Steps
Before you start
- Preheat the oven to 400°F (200°C)
- Select mushrooms that are similar in size (about 1.5 to 2 inches / 4–5 cm wide) for even cooking
- Have all ingredients prepped and measured before you begin
Prepare mushroom caps
- Clean the button mushrooms with a damp cloth.
- Gently twist off the stems and use a small spoon or melon baller to scoop out the dark gills from the underside of each cap, creating a shallow pocket.
- This gives more room for the filling.
- Pat the caps dry with a paper towel and arrange them gill-side up on the baking sheet.

Ready when: Mushroom caps are clean and hollowed with a shallow well
Tip: Removing the gills prevents excess moisture from making the stuffing soggy during baking
Make the brioche crumb mixture
- Melt the 2 tablespoons (30 g) of butter in a small skillet over medium heat.
- Add the minced shallot and minced garlic, stirring often, for about 2 minutes until fragrant and softened.
- Don't let them brown.
- Add the brioche crumbs, thyme leaves, and stir to coat everything evenly in butter.
- Cook for 1 minute more, then remove from heat and season to taste with kosher salt and black pepper.

Ready when: Brioche crumbs are lightly golden and fragrant
Tip: Use day-old or lightly toasted brioche so the crumbs stay crispy rather than becoming mushy
Fill the mushroom caps
- Spoon the warm brioche mixture evenly into the hollowed mushroom caps, pressing gently so the filling stays in place.
- Use about 1 tablespoon (15 ml) of filling per cap.
- Drizzle each filled mushroom with truffle oil (about ½ teaspoon / 2.5 ml per cap), then sprinkle the grated Parmigiano-Reggiano evenly over the top.
- If using panko breadcrumbs as an optional topping, sprinkle a small amount over the cheese for extra crunch.

Ready when: All mushrooms are filled and topped with cheese
Tip: Don't overstuff—the mixture should sit slightly above the mushroom cap but not spill over the sides
Bake until goldenOven 400°F / 205°C
- Place the baking sheet in the preheated 400°F (200°C) oven.
- Bake for 15 to 18 minutes, until the mushrooms are tender when pierced with a fork, the filling is golden brown on top, and the cheese is melted and lightly browned at the edges.

Ready when: Cheese is melted and lightly golden; mushrooms are tender and release liquid
Tip: If the tops brown too quickly, loosely tent the baking sheet with foil for the last 3 to 5 minutes
Rest and serve
- Remove the baking sheet from the oven and let the mushroom bites rest on the pan for 5 minutes so they set slightly and firm up.
- Transfer to a serving platter and serve warm.

Ready when: Mushrooms are stable enough to transfer without falling apart
Tip: Serve within 10 minutes while the brioche is still warm and the cheese is creamy
Good to know
Tips
- Day-old brioche works best because it's drier and will crisp up nicely when toasted in butter. Fresh brioche will become mushy.
- Choose mushrooms that are similar in size so they cook evenly. Smaller caps (about 1.5 inches / 4 cm) work better than oversized ones, which can become too watery.
- Truffle oil has a strong, distinctive flavor—a little goes a long way. Drizzle sparingly to avoid overpowering the other flavors.
- These bites are best served warm, straight from the oven, when the cheese is still creamy and the brioche crumbs are at their crunchiest.
Make ahead
Prepare and fill the mushrooms up to 4 hours ahead. Cover with plastic wrap and refrigerate. Add 2 to 3 minutes to the baking time if baking straight from the fridge.
Storage & reheating
Store leftover mushroom bites in an airtight container in the refrigerator for up to 2 days. Reheat in a 350°F (175°C) oven for 5 to 7 minutes until warmed through. Do not freeze; the mushrooms become watery when thawed.
Substitutions
- truffle oil → high-quality extra-virgin olive oil mixed with a few drops of white truffle essence or ½ teaspoon of truffle salt. Truffle oil can be expensive; this combination gives you the earthy truffle flavor at a lower cost
- brioche bread → panettone or challah bread, torn into pieces. Both have a similar rich, buttery crumb structure; toast lightly before making crumbs
- Parmigiano-Reggiano cheese → Pecorino Romano or Grana Padano. Both are aged, hard cheeses with a sharp, savory flavor that works well in this dish
- shallot, medium → ½ small onion, minced finely, or 1 tablespoon (7 g) of minced red onion. Shallots have a gentler, slightly sweet flavor; onion is stronger but will work in a pinch
