Steps

Before you start
  • Preheat your air fryer to 350°F (175°C) for 2–3 minutes
  • Have two ovenproof bowls or ramekins ready (6–8 oz / 180–240 ml each)
  • Measure out the oats and milk so you can quickly assemble the oatmeal
  1. Divide oats between bowls

    • Pour 3/8 cup (30 g) rolled oats into each ovenproof bowl.
    • Add 3/4 cup (180 ml) milk and 2 tablespoons (30 ml) water to each bowl.
    • Stir in 1 tablespoon (10 g) brown sugar, 1/8 teaspoon cinnamon, and a pinch of salt into each bowl until combined.
    • The oatmeal will be loose at this point—this is correct.

Tip: Use room-temperature milk for even cooking; cold milk will cool the bowls and slow cooking.

  2. Prepare bananas for caramelizing

    • In a small bowl, toss the banana slices with 1½ tablespoons (15 g) packed brown sugar, the cold butter pieces, and the vanilla extract (if using).
    • Mix gently until the bananas are evenly coated.
    • Divide the banana mixture between two small pieces of parchment or aluminum foil, or arrange them directly on a small tray that fits in your air fryer basket.

Tip: Handle banana slices gently to avoid bruising. The butter and sugar will caramelize, so don't skip the butter—it's essential for flavor.

  3. Place oatmeal in air fryerOven 350°F / 175°C

    • Carefully place both oatmeal bowls into the preheated air fryer basket (350°F / 175°C).
    • If your air fryer is small, arrange them side by side or back to front.
    • Leave space for the banana tray.
    + Show details

Tip: Make sure the bowls sit flat and stable so the oatmeal doesn't slosh during cooking.

  4. Cook oatmeal until creamyOven 350°F / 175°C

    • Air fry at 350°F (175°C) for 8–9 minutes, stirring the oatmeal with a fork halfway through (around the 4-minute mark).
    • The oats should absorb most of the liquid and become creamy but still slightly loose.
    • If the oatmeal looks very stiff, it's done; if it still has a lot of liquid visible, cook for another 1–2 minutes.
    + Show details

Ready when: Oats are creamy, most liquid is absorbed, and texture is soft throughout

Tip: Stir halfway through to prevent any hot spots and ensure even cooking. The oatmeal will continue to thicken slightly as it cools.

  5. Add bananas and toast granolaOven 350°F / 175°C

    • Carefully remove the oatmeal bowls (they will be hot).
    • Place the banana tray (or foil packets) into the air fryer basket.
    • Return the oatmeal bowls to the air fryer as well, arranging them around the bananas.
    • Air fry at 350°F (175°C) for 2–3 minutes until the banana edges are dark brown and caramelized and the butter has pooled slightly around the slices.
    + Show details

Ready when: Banana edges are dark caramel-brown, and butter is bubbling around the slices

Tip: Watch carefully during this step—banana edges can go from caramelized to burnt quickly. If your bananas are very thin, reduce time to 1–2 minutes.

  6. Top with caramelized bananas

    • Remove both bowls from the air fryer (use tongs or oven mitts; the bowls are very hot).
    • Gently spoon the warm caramelized bananas and all their cooking liquid over each bowl of oatmeal, dividing them evenly.
    + Show details

Tip: Pour the caramel-butter sauce over the oatmeal—don't leave it behind in the pan. This is where much of the flavor is.

  7. Sprinkle granola and serve

    • Divide the granola evenly between the two bowls (about 1/4 cup / 25 g each), sprinkling it over the top just before serving.
    • This keeps the granola crispy rather than softening it with the warm oatmeal.

Tip: Add granola at the very end so it stays crunchy. If you prefer softer granola, stir it in immediately.

  8. Rest and serve

    • Let the bowls sit for 1–2 minutes before eating.
    • The oatmeal will thicken slightly as it cools, and the temperature will become more comfortable.

Tip: Stir the oatmeal once or twice during resting to redistribute the warmth evenly.

Good to know

Tips
  • An air fryer is ideal for this recipe because it heats the oatmeal evenly from all sides while crisping the granola and caramelizing the banana edges all at once. If you don't have an air fryer, cook the oatmeal in a small saucepan over medium heat (stirring often, 5–7 minutes) and pan-fry the banana slices in a skillet with butter and brown sugar until dark and jammy (3–4 minutes).
  • Don't skip the halfway stir in the oatmeal. It prevents lumps and ensures the edges cook at the same rate as the center.
  • For crispier granola, add it after the bowls come out of the air fryer. For a more integrated texture, sprinkle it on before the final 1-minute rest and let it soften slightly.
  • Banana ripeness matters: use medium, firm bananas (still mostly yellow with just a hint of brown). Overripe bananas will disintegrate during the sugar-butter cooking step.
Make ahead

You can prep the dry oat mixture (oats, brown sugar, cinnamon, salt) in a container the night before. Store the bananas and butter separately, refrigerated, then combine and cook fresh in the morning.

Storage & reheating

Best served fresh and warm. Leftover oatmeal can be refrigerated in a covered bowl for up to 2 days; reheat gently in the microwave (30–45 seconds) or on the stovetop with a splash of milk to loosen it. Caramelized bananas do not keep well and should be made fresh. Granola should be stored separately in an airtight container for up to 2 weeks and added fresh at serving time.

Substitutions
  • milk (whole, 2%, or unsweetened plant-based) → Unsweetened oat milk, almond milk, or coconut milk. Use the same quantity. Plant-based milks work well, though they may cook slightly faster. Stir more frequently to prevent sticking.
  • granola (store-bought or homemade) → Chopped toasted nuts (pecans, walnuts, almonds), seeds (pumpkin, sunflower), or a mixture. Use the same quantity. Toast nuts in the air fryer at 300°F (150°C) for 3–4 minutes before serving if you like extra warmth and crispness.
  • brown sugar → Maple syrup (use 1½ teaspoons / 7 g) or honey. These will dissolve more readily into the oatmeal. Stir well to distribute evenly.
  • firm, ripe bananas → Apple or pear slices, or fresh peaches. Use the same weight. Adjust cook time by 30 seconds if using firmer fruits like apples. Skip the vanilla extract if using stone fruits.
