Steps

Before you start
  • Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving a 2-inch overhang on two sides for easy removal
  • Have a candy or instant-read thermometer ready and clean
  • Measure all ingredients before you start cooking
  • Cut unsalted butter into small cubes so it melts quickly and evenly
  1. Prep equipment and pistachios

    • Line the 8×8-inch (20×20 cm) baking pan with parchment paper, leaving approximately 2 inches of overhang on two opposite sides.
    • Set aside.
    • Finely chop the roasted pistachios into small, consistent pieces—not so fine that they become a powder, but fine enough to distribute evenly throughout the fudge.
    • Set aside.

Ready when: Pistachios are evenly and finely chopped

Tip: Consistent pistachio size ensures they distribute evenly and don't create hard pockets in the finished fudge.

  2. Melt cream and butter

    • In the heavy-bottomed saucepan, combine the heavy cream and cubed butter over medium heat.
    • Stir occasionally with a wooden spoon until the butter is completely melted and the mixture is smooth and uniform, about 2–3 minutes.
    • Do not allow the mixture to boil; it should just be warm and combined.

Ready when: Butter is completely melted; mixture is smooth and uniform

  3. Whisk in cocoa and honey

    • Remove the pan from heat.
    • Sift the cocoa powder directly into the cream mixture (this prevents lumps).
    • Add the honey.
    • Whisk vigorously for about 1 minute until the cocoa powder is completely dissolved and the mixture is smooth with no streaks or lumps.
    • The mixture should be uniform in color and texture.
    • Return the pan to medium heat.

Ready when: Cocoa powder is completely dissolved; mixture is smooth and uniform in color

Tip: Whisking off the heat first prevents the cocoa from forming clumps, which is difficult to dissolve once the mixture heats.

  4. Cook to soft-ball stageOven 240°F / 115°C

    • Once the mixture reaches a gentle simmer, insert the candy thermometer into the center of the pan, positioning it so the bulb is fully submerged but not touching the pan bottom.
    • Continue cooking, stirring occasionally with a wooden spoon to prevent sticking and ensure even heating, until the thermometer reads exactly 238–240°F (114–116°C).
    • This should take 8–10 minutes.
    • The mixture will darken slightly and bubble gently.
    • Watch carefully—do not let it exceed 250°F.

Ready when: Candy thermometer reads 238–240°F (soft-ball stage); mixture is slightly darker and bubbles gently

Tip: Do not exceed 250°F, or the fudge will become grainy. Use an accurate thermometer and read it at eye level to avoid errors.

  5. Add powdered sugar and salt

    • Remove the pan from heat.
    • Let the mixture cool undisturbed for 1–2 minutes (this brief rest prevents the powdered sugar from burning).
    • Sift the powdered sugar and salt directly into the warm fudge mixture.
    • Whisk until completely combined and smooth, about 1–2 minutes.
    • The mixture should be thick and glossy with no streaks of unmixed sugar.

Ready when: All sugar is fully dissolved; mixture is thick, glossy, and smooth

  6. Fold in vanilla and pistachios

    • Stir in the vanilla extract.
    • Using a rubber spatula, gently fold in the finely chopped pistachios (reserve a small handful if you wish to garnish the top).
    • Stir gently until the pistachios are evenly distributed throughout.
    • Do not overmix at this point, as vigorous stirring can cause the fudge to become grainy.

Ready when: Pistachios are evenly distributed throughout the fudge

Tip: Fold gently instead of stirring vigorously to avoid overmixing, which can develop graininess.

  7. Pour into prepared pan

    • Working quickly while the fudge is still warm and pourable, pour the entire mixture into the parchment-lined 8×8-inch pan.
    • Use a spatula to spread it evenly and smooth the top surface.
    • If desired, sprinkle the reserved chopped pistachios over the top and gently press them into the warm fudge.
    • The top should be smooth and relatively level.

Ready when: Fudge is spread evenly and smoothly in the pan

Tip: Work quickly at this step—the fudge thickens rapidly as it cools, making it harder to spread.

  8. Cool at room temperature

    • Allow the fudge to cool to room temperature on the counter, undisturbed, for approximately 1 hour.
    • The surface should feel dry to the touch and the edges should appear set when you gently press them.
    • The fudge should still be slightly soft in the center.

Ready when: Surface feels dry and slightly firm to the touch

  9. Chill in refrigerator

    • Transfer the pan (still containing the fudge) to the refrigerator and chill for 4–6 hours, or until the fudge is completely firm.
    • A knife inserted into the fudge should meet resistance and not sink through easily.
    • Overnight chilling is ideal if you have the time.

Ready when: Fudge is completely firm; a knife meets resistance when inserted

  10. Cut into pieces

    • Remove the fudge from the refrigerator.
    • Using the parchment overhang, carefully lift the entire block of fudge out of the pan and onto a cutting board.
    • Using a sharp knife, cut the fudge into 24–25 equal squares, each approximately 1 inch across.
    • For clean cuts, dip the knife in hot water and wipe it dry between each cut—this prevents the fudge from sticking and ensures neat edges.
    • Arrange on a serving plate or transfer to an airtight container for storage.

Ready when: Fudge is cut into clean, uniform squares

Tip: A hot, clean knife is essential for neat, clean cuts. Dip the knife into hot water and wipe dry if it becomes sticky.

Good to know

Tips
  • Use a candy thermometer for precision—reaching exactly 238–240°F (soft-ball stage) ensures the proper creamy texture. Exceeding 250°F will result in grainy fudge.
  • Chop the pistachios to a fine, consistent size so they distribute evenly throughout and don't create hard spots or pockets.
  • Dip your cutting knife in hot water and wipe it dry between cuts to achieve clean edges and prevent sticking.
  • If the chilled fudge is too hard to cut cleanly, let it sit at room temperature for 10–15 minutes before cutting to soften it slightly.
Make ahead

Fudge can be prepared up to 2 weeks in advance and stored in an airtight container in the refrigerator or at room temperature.

Storage & reheating

Store in an airtight container at room temperature for up to 1 week. Refrigerate for up to 3 weeks or freeze for up to 2 months. Fudge does not require reheating and can be served directly from the container at room temperature or chilled. If frozen, allow 15–20 minutes at room temperature to soften slightly before serving.

Substitutions
  • roasted unsalted pistachios → roasted unsalted almonds or walnuts. Use the same amount (1 cup / 140 g); the flavor will be different but the texture and method remain the same.
  • raw honey → light agave nectar or brown rice syrup. Use the same amount (1/4 cup / 85 ml); the result will be slightly less floral in flavor but the texture will be similar.
  • heavy cream → evaporated milk or sweetened condensed milk. Use the same amount of evaporated milk, or reduce to 3/4 cup (180 ml) if using sweetened condensed milk. If using condensed milk, also reduce powdered sugar to 3/4 cup (90 g) to maintain the right sweetness.
  • unsweetened cocoa powder → 2 oz (55 g) finely chopped dark chocolate. Finely chop the chocolate and fold it in after removing the pan from heat. Reduce powdered sugar to 3/4 cup (90 g) and omit the cocoa powder measurement in Step 3.
