A bright, fizzy Cuban-style mocktail with freshly muddled mint, tart lime, and just enough sugar, topped with club soda over crushed ice. Refreshing, balanced, and ready in five minutes.

Steps

Before you start
  • Chill the club soda and the glasses in the fridge for at least 30 minutes if you can; colder drinks dilute less.
  • Use fine granulated sugar or superfine sugar so it dissolves quickly without needing a syrup.
  • Roll the limes firmly on the counter before cutting to get more juice.
  • Choose spearmint if possible; it's the classic mojito mint and is sweeter than peppermint.
  1. Chill and prep

    • Put the glasses in the fridge or freezer if you have time.
    • Rinse the mint and pat it dry.
    • Cut 2 limes into 4 wedges each (8 wedges total).
    • Cut the third lime into 2 thin wheels for garnish and set aside.

    Ready when: Mint is dry, limes are cut, and garnishes are set aside.

    Tip: Wet mint dilutes the drink and bruises more easily, so dry it well.

  2. Crush the ice

    • Place 2 cups (300 g) of the ice in a zip-top bag, wrap in a clean towel, and whack with a rolling pin until it breaks into pea-sized pieces.

    Ready when: Ice is mostly pea-sized chunks with few large cubes.

    Tip: Crushed ice chills fast and keeps mint suspended through the drink.

  3. Add sugar and limes

    • Divide the sugar between the two glasses (1½ tablespoons each).
    • Add 4 lime wedges to each glass.
  4. Muddle the limes

    • Press and twist the muddler into the limes 5–6 times, firmly enough to release the juice and start dissolving the sugar, but without grinding the rind to pulp.

    Ready when: Wedges are squeezed flat and the glass holds about 2 tablespoons of cloudy lime juice with sugar mostly dissolved.

    Tip: Over-muddling the rind releases bitter oils.

  5. Gently muddle mint

    • Divide the mint leaves between the glasses (about 15 each).
    • Press the muddler lightly 3–4 times, just to bruise the leaves and release their fragrance.
    • Do not shred them.

    Ready when: Leaves look bruised and darker, and you can smell strong mint.

    Tip: Shredded mint turns bitter and leaves green flecks; press, don't grind.

  6. Stir and taste

    • Add 1 tablespoon of club soda to each glass and stir for 10 seconds until the sugar is completely dissolved.
    • Taste the liquid and add a pinch more sugar if it's too tart.

    Ready when: No sugar grains remain at the bottom when you scrape with the spoon.

    Tip: Adjust sweetness now; it's hard to fix once the glass is full of ice.

  7. Add ice

    • Fill each glass about halfway with crushed ice, then top with whole ice cubes to within ½ inch (1 cm) of the rim.
    • Stir from the bottom up once or twice to lift the mint and lime.

  8. Top and garnish

    • Slowly pour about ¾ cup (180 ml) chilled club soda into each glass.
    • Give one gentle stir.
    • Garnish with a lime wheel and a mint sprig, slapping the sprig once between your palms to wake up its aroma.
    • Serve immediately with a straw.

Good to know

Tips
  • Muddle the limes first and the mint last and lightly; bruised, not shredded, mint gives clean flavor.
  • Always taste before adding ice. Dilution will mellow the sweetness and tartness.
  • For a bigger batch, multiply the base and muddle in a sturdy pitcher, then pour over ice into glasses and top each with soda.
  • Slap the mint garnish between your palms to release aroma before placing it in the glass.
Make ahead

Muddle the limes, sugar, and mint (steps 3–6) in a pitcher up to 2 hours ahead and refrigerate. Add ice and club soda only when serving.

Storage & reheating

Best served immediately. Leftover drink with ice keeps about 30 minutes before it goes flat and watery. The muddled mint-lime base (without soda) keeps in the fridge for up to 4 hours; beyond that the mint darkens and turns bitter. Not suitable for freezing. No reheating needed.

Substitutions
  • fine granulated sugar → 2 tablespoons simple syrup, agave, or light honey per 2 drinks (about 30 ml). Liquid sweeteners blend quickly; start with 1 tablespoon per glass and adjust to taste.
  • club soda → Sparkling water or lemon-lime soda. Plain sparkling water behaves identically. If using lemon-lime soda, cut the sugar to 1 tablespoon total.
  • fresh spearmint leaves → Peppermint leaves. Peppermint is stronger and cooler; use about 20 leaves total and muddle gently.
  • limes → Lemons. Gives a softer, sweeter citrus note; add a touch more sugar if desired.
