Instant Pot Strawberry Rhubarb Salad with Brown Sugar
A pressure-cooked strawberry and rhubarb compote that's naturally sweetened with brown sugar and gently brightened with lemon juice. The quick Instant Pot method keeps the fruit from completely breaking down while allowing the flavors to meld beautifully. Serve warm or chilled with a dollop of whipped cream for a simple, elegant dessert.

Steps
Before you start
- Read through the entire recipe and gather all ingredients
- Ensure your Instant Pot is clean and the sealing ring is in place
- Have a heatproof bowl (7–8 inch diameter) that fits inside your Instant Pot
Prepare the fruit
- Rinse the strawberries under cool water and remove the green hulls completely.
- Cut each berry in half lengthwise.
- Rinse the rhubarb under cool water and cut into ¾-inch pieces, discarding any leaves (they contain oxalic acid and are toxic).
- Set the prepared fruit aside.
- Measure out the brown sugar, lemon juice, and vanilla extract.

Ready when: Strawberries are halved evenly; rhubarb pieces are ¾-inch throughout
Tip: Remove rhubarb leaves completely—they are inedible. Cut all rhubarb to uniform size so it cooks evenly without turning mushy.
Set up pressure cooker
- Pour 1 cup of water into the Instant Pot.
- Place the trivet inside the pot, ensuring the legs rest firmly on the bottom.
- Position the heatproof bowl on top of the trivet so it sits about ½ inch above the water level.

Ready when: Bowl is stable on trivet with visible water below
Tip: Use a glass or ceramic bowl that sits comfortably inside without touching the sides of the pot.
Mix fruit with seasonings
- In the heatproof bowl, gently combine the halved strawberries, rhubarb pieces, brown sugar, lemon juice (2 tbsp / 30 ml), and vanilla extract (1 tsp / 5 ml).
- Stir gently with a spoon to evenly coat the fruit with sugar and lemon juice, being careful not to crush the strawberries.

Ready when: Sugar is mostly distributed; fruit is lightly coated
Tip: Gentle stirring preserves the strawberries' shape and prevents bruising.
Pressure cook the fruit
- Close the Instant Pot lid and verify the sealing ring is in place.
- Move the vent valve to the SEAL position.
- Press the PRESSURE COOK or MANUAL button and set to HIGH PRESSURE for 3 minutes at high pressure.
- The pot will take about 5 minutes to build pressure (the pressure indicator pin will rise when sealed).
- Once the timer beeps, cooking is complete.

Ready when: Pressure indicator pin is raised; timer beeps and shows 0 minutes
Tip: Do not open the lid while pressurizing or the cooking cycle will stop and the pressure will release.
Release the pressure
- Once the timer beeps, carefully move the vent valve from SEAL to VENT position to quick-release the pressure.
- Be careful of the hot steam escaping upward.
- Wait until all steam subsides fully and no more steam escapes from the vent (about 5 minutes).
- The pressure indicator pin should fall completely flat when pressure is released.

Ready when: Pressure indicator pin lies flat; no steam escapes from vent
Tip: Quick release stops the cooking immediately, preventing the fruit from breaking down too much.
Finish and serve
- Once the pressure is fully released and it's safe to open, carefully open the lid by tilting it away from you to avoid any remaining steam.
- Stir the fruit gently with a spoon.
- The strawberries should be softened but still hold their individual shape, and the rhubarb should be tender.
- Divide the warm compote among serving bowls and top each with a generous dollop of whipped cream.
- Serve immediately while warm, or transfer to a bowl, let cool, and chill in the refrigerator for up to 3 days.

Ready when: Strawberries are soft but retain shape; rhubarb is tender; liquid is lightly thickened
Tip: If the compote seems thin, let it cool to room temperature—the natural pectin will help it set and thicken slightly as it cools.
Good to know
Tips
- Cut rhubarb to uniform ¾-inch pieces so it cooks evenly and becomes tender without turning to mush.
- If you prefer a thicker, sauce-like compote, stir together 1 tbsp cornstarch with 2 tbsp cold water after releasing pressure, add it to the hot fruit, seal the pot, and cook at high pressure for 1 minute.
- For a spiced version, add ¼ tsp ground cinnamon and a tiny pinch of nutmeg to the fruit mixture before cooking.
- The compote will thicken further as it cools; if it seems too loose when warm, it will firm up once chilled.
Make ahead
You can prepare the strawberries and rhubarb up to 4 hours ahead, covering and refrigerating them until ready to cook. The finished compote can be made up to 2 days ahead and stored covered in the refrigerator.
Storage & reheating
Room temperature: 2–3 hours, covered. Refrigerator: up to 3 days in an airtight container. Freezer: up to 3 months in a freezer-safe container. To reheat: thaw overnight in the refrigerator if frozen, then warm gently in a saucepan over low heat or in the microwave in 30-second bursts, stirring between each burst.
Substitutions
- fresh strawberries → Fresh blackberries (1.5 lbs / 680 g). Blackberries will break down slightly more, creating a thicker, more jammy compote. Reduce lemon juice to 1 tbsp (15 ml) since blackberries are naturally more tart.
- brown sugar, packed → Granulated white sugar (¼ cup / 50 g). White sugar creates a cleaner, lighter flavor without molasses depth. Use slightly less than the brown sugar amount since white sugar is more dense.
- vanilla extract → Almond extract (½ tsp / 2.5 ml). Almond extract provides a complementary flavor profile. Use half the amount since it is more potent than vanilla.
- fresh rhubarb → Frozen rhubarb (1 lb / 450 g, thawed) or additional fresh strawberries (1 lb / 450 g). If using frozen rhubarb, thaw completely and drain excess liquid before cooking; cook time remains the same. Additional strawberries make a fruitier, less tart compote.
