Steps

Before you start
  • If your sourdough discard has separated liquid on top, drain or stir it back in
  • Pit the dates (or use pre-pitted dates)
  • Measure all ingredients before beginning
  • Chill a medium bowl in the refrigerator if your kitchen is warm
  1. Prepare ingredients

    • If using whole dates, pit them and coarsely chop into quarters.
    • Place almonds and walnuts in a food processor and pulse 4–5 times until roughly chopped, or chop by hand into ¼-inch pieces.
    • You want texture, not powder.
    • Combine the cardamom and sea salt in a small bowl and set aside.

Ready when: Nuts are coarsely chopped with visible pieces, not finely ground

Tip: Pulse nuts in short bursts—overprocessing turns them into flour, which changes the texture of the bites.

  2. Combine wet base

    • Spoon the sourdough discard into a medium bowl.
    • Add the honey and vanilla extract, and stir with a spatula until completely combined and smooth.
    • The mixture should look like thick cake batter.

Ready when: Honey is fully incorporated with no streaks; mixture is smooth and uniform

  3. Mix in nuts and dates

    • Add the cardamom–salt mixture, chopped dates, and chopped nuts to the sourdough mixture.
    • Stir vigorously with a spatula until all ingredients are evenly distributed.
    • The mixture should hold together when squeezed and look studded with nuts and date pieces.
    • This takes 2–3 minutes of stirring.
    + Show details

Ready when: Mixture is uniform with no pockets of dry ingredient; all nuts and dates are visible and distributed throughout

Tip: If the mixture feels too dry to hold together, add 1 tablespoon of honey or sourdough discard at a time until it comes together.

  4. Chill mixture

    • Cover the bowl with plastic wrap or transfer the mixture to an airtight container.
    • Refrigerate for 45 minutes.
    • The mixture will firm up and become easier to roll without sticking to your hands.
    • If your kitchen is very warm, extend the chill time to 1 hour.

Tip: Don't skip this step—chilled mixture is much easier to handle and rolls into uniform bites.

  5. Roll into bites

    • Remove the mixture from the refrigerator.
    • Using a 1-tablespoon measuring spoon or a cookie scoop, portion out the mixture.
    • Roll each portion between your palms into a ball about 1 inch in diameter.
    • If the mixture begins to soften while rolling, pop it back in the fridge for 10 minutes.
    • You should have about 24 bites.
    • If coating with coconut, place the coconut in a shallow dish and roll each bite to coat lightly.

Ready when: All mixture is rolled into uniform balls about 1 inch across; surface is smooth and even

Tip: Warm hands stick to the mixture. Keep a damp cloth nearby to wipe your hands occasionally, or work quickly and chill between batches.

  6. Final chill and set

    • Place the rolled bites on a parchment-lined plate or tray.
    • Refrigerate for 30 minutes to firm up before serving or storing.
    • This step ensures they hold their shape during storage.

Good to know

Tips
  • These bites are naturally vegan and contain no refined sugar; honey and dates provide sweetness.
  • Make a double batch and freeze in portions so you have suhoor energy bites on hand throughout Ramadan.
  • For a spiced variation, add 1/4 teaspoon of ground cinnamon, a pinch of ground ginger, or a few threads of saffron to the wet mixture in Step 2.
  • If coating with coconut, toast the coconut lightly in a dry pan for 2–3 minutes first for deeper flavor and fragrance.
Make ahead

Yes. Roll the bites, skip the final chill if needed, and refrigerate or freeze immediately. They're perfect for preparing 2–3 days before Ramadan begins.

Storage & reheating

Room temperature (cool, dry place): up to 2 days in an airtight container. Refrigerator: up to 2 weeks in an airtight container or freezer bag. Freezer: up to 3 months, wrapped individually or in an airtight container. To eat, remove from the fridge or freezer 5 minutes before serving for the best texture, or eat straight from cold for a firmer bite.

Substitutions
  • raw almonds → pecans, hazelnuts, pistachios, or sunflower seeds. Keep the total amount of almonds and walnuts combined at 1 cup. Mix and match as desired.
  • Medjool dates, pitted → raisins, dried figs, dried apricots, or a combination. Use the same weight (240 g). Figs and apricots may require a few extra seconds of chopping.
  • raw honey → maple syrup, brown rice syrup, or agave nectar. Use an equal amount (45 ml). The texture will be slightly softer with agave.
  • active sourdough starter discard, unfed → almond butter or tahini mixed with water, or blended pitted dates. Use 1/2 cup almond butter or tahini mixed with 3 tablespoons water; or 1/2 cup pitted dates blended with 3 tablespoons water.
