Ready when: Coconut is light golden and fragrant; walnuts are aromatic and release their oils
Tip: Don't skip toasting—it deepens the nutty flavor. Watch carefully to avoid burning.
Grind lentils and walnuts
- In a food processor, pulse the cooled toasted walnuts into fine crumbs (not a paste).
- Set aside.
- In the same processor, pulse the dried red lentils into a fine powder, stirring with a spoon if needed to ensure even grinding.

Ready when: Walnuts are fine crumbs; lentils are powdery with no large pieces
Tip: If you don't have a food processor, use a nut grinder or finely chop the walnuts by hand and grind lentils using a spice grinder.
Mix the filling
- In a small bowl, combine the ground lentil powder (65 g), walnut crumbs (90 g), cinnamon (2.5 g), cardamom (0.5 g), and sea salt (0.5 g).
- Stir well.
- Add the melted coconut oil (15 ml) and mix until the filling is moist and holds together when pressed, with the consistency of damp sand.

Ready when: Mixture is evenly moistened and holds together when pressed
Tip: Add coconut oil gradually—you want a moist mixture that binds, not an oily paste.
Stuff the dates
- Using your fingers or a small spoon, gently open each date's slit and fill with about ¾ teaspoon (4 g) of the lentil-walnut filling.
- Press the filling in gently so it stays put, but don't overstuff or the date will split.

Ready when: All dates are filled and opening is gently closed around the filling
Tip: Work gently—Medjool date flesh is delicate. If a date tears, save it for a second batch or eat as is.
Roll in toasted coconut
- Place the toasted coconut (45 g) in a shallow bowl or on a plate.
- Roll each stuffed date in the coconut, coating all sides lightly.
- Arrange on a parchment-lined baking sheet or serving platter.

Tip: If the coconut isn't sticking well, lightly brush each date with a tiny dab of melted coconut oil before rolling.
Good to know
Tips
- Toast the coconut and walnuts separately and completely before grinding—this ensures the walnuts don't release oils and turn to butter, and the coconut develops its best flavor.
- Red lentils are less starchy than brown or green lentils, making them ideal for a fine powder that binds well without requiring cooking.
- For a richer filling, add 1 tablespoon of almond or date paste (homemade or store-bought) when mixing the filling.
- These dates are wonderful served with strong coffee or mint tea during Suhoor or Iftar; arrange on a platter for a beautiful, traditional Ramadan spread.
Make ahead
Prepare the filling up to 2 days ahead and store in an airtight container in the refrigerator. Stuff and coat the dates up to 1 day before serving for best results.
Storage & reheating
Store in an airtight container at room temperature for up to 5 days, in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months. No reheating needed; serve at room temperature or chilled.
Substitutions
- Red lentils, dried → Yellow split peas. Grind the same way; they'll give a slightly sweeter, milder taste but similar texture.
- Walnuts, raw → Almonds or pistachios. Use the same weight; almonds are more delicate, pistachios add a slightly sweet flavor.
- Unsweetened shredded coconut → Finely chopped pistachios or sesame seeds. Toast the same way and roll dates as directed for a different finish.
- Ground cardamom → A pinch of ground clove or nutmeg. Use half the amount if using clove, as it's stronger.
