Indian Tahini Halva Yogurt Swirl with Date and Walnut Granola

A modern Indian-inspired yogurt bowl that layers creamy Greek yogurt with warm, spiced tahini halva swirled throughout, topped with a crunchy date and walnut granola studded with sesame seeds. The tahini halva is flavored with cardamom and a whisper of saffron for warmth, while the granola brings textural contrast with toasted nuts, chewy dates, and a touch of ghee. Simple, elegant, and deeply satisfying—perfect for breakfast or a light dessert.

Steps

Before you start
  • Remove yogurt from the fridge 10 minutes before serving so it's cool but not stone-cold.
  • Toast walnuts lightly (3–4 minutes in a dry pan) if they don't smell fragrant.
  • Have your serving bowls ready.
  1. Toast sesame seeds for granola

    • Heat a small dry skillet over medium heat.
    • Add the sesame seeds and toast, stirring constantly, for 2–3 minutes until fragrant and very lightly golden.
    • Transfer to a plate to cool slightly.
    • Do not walk away—sesame burns quickly.

Ready when: Sesame is fragrant and pale gold

Tip: Watch carefully; sesame seeds go from toasted to burnt in seconds.

  2. Make the tahini halva base

    • In a medium saucepan, warm the ghee over medium heat until it shimmers.
    • Add the crushed cardamom pods and let them toast gently for 1 minute, stirring, until fragrant.
    • Sprinkle in the saffron threads and stir to bloom them in the ghee for 30 seconds.
    • Add the jaggery and water, stirring until the jaggery dissolves into a light syrup, about 2–3 minutes.
    • The mixture should smell warm and sweet.

Ready when: Jaggery has dissolved and mixture is fragrant

Tip: Don't skip the blooming—it releases the saffron's color and flavor.

  3. Toast tahini in the halva base

    • Reduce heat to medium-low.
    • Add the tahini in two additions, stirring well after each to break up any lumps and incorporate smoothly.
    • Stir constantly for 3–4 minutes until the tahini is evenly distributed and the mixture darkens slightly.
    • It should smell nutty and warm.
    • Add salt and a tiny pinch of cardamom seed (from a crushed pod if you like) for depth.

Ready when: Tahini is smooth and nutty-smelling, slightly darkened

Tip: Stir constantly so the tahini toasts evenly and doesn't clump or catch on the pan.

  4. Cool the halva slightly

    • Remove the saucepan from heat and let the tahini halva rest, uncovered, for about 5 minutes.
    • It will thicken slightly as it cools but should still be pourable and luxurious.
    • Fish out the cardamom pods if you spot them.

Ready when: Halva is warm (not hot) and pourable

Tip: If it hardens too much, warm it gently over low heat for 1 minute while stirring.

  5. Make the granola mixture

    • In a medium mixing bowl, combine the toasted sesame seeds, chopped walnuts, chopped dates, cinnamon, and salt.
    • In a small bowl, warm the ghee and honey together (you can microwave for 15 seconds or warm in a small pan).
    • Pour the ghee-honey mixture over the walnut mixture and stir until everything is evenly coated and clumped together in small clusters.

Ready when: All ingredients are evenly coated with ghee and honey

Tip: This is a no-bake granola—the dates add natural sweetness and chewiness.

  6. Assemble the bowls

    • Divide the cold Greek yogurt evenly among four serving bowls, placing about ½ cup into the bottom of each.
    • Using a spoon, drizzle about ⅓ cup of the warm tahini halva over the yogurt in each bowl.
    • Using the back of the spoon, gently swirl the halva into the yogurt in loose, artistic streaks—don't fully blend it.
    • The contrast is part of the beauty.

Ready when: Halva is visibly swirled through yogurt in each bowl

Tip: Work gently and don't overmix; the swirl creates visual interest and flavor contrast.

  7. Top with granola and serve

    • Spoon the date and walnut granola over the top of each bowl, dividing it evenly.
    • You can add a pinch of sesame seeds on top if you like extra visual drama.
    • Serve immediately while the halva is still warm and the yogurt is cold—the temperature contrast is delicious.

Ready when: Granola is distributed evenly on top

Tip: Serve right away to enjoy the warm-cold contrast; the halva will set as it cools.

Good to know

Tips
  • The tahini halva should be pourable when it goes into the bowls but will thicken as it cools. If you like it silkier, add a teaspoon of warm water while stirring.
  • Greek yogurt's thickness and tang balance the rich, sweet halva beautifully. Regular yogurt will work but may separate slightly.
  • For extra toasted flavor, you can lightly toast the walnuts in a dry pan over medium heat for 3–4 minutes before chopping. This deepens their nuttiness.
  • This bowl is excellent for meal prep: make the components separately and assemble to order for the best texture and temperature contrast.
Make ahead

The granola can be made and stored in an airtight container at room temperature for up to 5 days. The tahini halva can be made up to 2 days ahead, stored in an airtight container in the fridge, and gently reheated over low heat (add a splash of water if needed) before swirling. The yogurt, of course, is used cold straight from the fridge.

Storage & reheating

Store leftovers in separate containers: yogurt in the fridge for up to 5 days, granola in an airtight container at room temperature for up to 5 days, and halva in the fridge for up to 3 days. Reheat halva gently before serving. Do not assemble the bowls ahead; they are best fresh.

Substitutions
  • jaggery (grated) or light brown sugar → light brown sugar, muscovado sugar, or maple syrup (reduce water to 3 tablespoons if using maple syrup). Jaggery has a deep, mineral sweetness, but these alternatives give a similar warmth. Maple syrup will be more floral and slightly thinner.
  • ghee (clarified butter) → unsalted butter or coconut oil. Ghee's nutty flavor is ideal, but butter (use clarified if possible) and coconut oil work. Reduce to 2 tablespoons coconut oil as it's more intensely flavored.
  • green cardamom pods → ½ teaspoon ground cardamom. Ground is less fragrant but still flavorful. Add it with the salt at the end to avoid bitterness.
  • saffron threads → a pinch of turmeric or omit entirely. Saffron gives a subtle floral note and color; turmeric adds warmth and earthiness. The halva is delicious without it, with more emphasis on the nutty tahini.
