Steps

Before you start
  • Toast pistachios and saffron threads separately ahead of time for deeper flavor
  • Have rose water measured out—it's added at the end
  • Make sure your Instant Pot trivet is clean, and test the sealing ring
  1. Toast and bloom saffron

    • In a small bowl, add the saffron threads and toast them lightly over a flame or in a dry skillet for about 30 seconds until fragrant (be careful not to burn).
    • Pour 3 tablespoons of warm water over them and let steep for 5 minutes until the liquid turns deep gold.

Ready when: Liquid is deep golden yellow and fragrant

Tip: Don't skip toasting—it intensifies saffron's floral notes without scorching

  2. Prepare pistachios

    • Roughly chop the pistachios into ¼-inch pieces.
    • Divide them: toast half in a dry skillet over medium-low heat for 2–3 minutes, stirring often, until fragrant and lightly golden.
    • Set toasted nuts aside for garnish; leave the other half raw for mixing in.

Ready when: Nuts are fragrant and light golden brown

Tip: Separate toasting and raw portions—toasted nuts keep their crunch as garnish

  3. Add ingredients to Instant Pot

    • Pour 2.5 cups whole milk and 1.5 cups water into the Instant Pot inner pot.
    • Add 1.5 cups steel cut oats, ground cinnamon, cracked cardamom pods, and sea salt.
    • Stir well to combine and make sure the oats are submerged.
    • Drizzle in the saffron and its steeping liquid, stirring gently to distribute the threads.
    + Show details

Ready when: All ingredients are evenly mixed and oats are wet

Tip: Stir the saffron gently to avoid clumping; don't be aggressive, as some threads may dissolve into the liquid

  4. Seal and pressure cook

    • Close the Instant Pot lid, make sure the sealing ring is in place, and set the valve to "Sealing." Press the "Pressure Cook" or "Manual" button and set to high pressure for 10 minutes.
    • The pot will take 1–2 minutes to build pressure before the timer starts.
    + Show details

Ready when: Pressure indicator shows fully sealed; cooking time expires

Tip: Don't force the lid—let it lock naturally. If the pressure doesn't build within 3 minutes, check that the valve is sealed

  5. Natural release and open

    • Once the timer beeps, let the Instant Pot sit undisturbed for 10 minutes to naturally release pressure.
    • After 10 minutes, carefully turn the sealing valve to "Venting" to release any remaining steam.
    • Wait 30 seconds, then open the lid away from your face.
    + Show details

Ready when: No steam escapes when you turn the venting valve

Tip: Natural release prevents oats from becoming mushy; rushing with quick release breaks down the texture

  6. Stir and adjust consistency

    • Open the pot and stir the porridge thoroughly with a wooden spoon.
    • The oats should be creamy and soft but still have a slight chew.
    • If it's too thick, stir in warm milk or water, 2–3 tablespoons at a time, until you reach your desired consistency.
    • If it's too thin, let it sit for 2 minutes and the oats will absorb more liquid.
    + Show details

Ready when: Porridge is creamy but oats are still tender and slightly distinct

Tip: Don't over-stir—gently fold to preserve the texture. The oats will firm slightly as it cools

  7. Finish with honey and rose water

    • Stir in the honey and rose water until fully incorporated.
    • Taste and add a pinch more salt if needed—the floral notes should be subtle, not perfume-like.
    • The rose water should just add a whisper of flavor.
    + Show details

Ready when: Honey and rose water are evenly distributed and porridge is aromatic

Tip: Start with less rose water and add more to taste—overuse makes the porridge soapy rather than floral

  8. Divide and garnish

    • Ladle the porridge into four serving bowls.
    • Top each with a handful of toasted pistachio pieces and scatter raw pistachio pieces for textural contrast.
    • If desired, drizzle a thin line of honey over the top and finish with a tiny pinch of ground cinnamon.

Ready when: Bowls are filled and garnished attractively

Tip: Add nuts right before serving so they stay crunchy rather than softening in the warm porridge

Good to know

Tips
  • Saffron is pricey but essential here—its floral, slightly earthy notes define the Persian character. Don't skip it or substitute turmeric, which tastes quite different.
  • Green cardamom pods add warmth and spice; don't use black cardamom, which is smokier and less delicate for this dish.
  • If you don't have an Instant Pot, you can make this on the stovetop: toast saffron and prepare pistachios as directed, then combine oats, milk, water, cinnamon, and cardamom in a heavy pot. Bring to a boil, then reduce heat to low and simmer uncovered for 30–35 minutes, stirring every 5 minutes, until creamy. Proceed with finishing steps.
  • This porridge is luxurious enough for breakfast guests but simple enough for a solo breakfast. Pair with strong tea or Turkish coffee.
Make ahead

Saffron can be toasted and steeped up to 1 day ahead; store in an airtight container. Pistachios can be chopped and toasted 3 days in advance and kept in an airtight container at room temperature. The porridge itself is best served fresh, though leftovers can be reheated.

Storage & reheating

Refrigerate leftovers in an airtight container for up to 4 days. Reheat gently on the stovetop with a splash of milk over medium-low heat, stirring frequently, until warmed through (about 3–4 minutes). Do not freeze, as the texture will become grainy after thawing. Best served fresh.

Substitutions
  • whole milk → unsweetened oat milk, almond milk, or coconut milk. Use the same quantity. Coconut milk will add richness; plant-based milks will make the porridge slightly lighter and less creamy.
  • honey → maple syrup or date syrup. Use the same quantity. Maple syrup adds earthiness; date syrup complements the Persian flavors beautifully.
  • rose water → orange blossom water (use 0.25 teaspoon) or omit entirely. Orange blossom water is slightly less floral; if omitted, the porridge remains delicious with just the saffron and cardamom.
  • unsalted roasted pistachios → sliced almonds, blanched and toasted, or pine nuts. Almonds or pine nuts will work well but will change the flavor profile slightly—pistachios are preferred for authentic Persian taste.
