Steps
Before you start
- Toast the walnuts in a dry skillet over medium heat for 3–4 minutes until fragrant, then chop finely and cool.
- Have goat cheese at room temperature so it's easier to work with.
- Ensure your Instant Pot trivet is clean and your Instant Pot is in good working condition.
Combine filling ingredients
- In a small bowl, fold together the room-temperature goat cheese, toasted chopped walnuts, 1 tbsp honey, fresh thyme (if using), and a pinch of salt and pepper.
- Mix gently until just combined; don't overwork the cheese.

Ready when: Filling is evenly mixed with visible walnut pieces throughout
Tip: Keep the filling cool and don't overmix, or the goat cheese will become tough and dense.
Prepare the figs
- Trim the stem end from each fig with a sharp paring knife.
- Halve each fig lengthwise, cutting most of the way through but leaving the two halves still slightly attached at the base so the fig opens like a book.
- Gently open each fig and use a small spoon or your fingertip to hollow out a small pocket without damaging the skin.

Ready when: All 12 figs are halved and have a small pocket ready for filling
Tip: Work gently; figs bruise easily. Leave at least ¼ inch of flesh between the pocket and the skin.
Fill the figs
- Spoon about 1 tsp of the goat cheese and walnut filling into each fig's pocket.
- Don't overstuff; the figs should close around the filling without it spilling out.

Ready when: All 12 figs are evenly filled and can be held together gently
Tip: If filling is too soft to scoop, refrigerate for 10 minutes before filling.
Add water and prepare Instant Pot
- Pour 1 cup of water into the Instant Pot.
- Place the metal trivet inside.
- Arrange the filled figs standing upright (stuffed-side up) on the trivet in a single layer, or on a small heat-safe plate set on the trivet if you prefer to keep them together.

Ready when: Figs are arranged on the trivet, water is in the pot
Tip: Arrange the figs carefully so they don't tip over; they'll steam more evenly if they're standing upright.
Cook under pressure
- Close the Instant Pot lid and set the valve to 'sealing.' Cook on high pressure for 5 minutes.
- The pot will take about 2–3 minutes to come to pressure before cooking begins.

Ready when: Pressure indicator shows high pressure is reached; after 5 minutes, pressure cooking is complete
Tip: Do not force the lid open while pressurized. If the figs are not soft enough after releasing pressure, you can always steam them 1–2 minutes more.
Release pressure and cool
- Turn off the heat.
- Allow the Instant Pot to release pressure naturally for 5 minutes, then carefully switch the valve to 'venting' to quick-release any remaining steam.
- Open the lid away from your face and let the figs cool for 2–3 minutes in the pot.

Ready when: Steam has released, figs are warm but no longer actively steaming
Tip: Natural pressure release keeps the figs tender and prevents them from becoming mushy.
Plate and finish
- Carefully remove the figs from the Instant Pot using a slotted spoon or tongs.
- Arrange them on a serving plate.
- Drizzle with the remaining 1 tbsp of raw honey and sprinkle with a tiny pinch of sea salt and cracked pepper.
- Serve warm or at room temperature.

Ready when: Figs are plated and drizzled with honey
Tip: Serve figs while they're still warm for the best cheese consistency, or chill and serve cold as a refreshing appetizer.
Good to know
Tips
- Toast walnuts yourself (rather than buying pre-toasted) for superior flavor and freshness—they're done when fragrant and just beginning to darken, usually 3–4 minutes in a dry skillet.
- Fresh figs are best in late summer through early fall. Look for figs that yield slightly to gentle pressure but are not mushy; avoid rock-hard or split fruit.
- The Instant Pot is ideal here because it steams the figs gently without drying them out, and the filling stays creamy rather than leaking out into boiling water.
- For a sauce, reserve the cooking liquid from the Instant Pot, whisk in an extra drizzle of honey and a squeeze of lemon juice, and pour it over the plated figs.
Make ahead
Prepare and fill the figs up to 4 hours ahead, cover loosely, and refrigerate. Cook them straight from the fridge using the same timing (the Instant Pot may need 1–2 minutes longer to pressure). The filling can be made up to 2 days ahead and stored in an airtight container in the refrigerator.
Storage & reheating
Serve at room temperature immediately for the best texture. Leftovers keep in an airtight container in the refrigerator for up to 2 days. Do not freeze. Reheat gently on a plate in the microwave (20–30 seconds) or serve cold straight from the fridge.
Substitutions
- fresh goat cheese, crumbled → ricotta cheese or mascarpone, thinned with a tiny pinch of lemon juice. Ricotta is milder and less tangy; mascarpone is richer. Both work well in the filling.
- walnuts, toasted and finely chopped → toasted hazelnuts or almonds, finely chopped. Hazelnuts add a subtle sweetness; almonds give a slightly different texture. Toast and chop the same way.
- fresh thyme leaves, stripped from stems → fresh mint or a pinch of ground cinnamon. Mint brightens the filling; cinnamon adds warmth. Either complements the figs beautifully.
- fresh Black Mission figs or green figs, firm but ripe → Medjool dates, pitted and halved lengthwise. Dates are sweeter and denser; cook time stays the same. A different but equally delicious take.
