Classic Watergate Salad

A nostalgic, fluffy pale-green potluck salad made by folding pistachio pudding mix, crushed pineapple, mini marshmallows and toasted pecans into whipped topping. It takes about 15 minutes of hands-on work, needs no cooking beyond toasting the nuts, and is best after a 2-hour chill.

Steps

Before you start
  • Thaw the 16 oz tub of frozen whipped topping in the refrigerator overnight, or about 4 hours. It should be soft and spreadable but still cold.
  • Use instant pistachio pudding mix, not cook-and-serve. The mix is stirred in dry and is not prepared with milk.
  • A 20 oz (567 g) can of crushed pineapple includes its juice. Once drained it gives about 1½ cups (320 g) of fruit. Keep 2 tablespoons of the juice to dissolve the pudding powder.
  • Plan for 2 hours of chilling. The salad thickens and the flavors blend as it sits. Total time is about 2½ hours.
  1. Toast the pecans

    • Place the pecans in a dry 10-inch (25 cm) skillet over medium heat.
    • Toast, stirring often, for 4 to 5 minutes.
    • Tip them onto a plate right away and spread them out to cool for 10 minutes while you drain the pineapple.

    Ready when: Nuts smell fragrant and nutty and look slightly darker; they are cool to the touch after about 10 minutes.

    Tip: Pecans burn fast. Remove them from the pan as soon as they smell toasty.

  2. Drain the pineapple

    • While the pecans cool, set a fine-mesh sieve over a bowl.
    • Pour in the crushed pineapple and let it drip for about 2 minutes, without pressing.
    • Measure 2 tablespoons of the juice into a small cup and set aside.
    • Discard the remaining juice or save it for another use.

    Ready when: Drips slow to an occasional drop and you have about 1½ cups (320 g) of moist, not soupy, pineapple.

    Tip: Don't squeeze hard; pressing out all the juice leaves the fruit dry and the powder harder to dissolve.

  3. Chop the pecans

    • Once completely cool, chop the pecans coarsely into pieces about ¼ inch (6 mm).

  4. Mix pudding and pineapple

    • In a 4-quart (4 L) bowl, combine the drained pineapple, the reserved 2 tablespoons juice and the dry pistachio pudding mix.
    • Stir with a rubber spatula for about 1 minute.
    • The pineapple's moisture and the juice dissolve the powder into a thick paste.

    Ready when: The mixture is an evenly pale-green, thick paste with no dry powder visible.

    Tip: If lumps remain, press them against the side of the bowl with the spatula.

  5. Fold in topping

    • Add the thawed whipped topping.
    • Fold gently with the spatula, cutting down through the middle and sweeping up the side, until the mixture is uniformly pale green, about 1 to 2 minutes.

    Ready when: No white streaks remain and the mixture looks fluffy.

    Tip: Fold, don't whisk. Stirring hard deflates the topping and makes the salad dense.

  6. Add marshmallows and nuts

    • Fold in the mini marshmallows and the chopped pecans until evenly distributed, about 30 seconds.
    • Reserve 2 tablespoons of pecans for the top if you like.

    Tip: Make sure the pecans are fully cool, or they will melt the topping.

  7. Chill until set

    • Transfer to a serving bowl, scatter any reserved pecans on top, cover, and refrigerate for 2 hours, or up to overnight.

    Tip: Stir gently once before serving, since a little liquid may settle.

  • Lightly drained pineapple gives a thick, fluffy salad while leaving enough moisture to dissolve the pudding mix.
  • Fold gently to keep the whipped topping airy.

  • For a lightly tangy version, fold in ½ cup (115 g) of sour cream or plain Greek yogurt.
Make ahead

Make up to 24 hours ahead and keep covered in the refrigerator. Stir gently before serving. For the crunchiest nuts, fold them in during the last hour before serving.

Storage & reheating

Refrigerate in an airtight container for up to 3 days; the marshmallows soften and the salad loosens over time. Do not leave at room temperature for more than 2 hours. Freezing is not recommended, as the texture turns watery when thawed. Serve cold, with no reheating.

Substitutions
  • pecan halves → chopped walnuts or pistachios. Use the same amount, toasted. Pistachios add extra pistachio flavor.
  • frozen whipped topping → stabilized homemade whipped cream. Whip 3½ cups (840 ml) cold heavy cream with ¼ cup (30 g) powdered sugar and 1 tablespoon of the dry pudding mix (taken from the box) to stiff peaks. This gives about 7 cups, close to the 16 oz tub. Use the rest of the mix as directed. Eat within 24 hours.
  • mini marshmallows → shredded sweetened coconut. Use 2 cups (160 g) to match the volume of the marshmallows, for a chewier, tropical version.
  • instant pistachio pudding mix → sugar-free instant pistachio pudding mix. Use the same size box (about 1 oz / 28 g for sugar-free); the salad is slightly less sweet.
