Steps
Before you start
- Preheat oven to 325°F (163°C)
- Steep saffron threads in warm milk at least 1 hour before assembling (can do this ahead)
- Have all spices measured and ready
- Line baking sheet with parchment paper
Toast Cardamom and Combine Dry Ingredients
- In a large bowl, combine 2 cups (200 g) rolled oats, 0.75 cup (100 g) chopped almonds, 0.5 cup (60 g) chopped pistachios, 0.33 cup (30 g) coconut flakes if using, and 0.5 teaspoon (3 g) sea salt.
- Lightly crush 8 green cardamom pods (4.5 g) to release the seeds, and add the pods and seeds to the bowl.
- Stir well to distribute the cardamom evenly.

Ready when: Cardamom and nuts evenly distributed throughout oat mixture
Tip: Crush cardamom pods just before using to maximize aromatic oils; don't crush to powder, leave some pod pieces for texture.
Make Honey-Butter Binding
- In a small bowl, whisk together 4 tablespoons (60 g) melted unsalted butter and 0.33 cup (100 ml) honey until fully combined and smooth.

Ready when: Butter and honey fully combined with no streaks
Tip: Warm honey flows more easily; if your honey is thick, gently warm it before measuring for easier mixing.
Coat Oat Mixture
- Pour the honey-butter mixture over the oat mixture and stir vigorously with a wooden spoon for about 2 minutes, ensuring every piece of oat and nut is lightly coated.
- The mixture should look moist but not wet.

Ready when: All oats and nuts appear evenly moistened and glistening; no dry patches
Tip: Don't skimp on stirring—thorough coating ensures even browning and prevents clumping into large rocks.
Spread and Bake GranolaOven 325°F / 165°C
- Spread the granola mixture in a single layer on a parchment-lined 9×13-inch (23×33 cm) baking sheet.
- Bake at 325°F (163°C) for 28–30 minutes, stirring every 10 minutes with a wooden spoon to ensure even browning.
- The granola is ready when the oats are golden brown and fragrant, and the mixture looks mostly dry (a few moist clumps are fine—they'll crisp up as it cools).

Ready when: Oats are golden brown, granola smells fragrant with cardamom and toasted nuts, and mixture is mostly dry
Tip: Stir every 10 minutes to prevent burning on the edges and ensure cardamom flavor distributes evenly. Lower oven temperature prevents scorching the delicate cardamom aroma.
Cool Granola Completely
- Remove the baking sheet from the oven and spread the warm granola on a clean piece of parchment paper or a large plate.
- Let it cool at room temperature for 20–25 minutes, undisturbed.
- As it cools, it will crisp up further.
- Once completely cool, break any large clumps into bite-sized pieces with your fingers.

Ready when: Granola is completely cool to the touch and crunches when bitten
Tip: Don't skip the cooling time—warm granola will be soft. Breaking it into pieces while warm is easier than if it hardens into a solid slab.
Steep Saffron in Warm Milk
- While the granola bakes, place 0.125 teaspoon (0.5 g) saffron threads in a small bowl and pour 3 tablespoons (45 ml) warm (not boiling) whole milk over them.
- Stir gently and let steep for at least 1 hour at room temperature, covered, to allow the saffron to fully release its color and delicate flavor.
- The milk will turn a pale golden color.

Ready when: Milk has turned pale golden and saffron threads have released their color
Tip: Steep saffron well ahead (even the night before) to ensure maximum flavor extraction. Never use boiling milk—it can scald the delicate saffron flavor.
Make Saffron Yogurt
- In a clean bowl, combine 2 cups (500 ml) plain full-fat Greek yogurt, the saffron-infused milk (including the threads), 0.25 teaspoon (1.25 ml) rose water, and 2 tablespoons (30 ml) honey.
- Whisk gently until well combined and smooth.
- Taste and adjust rose water or honey to your preference (saffron, rose, and sweetness should be subtle and balanced, not overpowering).
- Cover and refrigerate until ready to assemble.

Ready when: Yogurt is smooth, pale golden in color, and fragrant with saffron and rose
Tip: Rose water is potent—start with 0.25 teaspoon and add more drop by drop if you prefer a stronger floral note. Taste as you go to avoid overpowering the delicate saffron.
Prepare Fruit and Assemble Parfaits
- Prepare 1.5 cups (200 g) fresh fruit (pomegranate seeds, raspberries, sliced mango, or a mix).
- Spoon or layer the parfaits into four 8–10 oz (240–300 ml) serving glasses or bowls as follows: First, add 2–3 tablespoons (30–45 ml) saffron yogurt to the base of each glass.
- Top with 2 tablespoons (20 g) cardamom granola.
- Add another 2–3 tablespoons (30–45 ml) saffron yogurt.
- Layer with 1 tablespoon (15 g) granola and some fresh fruit.
- Top with a final layer of saffron yogurt (about 2 tablespoons / 30 ml), then finish with 1 tablespoon (10 g) granola, a small handful of fresh fruit, a light drizzle of honey (0.5 teaspoon / 2.5 ml per parfait), and a sprinkle of dried rose petals if using.

Ready when: Four parfaits are layered, balanced, and visually appealing with visible layers of yogurt, granola, and fruit
Tip: Build parfaits just before serving to keep the granola crispy. If making ahead, store components separately and assemble within 1–2 hours of eating.
Good to know
Tips
- Toast and crush the cardamom pods just before making the granola to preserve their aromatic essential oils; pre-ground cardamom will lose its punch.
- Rose water is a potent ingredient—use it sparingly and taste as you mix into the yogurt. A little goes a long way to create elegance without overpowering the saffron.
- For a deeper saffron color and flavor, steep the threads for several hours or overnight. The longer steeping creates a more vibrant golden hue.
- Layer the parfaits only 1–2 hours before serving to keep the granola crispy. If you assemble too far ahead, the granola will absorb moisture from the yogurt and lose its crunch.
Make ahead
Granola can be made up to 1 week ahead and stored in an airtight container at room temperature. Saffron yogurt can be prepared up to 1 day ahead and refrigerated, covered. Assemble parfaits no more than 1–2 hours before serving to keep the granola crispy.
Storage & reheating
Store cooled granola in an airtight container at room temperature for up to 1 week. Saffron yogurt keeps covered in the refrigerator for up to 2 days (the rose water flavor will fade slightly over time). Fresh fruit should be added just before serving. Complete parfaits are best eaten immediately but can sit for up to 1 hour in the refrigerator before the granola begins to soften from yogurt moisture.
Substitutions
- plain full-fat Greek yogurt → plain full-fat yogurt or labneh. Plain yogurt will be thinner and less rich; labneh (strained yogurt) will be even thicker and creamier than Greek yogurt.
- rose water → 0.125 teaspoon dried rose petals steeped in 1 tablespoon warm milk for 10 minutes, then strained and mixed into yogurt. Homemade rose infusion is milder and more delicate than rose water; adjust to taste.
- roasted salted pistachios, roughly chopped → cashews or additional almonds, roughly chopped. Cashews add a subtle sweetness; almonds alone will make the granola less flavorful but still delicious.
- fresh fruit (pomegranate seeds, raspberries, or sliced mango) → dried fruit (raisins, apricots, dates, cranberries) or fresh berries. Dried fruit adds chewiness and concentrated sweetness. Berries work beautifully but add moisture; use just before serving.
