Steps
Before you start
- Chill a 9×13-inch (23×33 cm) shallow metal pan in the freezer for at least 2 hours
- Have all juices at room temperature before mixing
- Read the freezing and stirring schedule—the slush needs attention every 45 minutes for 4–5 hours
Mix the base
- In a large mixing bowl or pitcher, combine the pineapple juice, passion fruit juice, fresh lime juice, white rum, and simple syrup.
- Stir well until fully combined.
- Taste and adjust sweetness or rum intensity to your preference—the mixture should taste slightly more flavorful than you want the final slush to be, as freezing will dull the taste slightly.

Ready when: mixture is homogeneous and flavorful
Tip: If using fresh passion fruits, cut them in half and scoop out the pulp with seeds, then press through a fine-mesh sieve with the back of a spoon to extract the juice while removing seeds.
Pour and freeze
- Pour the mixture into your chilled 9×13-inch metal pan in an even layer.
- Place in the freezer.
- Set a timer for 45 minutes.

Ready when: edges are frozen, center still liquid
Tip: A shallow metal pan freezes faster and more evenly than glass or plastic; the metal also conducts cold more efficiently.
First scrape
- Remove the pan from the freezer.
- Using a fork or ice scraper, rake the frozen edges toward the center, breaking up any solid ice crystals and mixing them with the still-liquid center.
- This creates the slushy texture.
- Return to the freezer for another 45 minutes.

Ready when: mixture is partially frozen with a slushy consistency
Tip: Scrape vigorously to break up large ice crystals; you're aiming for a granita-like texture, not a block of ice.
Second scrape
- Repeat the scraping process: remove from the freezer, rake with a fork to break up and mix the frozen and liquid portions, then return to the freezer for 45 minutes.

Ready when: more than half the mixture is now frozen but still has liquid sections
Tip: The alcohol content prevents the mixture from freezing solid, so you'll always have a slushy consistency rather than hard ice.
Third scrape
- Remove the pan again, scrape thoroughly with a fork to combine all frozen and remaining liquid portions into one slushy consistency.
- Return to the freezer for a final 45 minutes to 1 hour.

Ready when: mixture is uniformly slushy with small ice crystals throughout
Tip: If you're short on time, you can serve after the third scrape, but the final freeze creates a smoother, more cohesive texture.
Serve immediately
- Remove the pan from the freezer about 5 minutes before serving to allow the slush to soften slightly.
- Using a fork or spoon, scrape the slush to create small crystals and transfer into chilled glasses.
- Top each glass with a small handful of crushed ice if desired, a fresh mint sprig, and a pineapple wedge.
- Serve right away while still icy and cold.

Ready when: slush is pourable but icy, with visible small ice crystals
Tip: Chill your serving glasses in the freezer for 10 minutes before serving so the slush stays cold longer in the glass.
Good to know
Tips
- Fresh juice makes a noticeable difference in flavor. If fresh passion fruit is unavailable, look for bottled passion fruit juice (not nectar) in Latin or Caribbean markets or online.
- The alcohol content in this slush is about 20% ABV, so it will never freeze completely solid—this is intentional and creates the slushy texture. If you prefer a stronger drink, add more rum; for a lighter version, replace some rum with additional pineapple juice.
- Set phone reminders for each scraping session; the texture depends on this 45-minute rhythm. Missing a scrape or two will result in larger, icier crystals, which some people prefer, but the slush will be less smooth.
- For a party, you can make two batches in separate pans and combine them in a large punch bowl with extra crushed ice just before serving, then keep a spoon nearby so guests can serve themselves.
Make ahead
The slush can be made up to 2 days ahead. Once fully frozen, cover with plastic wrap to prevent ice crystals from absorbing freezer odors and to maintain texture. On the day of serving, remove from the freezer and scrape vigorously for 1–2 minutes to restore the slushy consistency before serving.
Storage & reheating
Room temperature: Not applicable (contains alcohol and is frozen). Freezer: Up to 2 days in a covered container; scrape and stir with a fork just before serving to refresh the texture. The slush will gradually separate and harden if left frozen longer than 2 days; if this happens, thaw it slightly and re-freeze with additional scraping sessions.
Substitutions
- white rum (aged or light) → Light aged rum or spiced rum. Aged rum adds oak notes; spiced rum adds warmth and complexity. Use the same quantity.
- passion fruit juice (from fresh passion fruits or bottled), strained to remove seeds → Mango juice or guava juice. Mango or guava delivers similar tropical sweetness and flavor. Use the same 1 cup (240 ml) quantity.
- fresh lime juice → Fresh lemon juice or bottled Key lime juice. Lemon is slightly less acidic but works well; Key lime is more aromatic if you prefer authentic Caribbean flavor.
- coconut rum → Coconut milk or cream of coconut. Adds richness without extra alcohol; use 2–3 tablespoons (30–45 ml) and reduce simple syrup slightly.
