion whites and light green parts (2 scallions) into the marinade.
- If using it, add 1 tsp (5 g) brown sugar to balance the heat and salt.
- Mix well.

Ready when: Aromatics are evenly distributed throughout the marinade
Tip: Don't skip mincing the garlic and ginger fine—larger pieces won't adhere well to the tofu
Arrange tofu in dish
- Place the pressed, cubed firm tofu (14 oz / 400 g) in a shallow dish or 9×13 inch (23×33 cm) baking pan in a single layer.
- Avoid stacking the cubes, so the marinade can coat all sides.

Ready when: Tofu is arranged in a single layer with space between pieces
Tip: If the dish is too small, use two shallow dishes rather than stacking tofu, which causes uneven marinating
Pour marinade over tofu
- Pour the entire marinade (all aromatics and liquid) over the tofu cubes.
- Using a spoon or silicone spatula, gently turn each piece two or three times so the marinade coats all sides, including the top and bottom.

Ready when: All tofu pieces are glossy and red-coated on visible surfaces
Tip: Handle gently so the tofu doesn't crumble; use a soft touch when turning
Let tofu marinate
- Leave the tofu at room temperature for 20 minutes, stirring gently once or twice halfway through.
- The tofu will absorb the flavors and the aromatics will infuse into the tofu's surface.

Ready when: Tofu is glossy and aromatic, marinade is absorbed into surface
Tip: For deeper flavor, marinate for up to 2 hours in the fridge, but 20 minutes at room temperature is enough for good flavor
Finish and serve
- Transfer the marinated tofu and any remaining marinade to a serving platter or individual bowls.
- Scatter the toasted sesame seeds (1 tbsp / 10 g) over the top and add a light garnish of the reserved scallion greens.
- Serve at room temperature, chilled, or pan-fry the cubes for a warm presentation.

Ready when: Tofu is garnished and ready to serve or cook
Tip: If pan-frying the marinated tofu, use medium-high heat and let it sit undisturbed for 2–3 minutes per side to develop a golden crust
Good to know
Tips
- Press your tofu well before cubing—excess moisture prevents good marinade absorption. Use a tofu press or wrap the block in a clean kitchen towel and weight it for 30 minutes.
- Toasted sesame oil has a strong, nutty flavor; a little goes a long way. Don't use regular (untoasted) sesame oil, which lacks depth.
- For a crispy exterior, pan-fry or grill the marinated tofu over medium-high heat, 2–3 minutes per side, without moving it around—let it develop a golden crust.
- Customize the heat level by adjusting gochugaru: use 1 tbsp for mild, 2 tbsp for medium, or 3 tbsp for spicy.
Make ahead
Prepare the marinade base (sesame oil, gochugaru, soy sauce, vinegar) up to 2 days ahead and store in a covered container in the fridge. Add fresh garlic, ginger, and scallions just before marinating the tofu for best flavor.
Storage & reheating
Refrigerate in a covered container for up to 3 days. The tofu will continue to soften and absorb flavor. Serve chilled or reheat gently in a skillet over medium-low heat for 2–3 minutes. Not suitable for freezing, as the tofu texture will degrade.
Substitutions
- gochugaru (Korean red pepper flakes) → ¼ tsp cayenne pepper mixed with 1 tbsp paprika for a milder, earthier heat. Gochugaru has a unique fruity warmth; this substitute is less complex but still flavorful
- rice vinegar → white wine vinegar or apple cider vinegar. Slightly sharper acidity; use the same amount but taste and adjust if needed
- toasted sesame oil → 2 tbsp toasted sesame oil + 1 tbsp neutral oil (grapeseed or vegetable) if toasted sesame oil is too strong. Stretches the toasted oil while maintaining flavor
- scallions (green onions) → chives or finely sliced onion mixed with a pinch of garlic powder. Not quite as fresh and mild, but provides similar aromatic sharpness
