Pomegranate-Rosewater Yogurt with Pistachio and Cranberry Granola
A Middle Eastern-inspired yogurt bowl layered with creamy Greek yogurt sweetened with honey and perfumed with rosewater, topped with homemade granola studded with pistachios and tart cranberries, and finished with pomegranate arils and a drizzle of pomegranate molasses. The contrast of cool yogurt, crunchy granola, and jewel-like pomegranate seeds creates a dish that's as beautiful as it is delicious.

Steps
Before you start
- Preheat oven to 300°F (150°C)
- Line a large baking sheet with parchment paper
- Have all granola ingredients measured and ready before mixing
- Use fresh pomegranate or high-quality frozen pomegranate arils
Mix granola base
- In a large bowl, combine the melted butter, honey, melted coconut oil, and brown sugar.
- Stir until smooth and well combined.
- Add the rolled oats, sea salt, and ground cardamom.
- Stir with a wooden spoon or sturdy spatula until the oats are thoroughly coated with the wet ingredients.
- The mixture should be crumbly and slightly moist throughout.

Ready when: Mixture is evenly moistened with no dry oat streaks
Tip: Don't overmix; the granola should remain chunky, not paste-like
Spread and bake granolaOven 300°F / 150°C
- Spread the oat mixture in an even layer on the parchment-lined baking sheet.
- Bake at 300°F (150°C) for 20–25 minutes, stirring once halfway through (around the 12-minute mark), until the granola is dry to the touch and a light golden brown.
- It will crisp up further as it cools.

Ready when: Granola is light golden brown, dry, and fragrant, and crisps as it cools
Tip: Stir at the halfway point to ensure even toasting; don't let the edges burn
Cool and add mix-ins
- Let the granola cool on the baking sheet for 5–10 minutes (it will crisp up as it cools).
- Once fully cooled to room temperature, break any large clumps with your hands.
- Fold in the roughly chopped pistachios and dried cranberries using a spatula or your hands.
- Store in an airtight container until ready to serve.

Ready when: Granola is completely cool and crispy throughout
Tip: Don't add nuts and dried fruit until the granola is completely cool, or they'll soften
Sweeten and perfume yogurt
- In a small bowl, stir together the cold Greek yogurt, honey, and rosewater until smooth and well combined.
- Taste and adjust rosewater to your preference (start with the smaller amount—it's potent).
- The yogurt should taste subtly floral, not perfume-like.

Ready when: Yogurt is smooth, sweetened, and evenly scented
Tip: Rosewater is potent; add it gradually and taste as you go to avoid an overwhelming floral flavor
Layer yogurt bowls
- Divide the rosewater-honey yogurt evenly among four serving bowls or glasses.
- Use about 1/2 cup (125 ml) per bowl.
- Smooth the surface with the back of a spoon.

Tip: If using glasses or bowls with straight sides, you can layer for a more elegant presentation
Top with granola and pomegranate
- Top each bowl with a generous handful of the pistachio-cranberry granola (about 1/4 to 1/3 cup or 40 g per bowl).
- Scatter fresh pomegranate arils over the granola, using about 1/3 cup (45 g) per bowl.
- The jewel-like seeds should catch the light.

Tip: Reserve extra granola to add fresh for each person, as it softens over time if in contact with yogurt
Drizzle and garnish
- Drizzle each bowl with about 1.5 teaspoons (7.5 ml) of pomegranate molasses around the sides or in a light spiral across the top.
- If using, add a few extra chopped pistachios for garnish.
- Serve immediately.

Tip: Pomegranate molasses adds a sophisticated tartness; don't skip it, but use sparingly as it's intense
Good to know
Tips
- Toast whole spices like cardamom pods yourself and grind them for the freshest flavor; ground cardamom loses potency quickly
- Pomegranate arils can be extracted ahead of time and frozen in a sealed bag; thaw at room temperature just before serving
- For a creamier yogurt, use full-fat Greek yogurt rather than 2% or nonfat varieties
- If you can't find pomegranate molasses, reduce pomegranate juice (3 parts juice simmered until it reaches about 1 part volume) and chill before drizzling
Make ahead
Make the granola up to 5 days ahead and store in an airtight container. Prepare the rosewater yogurt up to 1 day ahead. Assemble the bowls just before serving to keep the granola crunchy.
Storage & reheating
Granola: Room temperature in an airtight container, up to 5 days (or in a sealed bag for up to 2 weeks). Rosewater yogurt: Refrigerated, up to 3 days. Assembled bowls: Best served immediately. If made ahead, keep yogurt and granola separate and assemble just before eating so the granola stays crispy.
Substitutions
- rosewater (food-grade) → Orange blossom water. Use the same amount for a lighter, citrusy floral note instead of the traditional rose perfume
- roasted, salted shelled pistachios → Blanched almonds or raw walnuts, roughly chopped. Substitute 1:1 by weight if you don't have pistachios; toast them lightly in a dry pan for 2–3 minutes before mixing into the granola for better flavor
- dried cranberries → Dried tart cherries or golden raisins. Use the same amount for a similar tartness or sweetness; golden raisins are slightly sweeter
- pomegranate molasses → Fresh lemon juice. Use 1.5 teaspoons (7.5 ml) per serving; it won't have the same depth, but adds brightness and acidity
