Chinese Black Garlic and Sesame Granola with Miso Yogurt Dollop
A savory-leaning granola inspired by Chinese flavors, built on nutty black garlic cloves and toasted sesame seeds with a subtle umami backbone. Roasted until golden and fragrant, it's served with a tangy miso-sweetened yogurt dollop and finished with crispy pumpkin seeds for contrast. This is granola for savory breakfast lovers—a departure from sugary cereals that proves breakfast can be complex and layered.

Steps
Before you start
- Preheat your oven to 325°F (160°C) and line a large rimmed baking sheet with parchment paper.
- Have all dry ingredients measured and ready to combine quickly.
- Choose black garlic cloves that are soft and intact—avoid broken or powdered black garlic for this recipe.
Combine dry base
- In a large mixing bowl, combine the rolled oats, halved black garlic cloves, white sesame seeds, and pumpkin seeds.
- Toss gently with a wooden spoon to distribute the black garlic evenly throughout the oats.

Tip: Handle black garlic gently—it's soft and can crumble if pressed too hard. Halving lengthwise keeps the cloves intact during roasting.
Whisk wet ingredients
- In a small mixing bowl, whisk together the warm melted coconut oil, maple syrup, soy sauce, sesame oil, and rice vinegar until fully combined.
- The mixture should be smooth and homogenous with no streaks.

Ready when: Mixture appears smooth and slightly translucent
Tip: Warm coconut oil helps it blend smoothly with the liquid ingredients, preventing any lumps of solidified oil.
Combine and season
- Pour the wet mixture over the dry ingredients and fold gently with the wooden spoon, turning the mixture over itself for about 1 minute, until the oats and seeds are evenly coated with the liquid.
- Season lightly with fine sea salt and freshly ground black pepper—taste a small spoonful of uncooked mixture if needed (it's safe), then add more salt or pepper as desired.

Ready when: All oats appear glossy and uniformly coated; no dry spots remain
Tip: Don't overmix—stirring too vigorously will break the soft black garlic cloves. A gentle folding motion preserves their shape and concentrated umami flavor.
Spread and roastOven 325°F / 165°C
- Spread the granola mixture in an even single layer on the prepared baking sheet, breaking up any clumps gently.
- Roast in a preheated 325°F (160°C) oven for 18–20 minutes, stirring gently with a wooden spoon every 5 minutes to ensure even browning and to keep the black garlic from sticking to the pan.

Ready when: Oats are light golden brown and fragrant; sesame seeds smell toasty; black garlic edges appear slightly caramelized but not burned
Tip: Stir gently during roasting to prevent the black garlic from sticking to the pan and breaking apart. If the edges brown too quickly, stir more frequently or reduce the oven temperature by 10°F.
Cool and set
- Remove the baking sheet from the oven and spread the granola on a clean kitchen surface or large plate to cool completely for about 10 minutes.
- As it cools, it will firm up and clump naturally.
- Do not stir while cooling, or the pieces will break into fine crumbs.

Ready when: Granola feels completely dry and firm to the touch; no warmth remains
Tip: Spreading the granola on a large surface (not the hot baking sheet) allows heat to escape faster and ensures even cooling.
Prepare miso yogurt
- In a small mixing bowl, whisk together the cold Greek yogurt, white or chickpea miso paste, and honey until completely smooth and creamy.
- The miso should dissolve fully and distribute evenly—no lumps.
- Stir in the water a little at a time to thin the mixture slightly if needed for a dollop consistency.

Ready when: Miso yogurt is smooth, pale tan, and flows slightly when spooned
Tip: Whisk vigorously to ensure the miso paste dissolves completely—undissolved miso bits will taste intensely salty and create an uneven flavor.
Assemble bowls
- Divide the cooled granola evenly among six serving bowls (about ⅓ cup granola per bowl).
- Top each portion with a generous dollop of the miso yogurt (about ¼ cup per serving).
- Scatter fresh sliced scallions and a small pinch of chili flakes (if using) over each bowl for color and heat.

Ready when: Bowls are filled with granola and topped with yogurt and garnishes
Tip: Assemble just before serving so the granola stays crispy and doesn't absorb moisture from the yogurt.
Good to know
Tips
- Black garlic is predigested garlic that has been aged through fermentation; it's naturally sweet, soft, and deeply umami without any harsh bite. Buy it from specialty Asian markets or online, not regular supermarkets.
- Do not toast the white sesame seeds separately—they will toast adequately during the granola's oven time and won't burn at 325°F (160°C).
- This granola is intentionally less sweet than traditional versions to let the black garlic and miso shine. If you prefer more sweetness, increase the maple syrup by 1 tablespoon, but avoid making it overly sugary or the umami flavors will be masked.
- For a warm bowl, serve the granola at room temperature and dollop with room-temperature miso yogurt, allowing the warmth of the yogurt to slightly soften the granola's edges while keeping the center crispy.
Make ahead
Prepare the granola up to 4 days ahead. Store in an airtight container at room temperature. The miso yogurt can be made up to 2 days ahead and refrigerated in a covered container. Assemble bowls no more than 30 seconds before eating to preserve granola crispness.
Storage & reheating
Granola: Store in an airtight container at room temperature for up to 4 days (humidity will soften it). For longer storage, freeze in an airtight bag for up to 2 months; no thawing needed. Miso yogurt: Refrigerate in a covered container for up to 3 days. Do not freeze. To serve chilled granola, warm it in a 275°F (135°C) oven for 3–4 minutes until crispy again.
Substitutions
- black garlic cloves → Regular garlic cloves, minced and roasted separately in a small pan at the same time, then cooled and added to the granola at step 3. Black garlic's sweetness and umami will be less pronounced, but the savory garlic flavor will still be present. Roasted regular garlic will not have the same soft, chewy texture.
- white or chickpea miso paste → Light soy sauce (tamari or regular), increased to 2½ tablespoons in place of the miso, and add ½ teaspoon of finely grated lemon zest to the yogurt. The result will be saltier and less creamy, but still umami-forward. Lemon zest adds brightness to compensate for the miso's subtle sweetness.
- coconut oil, melted → Neutral vegetable oil (sunflower, canola, or grapeseed) in equal amount. You'll lose the subtle coconut flavor, but the granola will roast evenly and remain crispy. Use the same measurement.
- full-fat Greek yogurt → Labneh (strained yogurt) or Icelandic-style yogurt (Skyr) for a thicker dollop, or regular plain yogurt if you prefer a thinner consistency. Adjust the water amount slightly—labneh needs no water; regular yogurt may need an extra tablespoon. The flavor will be identical; only the texture will change.
