Barberry and Cardamom Yogurt Parfait
A bright, elegant parfait layering creamy Greek yogurt infused with warm cardamom, tart dried barberries, and crunchy granola. Inspired by Persian flavors, this assembly-style breakfast or dessert combines sweet, tart, and aromatic notes in every spoonful.
Steps
Before you start
- Use full-fat Greek yogurt at room temperature for the smoothest texture
- If cardamom pods are whole, crush and toast them lightly to release oils—or use pre-ground cardamom
- Measure out dried barberries and granola ahead so assembly is quick
Infuse yogurt with cardamom
- In a small bowl, combine the Greek yogurt, ground cardamom, and honey.
- Stir well until the cardamom is evenly distributed and the honey is fully incorporated.
- Taste and adjust cardamom if desired—it should be fragrant but not overpowering.
- Let sit for 5 minutes to allow the cardamom flavor to bloom.

Good to know
Tips
- Toast the cardamom seeds fresh from whole pods and grind just before using for the most fragrant result—pre-ground loses potency over time.
- Layer the granola between yogurt layers rather than only on top to create textural contrast and keep the yogurt creamy while granola stays crisp.
- For a more dessert-like parfait, whip the Greek yogurt with a touch of cream (2 tbsp per cup) for a mousse-like texture.
- Barberries are tart and salty; if they taste too strong, rinse them briefly under cold water before using.
Make ahead
Prepare the cardamom-infused yogurt and measure the barberries, granola, and pistachios up to 1 day ahead. Store yogurt covered in the refrigerator. Assemble parfaits within 2 hours of serving for best granola texture; alternatively, assemble 30 minutes ahead and add the top layer of granola just before serving.
Storage & reheating
Assembled parfaits are best served fresh but will keep covered in the refrigerator for up to 2 hours. If the yogurt mixture is prepared ahead, it will keep refrigerated for up to 3 days. The flavors do not freeze well, so it is best enjoyed fresh.
Substitutions
- dried barberries → pomegranate arils, tart dried cranberries, or sour cherry. Use the same weight. All provide tartness and a jewel-like appearance, though pomegranate arils add juiciness.
- ground cardamom → rose water (⅛ tsp) or ground cinnamon (¼ tsp). Rose water keeps the Persian theme and is more delicate; cinnamon is warmer and less floral.
- granola → crushed pistachios, toasted almond slivers, or a mix of toasted seeds and dried fruit. Choose ingredients that complement the cardamom; avoid granolas with strong vanilla, which can clash with cardamom.
- honey → maple syrup or agave nectar. Use equal amount. Maple adds a subtle earthiness; agave is more neutral.
