
Cherry Fluff Salad
A retro, no-cook potluck classic: cherry pie filling folded into a creamy base of sweetened condensed milk, whipped topping, crushed pineapple and soft mini marshmallows. A splash of lemon juice and partly drained syrup keep it sweet-tart and scoopable rather than loose. It takes 15 minutes of work plus chilling.

Steps
Before you start
- Thaw the 12-oz tub of frozen whipped topping in the refrigerator overnight (or about 4 hours) until soft but still cold. Do not microwave it.
- Drain the pineapple and the pie filling well. Extra liquid is what makes fluff salad runny.
- Plan for at least 4 hours of chilling so the marshmallows soften and the salad thickens. Overnight is even better.
- If using pecans, toast them in a dry skillet over medium heat for 3 to 4 minutes until fragrant, then cool completely.
Drain the pineapple
- Set a fine-mesh sieve over the sink or a bowl.
- Open the can of crushed pineapple and tip it into the sieve.
- Press down firmly with a spatula for about 1 minute, then let it drip for 2 minutes more.
- Discard the juice or save it for another use.

Ready when: Pineapple looks damp but no longer drips when the sieve is tilted (about 1 ¼ cups / 300 g).
Tip: Skipping this step is the most common cause of a watery fluff salad.
Drain the cherry filling
- Rinse and dry the sieve, set it over a small bowl, and tip in the pie filling.
- Let it drip for 1 minute.
- Measure ¼ cup (60 ml) of the drained syrup into the bowl you will use for the cherries, and discard the rest.
- Leave the cherries in the sieve until step 5.

Ready when: Cherries are glossy but no longer dripping, and you have ¼ cup syrup set aside.
Tip: Using only part of the syrup keeps the salad thick while still giving it pink color and cherry flavor.
Mix the sweet-tart base
- In a large 4-quart bowl, stir together the sweetened condensed milk, lemon juice and vanilla (if using) until smooth.
- Stir in the drained pineapple.

Ready when: The mixture is uniform with no streaks of condensed milk. It will thicken slightly from the lemon.
Tip: The lemon juice cuts the sweetness of the condensed milk and pie filling, so don't skip it.
Fold in whipped topping
- Add the thawed whipped topping to the bowl.
- With a rubber spatula, fold gently by scraping down the side of the bowl and turning the mixture over itself for about 1 minute.

Ready when: The mixture is pale, fluffy and evenly creamy, with no white streaks.
Tip: Fold rather than stir so the topping stays airy.
Add marshmallows and nuts
- Sprinkle the mini marshmallows and the pecans (if using) over the creamy mixture.
- Fold gently until evenly distributed.

Ready when: Marshmallows are spread evenly throughout.
Fold in the cherries
- Add the drained cherries and the reserved ¼ cup syrup.
- Fold 8 to 10 turns so the cherries are distributed and the cream is marbled with pink ribbons.
- Stop folding as soon as the cherries are spread out.

Ready when: Cherries are evenly spread and the cream is streaked light pink.
Tip: Over-mixing turns the salad uniformly deep pink and can deflate the topping. It still tastes good, but the marbled look is prettier.
Chill until thick
- Cover the bowl tightly with plastic wrap or a lid.
- Refrigerate for at least 4 hours, or overnight, so the marshmallows soften and the salad firms up.

Ready when: The salad is cold, thick and scoopable, and the marshmallows are tender rather than chewy.
Tip: Do not freeze. The texture turns icy and weepy when thawed.
Stir and serve
- Give the salad one gentle stir with a spatula.
- Spoon about ¾ cup into small bowls or cups.
- Sprinkle extra pecans on top if you like.
- Serve cold.

Good to know
Tips
- Don't skip draining the pineapple and the cherry syrup. Liquid is the main cause of a loose salad.
- Use fresh, soft marshmallows. Stale ones stay chewy even after chilling.
- For a marbled look, fold in half the cherries, then dollop the rest on top and swirl once or twice.
- Taste before chilling. If you prefer it more tart, add another 1 to 2 tsp lemon juice.
- To double the batch, use a 6-quart bowl and still chill for the full time.
Make ahead
Make the salad up to 24 hours ahead and keep it covered in the refrigerator. The marshmallows will soften further and the color will deepen to pink. Stir gently before serving.
Storage & reheating
Refrigerator: store in an airtight container for up to 3 days. The texture becomes softer each day. Room temperature: serve for no more than 2 hours (1 hour if above 90°F / 32°C). Freezer: not recommended. No reheating is needed. Serve cold.
Substitutions
- cherry pie filling → blueberry or strawberry pie filling. Use the same 21-oz can and drain it the same way. The texture stays the same.
- frozen whipped topping (such as Cool Whip) → 2 cups (480 ml) cold heavy cream whipped with ¼ cup (30 g) powdered sugar to stiff peaks (about 4 cups). Gives a richer flavor and a slightly softer set. Fold it in right after whipping and eat within 2 days.
- chopped pecans → chopped walnuts or sweetened shredded coconut. Same amount. Omit for a nut-free version.
- canned crushed pineapple → canned fruit cocktail or mandarin orange segments, well drained. Use the same drained weight (about 300 g). Fold in gently so the oranges don't break up.
