Cauliflower Berry Smoothie

A thick, creamy purple smoothie that hides a full cup of frozen cauliflower behind sweet banana and tart mixed berries. Ground flaxseed adds fiber and omega-3s, and you won't taste the vegetable at all.

Steps

Before you start
  • Use cauliflower that is frozen raw (riced or florets), not cooked, for the mildest flavor.
  • Slice the banana and let the frozen cauliflower sit on the counter for 2 minutes if your blender is not high-powered.
  • Use ground flaxseed (flax meal); whole seeds will not break down and won't be absorbed.
  1. Prep the fruit

    • Peel the banana and cut it into 1-inch (2.5 cm) pieces.
    • Measure the frozen cauliflower and frozen mixed berries and have everything beside the blender.

Ready when: Banana is in even pieces and all frozen items are measured.

Tip: Very ripe, speckled bananas give the most sweetness and best hide the cauliflower.

  2. Add liquid first

    • Pour 1 cup (240 ml) cold milk into the blender jar, then add the ground flaxseed, vanilla, and honey if using.
    • Liquid at the bottom helps the blades catch and prevents air pockets.

Ready when: Liquid and flax are in the jar, with the flax sitting in the milk.

Tip: Skip the honey at first if your berries are sweet; you can add it after tasting.

  3. Load the solids

    • Add the banana, then the frozen cauliflower, and finish with the frozen berries on top.
    • Secure the lid firmly.

Ready when: All ingredients are layered in the jar with the heaviest frozen items on top.

Tip: Letting it sit 2 minutes is optional with a high-speed blender but helps standard ones.

  4. Blend until smooth

    • Start on low for 15 seconds, then increase to high and blend 45–60 seconds.
    • Stop and scrape down the sides with a spatula once if any chunks stick, then blend 15 seconds more.
    + Show details

Ready when: Deep purple, thick, completely smooth with no gritty flecks or visible cauliflower bits when you rub a drop between your fingers or taste it.

Tip: If the blades spin without pulling in the fruit, add 2 tablespoons more milk at a time.

  5. Taste and adjust

    • Taste the smoothie.
    • Add honey or maple syrup 1 teaspoon at a time if you want it sweeter, or 2–4 tablespoons milk if too thick, then blend 10 seconds.
    + Show details

Ready when: Thick but pourable, like a milkshake, and sweet with no vegetable taste.

  6. Serve right away

    • Divide between two tall glasses (about 12 oz / 360 ml each) and serve immediately with a wide straw or spoon.

Ready when: Smoothie is cold and thick.

Tip: Drink soon; the flax keeps thickening as it stands, so stir in a splash of milk if needed.

Good to know

Tips
  • Always use raw frozen cauliflower; steamed then frozen can taste stronger.
  • Put liquid in first and heavy frozen items last for the smoothest blend.
  • For extra protein, add 1/2 cup (120 g) plain Greek yogurt or a scoop of vanilla protein powder and 2 tablespoons more milk.
  • Rinse the blender right after use; flax gets sticky when dried.
Make ahead

Portion the banana, cauliflower, berries, and flaxseed into freezer bags up to 1 month ahead. Dump a bag into the blender with the milk and blend.

Storage & reheating

Best fresh. Refrigerate in a sealed jar filled to the top for up to 24 hours; stir or shake well, as it thickens and may separate. Freeze in ice cube trays or jars for up to 2 months; thaw in the fridge overnight or re-blend frozen cubes with a splash of milk. Not intended for room-temperature storage beyond 20 minutes.

Substitutions
  • milk of choice (dairy, soy, or unsweetened almond) → Oat milk, coconut milk beverage, or water. Water gives a lighter, less creamy result.
  • ground flaxseed → Chia seeds or hemp hearts. Use 1 tablespoon chia (it thickens more) or 2 tablespoons hemp hearts.
  • ripe banana → 1/2 cup (85 g) frozen mango chunks. Gives similar sweetness and creaminess with a tropical flavor.
  • frozen cauliflower florets or riced cauliflower → Frozen zucchini slices. Equal amount; slightly milder and a little less creamy.
