Steps
Before you start
- Preheat air fryer to 350°F (175°C) for 3 minutes
- Have a small saucepan ready on the stovetop for warming the milk mixture
- Measure all spices before starting so you're not searching mid-recipe
Air fry coconut flakesOven 350°F / 175°C
- Spread the unsweetened coconut flakes on a small air fryer–safe plate or parchment paper.
- Place in the preheated air fryer at 350°F (175°C) for 5–6 minutes, shaking the plate halfway through (at the 2.5-minute mark), until the flakes are golden brown and fragrant.
- Be watchful—they brown quickly.
- Pour the crisped flakes onto a clean plate and set aside.

Ready when: Coconut flakes are golden brown and fragrant
Tip: Don't walk away—coconut goes from pale to burnt quickly. Shake halfway to ensure even browning.
Toast ginger in air fryerOven 350°F / 175°C
- While the coconut is still crisping (or right after you remove it), place the sliced ginger on the same air fryer plate and air fry at 350°F (175°C) for 3–4 minutes until the edges are lightly browned and the pieces are fragrant.
- Remove and set aside with the coconut flakes.

Ready when: Ginger slices are lightly browned at the edges and fragrant
Tip: Thin slices toast faster. The slight char on the ginger adds depth to the drink.
Warm milk and spicesOven 170°F / 75°C
- Pour the coconut milk and whole milk into a small saucepan.
- Add the turmeric powder, black pepper, cardamom pods (if using), and a pinch of sea salt.
- Whisk well to combine and break up any turmeric clumps.
- Place over medium heat and warm for 2–3 minutes, stirring frequently, until steaming but not boiling.
- The mixture should reach about 160–170°F (70–75°C) internally.

Ready when: Milk steams and reaches 160–170°F (70–75°C); small wisps of steam rise from the surface
Tip: Turmeric can clump; whisk before heating to ensure it disperses evenly. Avoid boiling, which can break the milk's texture.
Strain and finish drink
- Remove the saucepan from heat.
- If you used cardamom pods, pour the milk mixture through a fine-mesh strainer into two mugs, leaving the cardamom behind.
- If you skipped the cardamom, pour directly into the mugs.
- Stir in the honey (if using) and vanilla extract (if using) until fully dissolved.

Ready when: Honey and vanilla are fully dissolved; liquid is smooth
Tip: Add sweetener while the drink is still hot so it dissolves completely. Strain while hot to capture all the spice flavor.
Top and serve
- Divide the toasted ginger slices between the two mugs.
- Top each with a generous handful (about 2–3 tablespoons) of the crispy coconut flakes.
- Stir gently before drinking so the ginger and coconut mix throughout.

Ready when: Both mugs are topped with toasted ginger and crispy coconut
Tip: The crispy coconut will soften as it sits in the warm milk, so serve immediately for the best crunch.
Good to know
Tips
- Turmeric stains easily—use a dark spoon and avoid splashing on light-colored surfaces or clothing.
- Black pepper is key to turmeric absorption (curcumin). Don't skip it, even though the amount is small.
- For a deeper ginger flavor, use a thicker slice (up to 1/2 inch) and add 1–2 minutes to the air fryer time.
- This drink is best enjoyed slowly, sipped warm, to let the spices settle on your palate as you drink.
Make ahead
You can toast the coconut flakes and ginger up to 2 days ahead and store them in separate airtight containers at room temperature. Reheat them in the air fryer at 300°F (150°C) for 1–2 minutes to re-crisp before serving. The drink itself is best made fresh, but you can prepare the spiced milk base, cool it completely, and refrigerate for up to 3 days; reheat gently on the stovetop (not in the microwave, which can cause turmeric to separate) before topping with fresh crispy coconut.
Storage & reheating
Room temperature: Not recommended (dairy-based drink spoils quickly). Refrigerator: Store leftover milk mixture in an airtight container for up to 3 days; reheat gently on the stovetop until steaming before serving. Freezer: Not recommended (milk-based drinks separate upon thawing). Crispy coconut and toasted ginger: Keep in separate airtight containers at room temperature for up to 5 days.
Substitutions
- whole milk or unsweetened plant-based milk → Oat milk, almond milk, or cashew milk (unsweetened or lightly sweetened). Plant-based milks create a lighter texture. Use high-fat coconut cream (instead of regular coconut milk) if you want an even richer drink.
- fresh ginger → 1/4 teaspoon ground ginger (1.25 g), added directly to the milk. Powdered ginger is milder and won't crisp in the air fryer, so the texture will differ. You'll miss the toasted depth, but the flavor will still be warming.
- raw honey or maple syrup → Agave nectar, date syrup, or coconut sugar (1 tablespoon / 12 g). All dissolve well in hot liquid. Coconut sugar adds a subtle caramel note that complements the spices.
- unsweetened coconut flakes → Sliced almonds or chopped pistachios (same amount). Nuts will toast faster (3–4 minutes at 350°F / 175°C); watch closely. They add crunch but change the coconut-forward flavor profile.
