Steps
Before you start
- Use frozen pineapple chunks for a thick, frosty texture without watering it down with ice.
- Chill the coconut water so the smoothie is as cold as possible.
- Wash the celery well and trim off the base and any tough, stringy outer parts.
- Start with the smaller amount of ginger; it gets stronger the longer it sits.
Prep the celery
- Rinse the celery stalks under cold water.
- Trim off the base and leafy tops, and peel off any very stringy outer strands with a vegetable peeler.
- Cut the stalks into 1-inch (2.5 cm) pieces so the blender can break them down evenly.

Ready when: Celery is in uniform 1-inch pieces with no tough strings
Tip: Smaller pieces mean a smoother drink with no fibrous bits.
Prep ginger and lemon
- Scrape the skin off the ginger with the edge of a spoon or peel it, then roughly chop or grate 1 tablespoon (6 g).
- Cut the lemon in half and squeeze 2 tablespoons (30 ml) of juice into a small cup, picking out any seeds.

Ready when: Ginger is peeled and chopped small; juice is seed-free
Tip: Grating the ginger helps it blend fully and avoids stringy bits in a standard blender.
Load the blender
- Pour the cold coconut water into the blender first, then add the celery, ginger, and lemon juice.
- Top with the frozen pineapple chunks, plus the banana and honey if using.
- Liquid on the bottom helps the blades catch.

Ready when: All ingredients are in the jar with the frozen fruit on top
Tip: Layering liquid first and frozen fruit last prevents the blades from stalling.
Blend until smooth
- Secure the lid and start on low for 10 seconds, then increase to high and blend for 45–60 seconds (about 90 seconds in a standard blender).
- Stop and scrape down the sides if any chunks stick.
- Taste and add the honey or a little more lemon if needed.

Good to know
Tips
- Frozen pineapple does the work of ice, so the smoothie stays thick and full-flavored.
- Peel stringy celery or blend longer in a standard blender to avoid fibrous texture.
- Add the banana for a creamier, sweeter result, especially if your pineapple is tart.
- Boost it with a handful of spinach (about 1 cup / 30 g) for extra greens without changing the flavor much.
Make ahead
Prep the celery, ginger, and pineapple portions into a freezer bag or jar up to 3 months ahead (celery up to 1 month). Blend straight from the freezer with the coconut water and lemon juice.
Storage & reheating
Best fresh. Refrigerate in a sealed jar filled to the top for up to 24 hours; shake or stir well before drinking, as it will separate. Freeze in ice cube trays or containers for up to 2 months and re-blend with a splash of coconut water. Not recommended at room temperature for more than 30 minutes.
Substitutions
- unsweetened coconut water → cold water or unsweetened almond milk. Water gives a lighter, less sweet drink; almond milk makes it creamier.
- frozen pineapple chunks → fresh pineapple chunks plus 1 cup (about 150 g) ice. Same quantity of fruit, with ice added for thickness and chill.
- fresh lemon juice → lime juice. Use the same amount for a slightly more floral tang.
- fresh ginger → ½ teaspoon ground ginger. Milder and less fresh-tasting, but convenient.
