Pomegranate Coconut Açaí Shake
A vibrant, creamy smoothie blending tart pomegranate juice with rich coconut milk, antioxidant-packed açaí berries, and vanilla. Naturally sweet with a jewel-like color, it's ready in minutes—perfect for breakfast, post-workout refueling, or a refreshing afternoon drink. Serve immediately over ice for the best texture.
Steps
Before you start
- Have pomegranate juice, coconut milk, and frozen açaí packs ready—frozen berries are essential for a thick, cold shake without watering it down
- Chill your blender pitcher for 1 minute under cold water if you want the shake extra cold, or use chilled glasses
- If using fresh açaí bowls or unfrozen berries, freeze them for at least 2 hours in advance
Prepare the blender
- If desired for extra-cold results, rinse the blender pitcher and lid with cold water and set aside for 1 minute to chill.
- Alternatively, fill your serving glasses with cold water and ice to chill them while you blend.
- Pour out the water and ice just before serving.

Ready when: Blender pitcher is cold and ready
Tip: A cold blender pitcher keeps the shake at the ideal temperature and prevents it from warming up during blending.
Prepare the coconut milk
- Open the can of full-fat coconut milk and shake it vigorously for 30 seconds to distribute the cream evenly throughout.
- The cream naturally separates and rises to the top; vigorous shaking prevents a thin, watery shake.
- Measure out ¾ cup (180 ml) and pour it into the blender.

Ready when: Coconut milk is thoroughly shaken and poured into blender
Tip: If you don't shake well, the separated cream will clump and the shake will taste thin. Light shaking is not enough—shake as if you're mixing a paint can.
Add pomegranate juice
- Pour 1 cup (240 ml) of cold or room-temperature pomegranate juice into the blender.
- Do not use hot juice, as it will warm the shake.
- If using fresh-pressed juice, strain it through a fine-mesh sieve to remove any large pulp or seed fragments that might interfere with blending.

Ready when: Pomegranate juice is in the blender
Tip: Fresh-pressed juice may contain pulp; straining prevents a grainy texture and helps the blender work more smoothly.
Add frozen açaí and ice
- Add 1.5 cups (225 g) of frozen unsweetened açaí berries directly to the blender without thawing.
- Then add ½ cup (120 ml) of ice cubes.
- The frozen fruit and ice are critical for texture—they keep the shake thick and cold and prevent it from becoming a thin, warm juice.

Ready when: Frozen açaí and ice are in the blender
Tip: Never use thawed açaí; frozen berries are essential. If berries have already thawed, freeze them again or the shake will be thin and warm.
Add vanilla and optional ingredients
- Pour in ½ tsp (2.5 ml) of pure vanilla extract.
- If desired, add ½ cup (120 g) of cold plain Greek yogurt for extra creaminess, or 1 tbsp (21 g) of raw honey for added sweetness.
- Taste in your mind: the pomegranate is naturally tart, the coconut milk is rich, and the açaí is earthy—decide whether you want the Greek yogurt for creaminess, honey for sweetness, both, or neither before blending.

Ready when: All ingredients are in the blender
Tip: Add yogurt for post-workout protein and creaminess; add honey only if you prefer a sweeter drink. You can always add honey after blending if you taste and want it sweeter.
Blend on high speed
- Secure the blender lid firmly and blend on high speed for 45 to 60 seconds.
- Initially, you may hear grinding as the ice breaks down and the frozen berries soften.
- Listen for the sound to transition to a smooth whirring hum once everything is combined.
- Stop before 60 seconds if the shake looks completely smooth and frothy.

Ready when: Shake is silky smooth with no visible chunks of fruit or ice; if a few small ice bits remain, blend another 10–15 seconds
Tip: If the blender sounds strained or doesn't spin freely, stop immediately and use a long spoon to stir the mixture and break up ice clumps, then blend again. Never force the motor.
Check texture and consistency
- Open the blender and look at the shake.
- It should be creamy, thick, and silky with a uniform deep burgundy-purple color from the pomegranate and açaí.
- If you see small chunks of berry or ice, blend for another 10–15 seconds.
- If it looks too thin or watery, the coconut milk may not have been shaken enough—in future batches, shake the can even more vigorously.

Ready when: Shake is uniformly smooth and thick with no chunks or visible separation
Tip: A thick, creamy shake is the goal. If it's thin, the problem is usually underagitated coconut milk or not enough ice. Adjust for next time.
Pour into chilled glasses
- Immediately divide the shake between two 12–16 fl oz glasses.
- Pour slowly and steadily to avoid excess splashing, as the shake is thick and frothy.
- If glasses aren't already chilled, it doesn't matter much since the shake is cold, but chilled glasses help preserve the ideal temperature.

Ready when: Shake is divided evenly between two glasses
Tip: Pour steadily—a too-fast pour will create excessive foam on top, though the foam is not a problem if you like it.
Garnish and serve
- If desired, top each glass with a small handful (about 2 tbsp or 20 g) of fresh pomegranate seeds.
- The jewel-like arils add a burst of tartness and visual appeal.
- Provide a wide straw or cocktail spoon so you can reach the thick shake easily.
- Serve immediately.

Tip: Fresh pomegranate arils on top make this look restaurant-quality. Eat or sip them first—they add tartness and texture.
Good to know
Tips
- If pomegranate juice is hard to find, press fresh pomegranates: cut in half, hold over a bowl cut-side down, and use a citrus reamer or your palm to roll and squeeze out the juice. About 1 large pomegranate yields ½–¾ cup juice.
- For a protein-rich post-workout version, add 1 scoop of vanilla whey protein or plant-based vanilla protein powder when you add the other ingredients—it will boost creaminess and won't add much extra volume.
- To make this a low-sugar shake, omit honey entirely and choose unsweetened pomegranate juice; the natural sweetness of açaí and coconut milk keeps it pleasant.
- Store unopened cans of coconut milk at room temperature for up to 2 years; once opened, refrigerate in an airtight container for 5–7 days.
Storage & reheating
Best enjoyed fresh. If you must store, refrigerate in an airtight container for up to 2 hours, but texture will separate. Freeze individual portions in ice-pop molds for up to 1 month—thaw slightly before blending again or eat as a granita.
Substitutions
- fresh pomegranate juice → pomegranate concentrate diluted with water (2 tbsp concentrate + ¾ cup water), or 100% pomegranate–blueberry juice blend. Concentrate is more tart and intense; adjust honey if using concentrate. A juice blend will taste slightly less distinctive but still delicious.
- frozen unsweetened açaí berries → frozen blueberries or frozen mixed berries (blackberry, raspberry, blueberry), or a frozen açaí smoothie pack. Blueberries are milder and less earthy; add ½ tsp extra honey if substituting. A pre-made açaí pack removes guesswork and is often more convenient.
- canned full-fat coconut milk → full-fat dairy milk, oat milk, or cashew cream. Dairy milk will taste creamier and less tropical; oat milk keeps it plant-based and mild; cashew cream is rich but less coconut flavor.
- pure vanilla extract → ½ tsp vanilla bean paste, or ¼ tsp almond extract. Vanilla paste adds visible flecks and stronger flavor; almond extract is subtle and nutty.
