North African Orange Blossom Wafer Crisps
Delicate, shatteringly crisp wafers infused with orange blossom water and layered with toasted almonds and honey. These traditional North African pastries are brushed with clarified butter and baked until golden, then drizzled with warm honey for a fragrant, crunchy confection that pairs beautifully with mint tea.
Steps
Before you start
- Have all ingredients measured and ready before opening the phyllo package (it dries quickly)
- Preheat oven to 375°F (190°C) at least 15 minutes ahead
- Clarified butter should be warm but not smoking
- Keep unused phyllo sheets covered with a damp kitchen towel
Toast the almonds
- Heat a small dry skillet over medium heat.
- Add the sliced almonds and toast, stirring frequently, for 1½ to 2 minutes until fragrant and lightly golden.
- Transfer to a plate to cool, then roughly chop into ¼-inch pieces.
- Set aside.

Ready when: Almonds are fragrant and light golden brown
Tip: Toast just long enough to awaken the flavor without browning further—they'll darken slightly in the oven
Prepare the orange-honey mixture
- In a small bowl, combine 2 tablespoons (30 g) of honey with the 2 tablespoons (30 ml) of orange blossom water, stirring until smooth and well blended.
- Set aside.

Tip: This mixture will be brushed between layers to infuse the wafers with floral flavor
Set up the workspaceOven 375°F / 190°C
- Line a large baking sheet (17×12 inches / 43×30 cm) with parchment paper.
- Preheat the oven to 375°F (190°C).
- Place the clarified butter in a shallow bowl so it's easy to brush.
- Keep the package of phyllo sheets on the counter with a damp kitchen towel draped over them to prevent drying.

Tip: Phyllo dries out in minutes when exposed to air, so organization is key
Layer and butter the first phyllo sheets
- Remove one phyllo sheet and place it on the parchment-lined baking sheet.
- Using a pastry brush, lightly brush the entire surface with warm clarified butter—use just enough to coat without pooling.
- Sprinkle 2 tablespoons (15 g) of chopped almonds evenly over the surface, leaving a ½-inch border.
- Place a second phyllo sheet directly on top and brush lightly with butter.
- Repeat this process (butter, almond layer, phyllo) with 4 more sheets, for a total of 6 layered sheets.

Tip: Work quickly and keep the towel over unused phyllo; even 30 seconds of air exposure causes cracking
Add the orange-honey infusion
- Lightly brush the top phyllo sheet with the orange blossom–honey mixture you prepared.
- Sprinkle the remaining 4 tablespoons (30 g) of chopped almonds on top, and dust evenly with the ground cinnamon and sea salt.

Tip: The honey-orange mixture will caramelize slightly during baking and help bind the layers
Finish the final layer
- Place the last phyllo sheet on top and brush very lightly with clarified butter.
- This will become the crispy exterior.

Tip: Use a very light hand on the final layer so the top browns evenly without burning
Score the wafers
- Using a sharp knife or pizza cutter, score the layered phyllo into 18 pieces: cut in half lengthwise to create two long rectangles, then cut each rectangle into 9 equal pieces (making 3 cuts across each, plus the center line).
- Press down gently but do not cut all the way through—you want the layers to hold together during baking, separating cleanly after.

Tip: Score deeply enough to guide the break but gently enough that the butter-bound layers don't separate before baking
Bake until golden and crispOven 375°F / 190°C
- Transfer the baking sheet to the preheated 375°F (190°C) oven and bake for 16 to 18 minutes, until the pastry is deep golden brown and the edges are darker and beginning to crisp.
- The wafers should feel dry when you tap one lightly.

Ready when: Top is deep golden brown, edges are dark and crisp, and layers feel dry and shatteringly hard when tapped
Tip: If the edges brown too quickly before the center crisps, rotate the pan halfway through baking
Cool and separate
- Remove the baking sheet from the oven and set it on a wire cooling rack.
- Let the wafers cool for 5 minutes—they will still be very hot and pliable at this point.
- Use the pre-scored lines as guides and gently break or cut the pastry into individual pieces.
- Some gentle pressure along the cuts will cleanly separate them.
- Return the pieces to the rack to cool completely, about 10 minutes more.
- They will continue to harden as they cool.

Ready when: Wafers are cool to the touch, completely crisp, and break cleanly with little pressure
Tip: Separate them while warm but not piping hot—waiting too long will make them too brittle to break cleanly
Warm and drizzle the honey
- While the wafers cool, gently warm the remaining 6 tablespoons (90 g) of honey in a small saucepan over low heat until it is pourable and warm to the touch (about 110°F / 43°C), about 2 minutes.
- Do not overheat.
- Once the wafers are completely cool and crisp, drizzle the warm honey over the tops in a thin zigzag pattern.
- If using pistachios, scatter the chopped pieces over the honey while it is still warm so they adhere slightly.

Ready when: Honey is warm, fluid, and easily pourable without being hot
Tip: Warm honey flows better than cold honey and sticks to the crisps; avoid overheating or the flavor will change
Good to know
Tips
- Phyllo sheets tear and crack easily—this is normal. Butter and almonds filling small gaps will prevent them from spreading during baking. Work quickly with phyllo once you unwrap it, and always keep unused sheets under a damp towel.
- For the crispiest result, ensure the phyllo is at room temperature (not cold from the freezer) and that the clarified butter is warm but not smoking. Cold dough breaks; hot butter burns.
- If you don't have clarified butter on hand, you can make it quickly: melt unsalted butter in a small saucepan over low heat, let it sit for 5 minutes, then carefully pour off the clear fat into a bowl, discarding the milky solids at the bottom.
- These wafers pair beautifully with strong, unsweetened mint or black tea. The honey drizzle can be omitted or reduced if you prefer them less sweet, and they're equally delicious savory-dipped in hummus or labneh.
Make ahead
The unbaked layered pastry can be prepared up to 2 hours ahead, covered loosely with plastic wrap and held at room temperature. Score it and bake when ready. Baked wafers are best enjoyed fresh the day they are made, when the contrast between the crispy exterior and tender almond layer is at its peak.
Storage & reheating
Store completely cooled wafers in an airtight container at room temperature for up to 3 days; they will gradually soften over time. For longer storage, freeze in a single layer on a baking sheet, then transfer to a freezer bag for up to 1 month. Thaw at room temperature for 30 minutes before serving—do not reheat, as this will soften the crisps. The honey drizzle is best added fresh the day of serving.
Substitutions
- raw sliced almonds → Blanched sliced almonds or a mix of pistachios and almonds. Toast blanched almonds briefly (they brown faster) or use a 1:1 mix with pistachios for deeper color and flavor
- orange blossom water → Rose water or ½ teaspoon finely grated orange zest mixed with 1 tablespoon water. Rose water creates a more floral wafer; zest gives brighter citrus notes but less perfume
- clarified butter (ghee), warm → Melted unsalted butter (not clarified). Melted butter will work but lacks the pure fat of clarified butter, resulting in slightly less crispy layers
- honey → Warm agave nectar or maple syrup. Agave is lighter and less viscous; maple adds an earthy note. Use the same amounts
