Steps

Before you start
  • Chill the pineapple juice and coconut cream in the fridge for at least 2 hours so the drink blends colder and stays thick.
  • Chill two tall glasses in the freezer for 10 minutes if you like a frosty serve.
  • Shake the can of coconut cream well before opening, since the solids separate from the liquid.
  • Use a blender with an ice-crush setting or a strong motor for the smoothest texture.
  1. Prepare the garnish

    • Cut two wedges from a fresh pineapple slice, each about ½ inch (1 cm) thick.
    • Cut a small slit from the flesh to the center of each wedge so it can sit on a glass rim.

Best served immediately. Leftover blended drink can be frozen in an airtight container for up to 1 month; re-blend with a splash of pineapple juice before serving. Refrigerated, it separates and keeps only about 4 hours, so stir or shake well. Unused canned coconut cream keeps in the fridge in a sealed container for 4 days.

Substitutions
  • sweetened cream of coconut (such as Coco López) or unsweetened coconut cream → full-fat coconut milk plus 1 tablespoon (12 g) sugar. Slightly lighter body; stir in the sugar until dissolved. Use ½ cup (120 ml).
  • pineapple juice → 1 cup (165 g) frozen pineapple chunks plus ½ cup (120 ml) water. Reduce ice to 1 cup (140 g) for a thicker, fruitier drink.
  • fresh lime juice → lemon juice. Use the same amount for a similar bright note.
  • ice cubes → frozen pineapple chunks. Use 2 cups (330 g) in place of the ice for more fruit flavor and a creamier texture.
