Steps
Before you start
- Preheat oven to 425°F (220°C)
- Pat mushrooms dry with paper towels—this ensures they brown rather than steam
- Have all ingredients measured and prepped before you begin assembly
Prepare the baking sheet
- Line a large rimmed baking sheet with parchment paper or lightly oil it.
- Arrange the cleaned mushroom caps gill-side up on the sheet, spacing them about 1 inch apart.
- Season the insides lightly with salt and pepper.

Tip: Thoroughly dry the mushroom caps with paper towels so they brown in the oven rather than release moisture and steam.
Make the filling
- In a small bowl, combine the chopped roasted chestnuts, panko breadcrumbs, chopped sage, grated Parmesan, minced garlic, 2 tablespoons of the melted butter, salt, and black pepper.
- Stir until the mixture is evenly moistened and holds together slightly when squeezed.
- The texture should be crumbly but cohesive, not wet.

Ready when: Mixture holds together when lightly squeezed but remains crumbly
Tip: If the filling is too dry, add another ½ tablespoon of melted butter. If too wet, add another tablespoon of breadcrumbs.
Stuff the mushrooms
- Divide the filling evenly among the mushroom caps, mounding it gently into the center of each cap.
- Use about 2 tablespoons of filling per mushroom.
- Drizzle the remaining 1 tablespoon of melted butter over the tops of all the stuffed mushrooms.

Ready when: All caps are evenly filled and glistening with butter
Tip: Press the filling gently into the mushroom cap so it doesn't slide off during roasting, but don't pack it so tight that it becomes dense.
Roast until golden and tenderOven 425°F / 220°C
- Place the baking sheet in the preheated 425°F (220°C) oven and roast for 20–25 minutes, until the mushroom caps are tender when pierced with a fork, the filling is golden brown on top, and the mushrooms have released some liquid at the edges.
- The breadcrumb topping should be crispy and the edges of the mushroom caps should begin to curl slightly.

Ready when: Mushroom caps are tender when pierced, filling is golden brown, and mushroom liquid pools at the edges
Tip: If the breadcrumb topping is browning too quickly, loosely tent the baking sheet with foil for the last 5 minutes.
Rest and serve
- Remove the baking sheet from the oven and let the mushrooms rest for 2–3 minutes.
- Transfer to a serving platter using a spatula, being careful to keep the filling intact.
- Serve warm, optionally garnished with a few fresh sage leaves or thyme.

Tip: Use a thin-bladed spatula to slide underneath each mushroom and lift gently to avoid breaking the tender cap or losing the filling.

Tips
- Roasted chestnuts are widely available in the fall and winter at specialty grocery stores and many supermarkets. Frozen roasted chestnuts work equally well—just thaw and chop.
- For a less rich filling, substitute half the melted butter with good-quality olive oil.
- These mushrooms can be served as a vegetarian main course (allowing 3–4 per person) or alongside roasted poultry or beef as a holiday side.
- Make sure your mushrooms are uniform in size so they cook at the same rate. Pick caps that are about 2–3 inches across.
Make ahead
Stuff the mushrooms up to 4 hours ahead of time, cover loosely with plastic wrap, and refrigerate. Roast directly from the refrigerator, adding 3–5 minutes to the cooking time.
Storage & reheating
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a 350°F (175°C) oven for 8–10 minutes until warmed through. Do not microwave, as this will make the mushrooms soggy.
Substitutions
- Roasted and peeled chestnuts → Toasted walnuts or pecans, coarsely chopped. Provides a similar nutty flavor and texture. Use the same weight.
- Fresh sage leaves → Fresh thyme or rosemary leaves, finely chopped. Both pair beautifully with mushrooms and chestnuts. Use the same amount.
- Panko breadcrumbs → Regular breadcrumbs or finely crushed crackers (such as whole-grain or herb varieties). Regular breadcrumbs will be slightly less crispy; use the same amount.
- Parmesan cheese, finely grated → Gruyère or aged Cheddar cheese, finely grated. Adds a different but equally delicious savory flavor. Use the same amount.
