Steps
Before you start
- Cut plums in half and remove the pits
- Have a fine-mesh strainer ready
- Measure spices before starting
Prep and load
- Halve the plums and remove all pits.
- Peel the ginger and slice it thin (no need to be perfect—thin slices help flavor infuse quickly).
- Lightly crush the cardamom pods with the side of a knife or in a mortar; this releases the aromatic seeds inside.

Tip: Leave a few cardamom pods slightly intact so you can remove them easily after cooking; don't pulverize them to dust.
Load Instant Pot
- Pour 1.5 cups (360 ml) water into the Instant Pot insert.
- Add the halved plums, sliced ginger, crushed cardamom pods, and sea salt.
- Do not use the sauté function yet.
- Stir gently to combine.

Tip: The ratio of liquid to fruit matters—too much water and you'll have a weak drink; too little and the fruit may stick.
Pressure cook
- Seal the lid and set the valve to sealing.
- Cook at high pressure for 8 minutes.
- This softens the plums completely and melds the spices into the liquid without over-breaking down the fruit.
+ Show details− Hide details
Ready when: Instant Pot beeps when pressure time ends
Tip: Don't manually preheat the pot; it builds pressure naturally, which is fine for this recipe.
Natural release
- When the timer beeps, let pressure release naturally for 10 minutes.
- Then switch the valve to venting to release any remaining steam.
- Open the lid carefully, lifting it away from your face.

Ready when: Float valve drops when pressure is fully released
Tip: Natural release is gentler on delicate fruit flavors than quick release; don't rush it.
Strain the compote
- Set a fine-mesh strainer over a bowl or measuring cup.
- Pour the contents of the Instant Pot through the strainer, pressing gently on the cooked plums and ginger with the back of a spoon to extract all liquid and pulp.
- You should get about 1 to 1.25 cups (240–300 ml) of strained liquid with some suspended pulp.
- Discard the cardamom pods and ginger solids.

Ready when: Liquid runs clear; pulp is fully extracted
Tip: Don't over-press—you want the essence, not bitter tannins from the skins. A little pulp passing through is fine and adds body.
Finish with honey and lemon
- While the compote is still warm, stir in the honey and lemon juice.
- Taste and adjust sweetness or tartness as desired.
- Let cool slightly before serving.

Ready when: Honey dissolves into the warm liquid and flavors blend
Tip: Add honey while warm so it dissolves smoothly; add lemon juice after cooling slightly to preserve its bright flavor.
Serve
- Pour the warm compote into mugs.
- For a light drink, serve ¼ cup (60 ml) of compote per person and top with ¾ cup (180 ml) of hot water, hot milk, or hot sparkling water.
- For a stronger, more dessert-like drink, serve undiluted in small glasses or teacups.
- Garnish with a thin lemon slice or fresh ginger slice if desired.

Ready when: Drink is steaming and aromatic
Tip: If the compote cools and solidifies slightly (it may become slightly gel-like), gently reheat it in a small saucepan over low heat before serving.
Good to know
Tips
- Choose plums that smell sweet and fragrant—they should yield slightly to gentle pressure. Underripe plums won't develop full flavor even under pressure.
- The compote can be made thicker or thinner depending on how much water you serve it with. Make it as a concentrate and let guests dilute to taste.
- For a deeper spice flavor, try adding ¼ teaspoon of star anise or a small cinnamon stick during cooking. Remove before straining.
- This drink is wonderful iced as well: chill the compote completely, then mix with cold water, sparkling water, or even gin for an adult beverage.
Make ahead
Store the strained compote in an airtight jar in the refrigerator for up to 2 weeks. Reheat gently in a small saucepan over low heat, adding a splash of water if it has thickened, before serving.
Storage & reheating
Room temperature (initial cooling): up to 2 hours. Refrigerator: up to 2 weeks in an airtight jar. Freezer: up to 3 months in an airtight container or freezer bag. Reheat from frozen by thawing in the refrigerator overnight, then warming gently in a saucepan over low heat. The texture may become slightly more gel-like when cold but will loosen when reheated.
Substitutions
- fresh ginger root → ⅛ teaspoon ground ginger or fresh ginger powder. Use about ⅛ to ¼ teaspoon; ground ginger is more potent. Reduce the amount to avoid overpowering the plums.
- whole green cardamom pods → ½ teaspoon ground cardamom or a pinch of nutmeg and cloves. Ground cardamom works but is less aromatic; use half the amount listed for whole pods and stir in after straining to avoid grittiness.
- raw honey → maple syrup, agave nectar, or white sugar (use equal amount by volume). Honey adds floral warmth; substitutes will alter the flavor slightly but work well. Add sugar gradually and stir until dissolved.
- fresh plums, ripe and fragrant → fresh prune plums (Italian plums) or a mix of red and purple plums. Use ripe, fragrant plums for best flavor. Avoid very tart or underripe plums, which may need more honey.
