Steps
Before you start
- Use short-grain white rice (like Japanese or sushi rice) for authentic flavor and texture
- Have all ingredients measured and ready before starting to cook
- Use a saucepan with a tight-fitting lid to properly trap steam
- The key to fluffy rice is resisting the urge to open the lid while it cooks
Rinse the rice
- Place 1½ cups white rice in a fine-mesh strainer and rinse under cool running water, gently stirring with your fingers, until the water runs mostly clear (about 1–2 minutes).
- This removes excess starch and prevents the rice from becoming gummy or clumpy.
- Drain well and set aside.

Ready when: Water runs nearly clear
Bring to boil
- In a 3-quart saucepan with a lid, combine the rinsed rice with 2¼ cups water.
- Bring to a boil over high heat, watching for large bubbles and steam to rise vigorously from the pot (about 4 minutes).
- Once boiling, stir the rice once to redistribute the grains evenly, then immediately cover tightly with the lid.

Ready when: Liquid boils vigorously; steam rises from the pot
Tip: Have your lid ready before the water boils so you can cover the pot immediately after stirring
Simmer rice covered
- Reduce heat to low and simmer undisturbed for 15 minutes.
- Do not stir, lift the lid, or peek during this time—steam escaping interferes with even cooking.
- Set a timer to avoid temptation.

Ready when: All liquid is completely absorbed; small steam holes form across the surface of the rice
Tip: Don't peek—this breaks the cooking process. If you must check, do so only at the very end of the 15 minutes
Rest rice off heat
- Remove the saucepan from heat and leave it covered for 5 minutes.
- During this time, residual steam finishes cooking any remaining firm grains and allows the rice to become light, fluffy, and separate easily.

Ready when: Rice is fully cooked and light; grains separate easily
Finish with miso, butter, and scallions
- While the rice rests, whisk 2 tablespoons miso paste with 2 tablespoons warm (not hot) water in a small bowl until smooth and completely free of lumps.
- Uncover the saucepan and gently fluff the rice with a rice paddle or fork, stirring carefully to separate the grains without breaking them.
- Pour the miso mixture over the rice and place 3 tablespoons butter on top.
- Using gentle folding motions (lifting rice from the bottom and folding it over the top), combine until the butter is melted and miso is evenly distributed throughout, about 30 seconds to 1 minute.
- Top with 4 sliced scallions and a pinch of salt.
- Fold gently once or twice to distribute, then taste and adjust seasoning if needed.
- Serve immediately while hot.

Ready when: Butter is melted, miso is evenly distributed throughout, rice is glossy and flecked with green
Tip: Use gentle folding motions to avoid crushing delicate rice grains and making the rice mushy. Taste before adding extra salt—the miso and butter are already quite salty
Good to know
Tips
- Keep the lid on while simmering—each time you lift it, steam escapes and the rice cooks unevenly or develops hard spots
- Use gentle folding with a rice paddle to preserve the delicate, separate texture of cooked rice; vigorous stirring breaks grains and creates a gummy result
- Never boil miso; add it to warm (not hot) rice off-heat to preserve its complex flavor, aroma, and probiotic benefits
- For deeper umami flavor and more authenticity, substitute dashi (Japanese soup stock) for water in the same volume
Make ahead
Rice can be cooked 1 day ahead and stored covered in the refrigerator. To serve, reheat gently in a covered saucepan with a splash of water over low heat for 3–5 minutes, stirring gently, until warmed through. Add the miso, butter, and scallions just before serving for best flavor.
Storage & reheating
Room temperature: Up to 4 hours in a covered container. Refrigerator: Up to 3 days in an airtight container; reheat gently in a covered pan over low heat with a splash of water for 3–5 minutes. Freezer: Not recommended—texture becomes mushy upon thawing.
Substitutions
- White miso paste (shiro miso) → Red miso paste (aka miso). Slightly earthier and deeper flavor; use the same amount (2 tablespoons)
- Water → Dashi or Japanese soup stock. Richer umami and more authentically Japanese; use the same volume
- Unsalted butter → Olive oil or coconut oil. Use 2 tablespoons instead of 3 due to stronger flavor; works if dairy-free is needed
- Scallions (green onions) → Chives. Milder onion flavor; use the same amount
