Steps
Before you start
- Take the eggs and milk out of the fridge 20 to 30 minutes ahead so the butter doesn't clump when you whisk it in.
- Use culinary rose water (not rose essence or perfume) and measure it exactly; brands vary in strength, and too much tastes soapy.
- Use old-fashioned rolled oats. Instant oats turn mushy and steel-cut oats stay hard.
- Medjool dates should be soft and sticky. If they feel dry, soak them in hot water for 5 minutes, then drain and pat dry.
Heat oven, grease dishOven 350°F / 175°C
- Position a rack in the center of the oven and heat to 350°F (175°C).
- Rub the 1 teaspoon softened butter over the bottom and sides of an 8×8-inch (20 cm) baking dish.

Ready when: The dish is evenly coated with a thin, glossy film of butter, with no bare patches in the corners.
Chop dates and nuts
- Pit the dates.
- Chop 6 of them into ½-inch (1 cm) pieces, dusting your knife with a little of the oat measure if they stick.
- Tear the other 2 into 3 to 4 pieces each and set them aside for the top.
- Roughly chop the pistachios into pieces about the size of a lentil or pea.

Ready when: The dates are in separate small pieces rather than sticky clumps.
Tip: Wiping the knife with a damp cloth between cuts keeps the sticky dates from dragging.
Mix dry ingredients
- In a large bowl, whisk together the oats, baking powder, cardamom, cinnamon and salt for about 20 seconds.

Whisk wet ingredients
- In a medium bowl, whisk the eggs and honey until the honey dissolves, about 30 seconds.
- Whisk in the milk, the cooled melted butter, the rose water and the vanilla until smooth.

Ready when: The mixture is smooth and uniformly pale gold, with no visible honey or butter streaks.
Tip: If the butter is still hot, it can scramble the eggs. Let it cool for 5 minutes first.
Combine and fold
- Pour the wet mixture over the dry ingredients and stir with a spatula until all the oats are moistened.
- Fold in the chopped dates and half of the chopped pistachios (about 2 tablespoons).

Fill the dish and top
- Scrape the batter into the prepared dish and spread it level.
- Dot the surface with the torn dates, and scatter the remaining pistachios over the top.
- Press them in lightly so they sit in the batter.

Tip: Stir the batter once more right before pouring it in, because the oats settle quickly and some liquid will pool at the bottom.

- Bake at 350°F (175°C) for 38 to 42 minutes, until the top is golden brown, the edges pull slightly from the dish, and the center is set.
- The center should spring back when pressed gently and read about 160°F (71°C) on an instant-read thermometer.

Tip: If the pistachios are browning too fast before the center sets, tent the dish loosely with foil.
Rest before cutting

Make ahead
"Bake the oatmeal up to 2 days ahead, cool completely, cover and refrigerate. Alternatively, mix the batter (without the topping), cover and refrigerate overnight, then top and bake for 42 to 46 minutes, since it starts cold."
Storage & reheating
Room temperature: up to 2 hours after baking. Fridge: covered, up to 5 days. Freezer: wrap individual squares tightly and freeze up to 2 months; thaw overnight in the fridge. Reheat a square in the microwave for 45 to 60 seconds, or in a 325°F (165°C) oven for 10 to 12 minutes, with a splash of milk.
Substitutions
- whole milk → unsweetened oat or almond milk. Works as a dairy-free swap; the texture will be a little less rich.
- honey → maple syrup. Use the same amount; the flavor is slightly more caramel-like.
- unsalted shelled pistachios → sliced almonds or walnuts. Use the same weight; the color contrast will be less striking.
- unsalted butter → mild olive oil or coconut oil. Use the same amount, melted and cooled, for a dairy-free version.
