Steps
Before you start
- Thaw the whipped topping in the refrigerator overnight, or about 4 hours, so it is soft but still cold.
- Leave the gelatin powder dry. Do not mix it with water. It dissolves slowly in the fruit juice and cottage cheese.
- Open the pineapple can but do not drain it. The juice hydrates the gelatin.
- Plan for at least 2 hours of chilling before serving.
Drain the mandarins
- Pour the mandarin oranges into a colander set over the sink and let them drain for 5 minutes, shaking gently once or twice.
- Spread them on a paper-towel-lined plate and pat the tops dry.

Combine base ingredients
- In a large bowl, stir together the cottage cheese, the entire can of crushed pineapple with its juice, and the dry orange gelatin powder.
- Stir with a spatula for 2 minutes, scraping the bottom of the bowl, until no dry clumps of powder remain.

Let gelatin hydrate
- Leave the bowl on the counter for 10 minutes.
- The gelatin granules will soak up the pineapple juice and the mixture will start to thicken slightly.

- Stir in the lime juice and vanilla.

Tips
- Use the gelatin dry. Preparing it with water first would make the salad runny.
- Fresh or frozen pineapple contains enzymes that prevent gelatin from setting, so use canned crushed pineapple only.
- For a more soft-serve look, serve in chilled glasses topped with a few mandarin segments and toasted coconut.
- Blend the cottage cheese for 20 seconds in a food processor before mixing if you want a smoother, creamier texture.
