Steps
Before you start
- Halve and pit the peaches but leave skin on for roasting
- Have heavy cream at room temperature or gently warmed
- Preheat air fryer to 390°F (200°C) for 3 minutes
Prepare and air fry peachesOven 390°F / 200°C
- Pat the peach halves dry with a paper towel.
- Brush the cut side lightly with about ½ tablespoon (7 ml) of the honey, dividing it among the 6 peach halves.
- Arrange them cut-side up in a single layer in the air fryer basket.
- Air fry at 390°F (200°C) for 12 minutes, until the cut surfaces are caramelized with golden-brown edges and the flesh is soft and fragrant.

Ready when: Peach flesh is soft and cut sides are deep golden brown with caramelized edges
Tip: Don't overcrowd the air fryer; a single layer allows even heat and browning. If your fryer is small, work in batches.
Steep roasted peaches
- Transfer the roasted peach halves to a small saucepan.
- Gently pour any juices from the air fryer basket over them (or scrape the basket with a spatula).
- Let the peaches rest in the pan for 2 minutes, then mash them lightly with the back of a spoon to break them into rough chunks and release their juices into the liquid at the bottom of the pan.

Ready when: Peaches are broken into chunks with visible peach juice in the pan
Tip: Don't purée; the soft chunks and juice will infuse the cream warmer with more peach flavor and create a luxurious texture.
Build the cream base
- Pour the heavy cream and whole milk into the saucepan with the mashed peaches.
- Add the remaining 2½ tablespoons (37.5 ml) honey, cardamom, nutmeg, and a small pinch of salt.
- Whisk gently to combine.

Ready when: All ingredients are evenly combined and spices are dispersed
Tip: Use a whisk to blend the spices evenly and prevent any cardamom or nutmeg from clumping.
Warm gently and infuse
- Set the saucepan over medium-low heat.
- Stir occasionally with a spoon as the mixture warms—do not boil.
- Heat for about 3 minutes, until small bubbles just begin to form around the edge of the pan and the surface steams slightly.
- If using vanilla, stir it in now.
- Remove from heat.

Ready when: Tiny bubbles form at the edge, surface steams; temperature around 160–170°F (71–77°C) if you check
Tip: Cream curdles easily if boiled. Keep heat low and watch carefully; you want hot but not simmering.
Strain and serve
- Pour the warm peach cream mixture through a fine-mesh strainer into two mugs, pressing gently on the peach chunks with the back of a spoon to extract as much liquid and peach pulp as possible.
- Divide evenly between the mugs (about 8 oz / 240 ml per serving).

Ready when: Liquid is strained and peach pulp separated
Tip: Save a few peach chunks to garnish the top if desired; they add visual appeal and a burst of peach flavor.
Good to know
Tips
- Ripe peaches are essential—they should yield slightly to gentle pressure and smell fragrant. Underripe peaches won't develop the deep caramel flavor.
- This drink pairs wonderfully with a buttered biscuit, coffee cake, or a light pastry for brunch or afternoon tea.
- For a vegan version, substitute heavy cream with full-fat oat cream or coconut cream and use agave or maple syrup instead of honey.
- Leftovers can be chilled and served as a peach cream iced drink over crushed ice, topped with a peach slice and a sprinkle of cardamom.
Make ahead
You can roast the peaches up to 3 hours ahead and store them in an airtight container in the refrigerator. When ready to serve, warm them gently in a saucepan with the cream and milk, then strain and serve. The flavor is best when enjoyed fresh, but you can also chill the strained mixture and serve it cold as a peach cream drink over ice.
Storage & reheating
Best served immediately while warm. If you have leftovers, store them in a sealed container in the refrigerator for up to 1 day and gently reheat over low heat (do not boil). Do not freeze. The drink may separate slightly on standing; whisk gently before reheating.
Substitutions
- ground cardamom → Ground ginger (¼ teaspoon / 0.5 g) or ⅛ teaspoon (0.3 g) ground cloves. Ginger adds warmth and spice; cloves are more floral and intense, so use less. Both pair beautifully with peach.
- heavy cream → Half-and-half or whole milk mixed with a splash of coconut milk for richness. This will be less creamy and luxurious but still delicious. Use 1¼ cups (300 ml) total liquid.
- honey → Maple syrup or light brown sugar (3 tablespoons / 45 ml or 36 g). Maple adds earthiness; brown sugar creates a slightly caramelized flavor. Adjust to taste for sweetness.
- fresh peaches, ripe but firm → Nectarines or apricots (same weight), or canned peaches in light syrup (drained, about 14 oz / 400 g). Canned peaches require less roasting time (about 8 minutes). Fresh stone fruits have the best flavor and texture.
